recipes By Mike King Southam News Barb Smith and Diana Frizzle don’t consider themselves gourmet chefs, but that hasn’t stopped them from becoming ‘field editors’ of a popular American cooking magazine.Smith, a Dorval home-educator, and Frizzle, a Knowlton dairy farmer, are the only Quebecers among 47 Canadian staffers of Taste of Home - “The magazine edited by a thousand country cooks!” as its cover says.“Our field editors are a group of good home cooks who keep in touch and share their favourite recipes,” managing editor Ann Kaiser said in a telephone interview from the magazine’s offices in Greendale, Wis.Taste of Home has 5 million North American subscribers, including 150,000 in Canada.The magazine features simple, inexpensive recipes — you’re more likely to find tuna casserole than seared tuna on its pages.A recent issue included Meatballs With Cream Sauce, Super Sloppy Joes and Mom’s Hearty Spaghetti.“We want old family recipes, some adapted or modified, and practical home cooking with something you can make with what is already in your fridge or pantry,” Kaiser explained.“I have nine children, so I do a lot of cooking,” Smith said.“I’m used to always feeding a crowd.” As if her family isn’t enough, Smith also cooks for legions of others.While her husband, David, nourishes souls as pastor of Fairview Alliance Church in Dollard des Ormeaux, she treats the parishioners with a barbecue at their home every summer.As she wrote in a recent edition of Taste of Home: “To show appreciation for all the congregation does for us, we host a yearly hot dog party, barbecuing 20 dozen wieners for over 100 people.“The buffet table is set up with buns, ketchup, mustard, relish and an item unique to Montrealers — coleslaw to put on the hot dogs,” Smith added.“It’s a simple condiment I make from 20 cups of shredded cabbage, three-quarters cup sugar, one tablespoon salt and a half-teaspoon of pepper.” For her part, Frizzle said being involved with such a widely read publication “is kind of fun.” The mother of three said she would be in the kitchen more, “but there’s not much time because of the farm.” “The thing I really like are (the recipes that use) ordinary, everyday ingredients that you don’t have to go somewhere special to find,” Frizzle said.She also appreciates the Clip and Keep section of the magazine with its file-size recipes, complete with photos.“When we started Taste of Home in 1993, we wanted every state and Canadian province represented,” Kaiser said.The editors already had good contacts across Canada through sister publications, “but there was a gap in Quebec,” she said.Then Kaiser remembered doing an article on Frizzle’s dairy farm in the late 1980s while editor of Farm Woman (now Country Woman) magazine.“I asked her if she’d like to be on staff and she agreed.” Smith got involved when her sister-in-law, “who just loved my cooking, heard about this new magazine and submitted my name and they contacted Dessert lovers, please take a moment to thank the person who first decided to separate egg whites from their yolks and then beat them with sugar to a cloud-like dream.The creation whipped to life was, of course, meringue.This versatile mixture over time has worked its way into some of the world’s favourite desserts.In a complementary role, meringue can be blended into other ingredients to help souffles rise, create chocolate mousse lighter than air, and make cake flexible enough to bend for jellyrolls.But in a lead role, meringue seems to shine brightest.No matter what dish you favour most, many of the rules given for making meringue remain the same.Here are some key points to consider: • According to Regan Daly, author of the award-winning book In the Sweet Kitchen, for best results egg whites should be taken from eggs that are at least 3 to 4 days old.The coils of protein found in these older eggs will have relaxed slightly and will expand more easily when beaten, but still be strong and elastic.She notes that if you shop in a supermarket, the eggs you buy are likely at least a week old.But if you buy farm fresh eggs, try to use eggs of less than a week, but more than a few days old.• It’s of the utmost importance that you keep the whites away from any fat.Unfortunately, the yolks are full of fat and even a speck of them in the whites can significantly lower the beaten whites volume, or even prevent them SOUTHAM ?v Meringues can be shaped in a variety of ways.from whipping up at all.To ensure yolk-free egg whites, I’ve seen many bakers crack their eggs into a bowl first, and then use their hands to gently lift out the yolks, allowing the whites to slip between their fingers.They believe the sharp edges found in the eggshell to eggshell method can more easily pierce the yolk.• Be sure the bowl in which you place the egg whites and all the whisks, beaters and spatulas are spotlessly clean and grease-free.Any oil left on a utensil can prevent your egg whites from reaching the desired volume.• Copper bowls are the preferred vessel to beat egg whites in their natural acidity strengthens the proteins in the whites, allowing them to reach greater volume.But stainless steel or glass bowls are cheaper and give acceptable results. It’s resonance! But the painting is of secondary importance in the play really.This work by French playwright Yazmina Raza is more an examination of the strength of relationships.As the conversations grow more heated, as the three characters move further and further away from a congenial centre, we are left wondering why they were ever friends in the first place.But then all of us, when we bicker, wonder that exact same thing.And then five minutes later we turn around and call that exact same worthless friend and invite them over for tea?Admittedly our friends often confuse and annoy us, but such is the stuff of life, and such is the stuff of good plays as well.Art, though heavy at times, is mostly just funny.“For Sunshine Theatre it’s the most realistic play we’ve ever done.It’s not light, but it’s not heavy either.It’s intense, there’s some strong language, but it’s a comedy,” says Mahtani, adding that when he first saw the play in London the crowd was laughing the whole way through.Mahtani says the one challenge of staging a play with a cast of three is the pressure put on the actors to carry the play.“There’s nothing else, no song and dance.The actors have a tremendous co-founder of Sunshine Theatre and an experienced actor, seemed the obvious choice as Serge.Hooper brings a wealth of experience to the role of Marc, but the opposite is true of Hennessey whose experience is in more musical, less dramatical roles.Mahtani picked Hennessey on the strength of his performances during previous Sunshine Theatre musicals and so far says he is adapting well to the role of Yvan.“We have the same idiosyncrasies,” Hooper says of his character.“I’m always losing things (the first scene with Yvan has him looking under the couch for a pen top) and my professional life has always been a failure,” he adds laughing.And Hooper’s not the only one of us who will see something of himself in one or more of the characters of Art, according to Mahtani.“When I saw the play in London, I thought it was an honest play.The dialogue seemed real,” the director says.“If people are honest with themselves, they’ll see a lot of themselves in this play.” Art opens June 7 at the Knowlton Pub Playhouse and runs until June 10.A preview performance will be held at 2 p.m.on the Thursday and the opening is at 8 p.m.The Friday and Saturday performances are at 8 pm.During the play, paintings and sculpture by artists studying under Louise Jamet at the Bishop’s University Knowlton Centre will be on exhibition in the theatre and the lobby.Tickets for the opening include an invitation to a reception following the performance at the Rose Window Gallery on Lakeside.The reception will serve as a chance to meet with artists and discuss the themes of the play.Tickets are $12 (EMI Music Canada) It was not long ago that Canadian-born signer Colete Baron-Reid found her salvation in the bottle instead of her music.Still, 15 years later, and on the heels of her debut album am still trying to figure out what planet he’s on and where the love is on his latest CD.A release issued by the label tells you that this album is “charged with an emotion and energy that is more commonly found in live recordings and studio offerings.” The truth, however, is that this CD is a bland, dull, monotone 42 minutes of boredom with nothing exciting enough to warrant even a moment’s notice.Wilson is Canadian and it is tough to come down on one of your own, but the fact is that the three-year break Wilson recently took from the music scene has hurt him.Not even the three key songs on Planet Love — ‘Satellite’, ‘Shine Your Star’ or ‘Planet Love’ - are worth a listen.-AM. TALK OF THE 'EwnshiÿS — i — THE— i ——¦ __ -RECORD - ____June 1-June 7, 2001 page 7 A world of adventure, comedy and drama awaits movies Jamie baffled by apprehension to nudity SOUTHAM Jamie Lee Curtis doesn’t believe on-screen nudity should be thought of as such a big deal by actresses and the media.Fate of two-year old Thornton movie up in the air By Jamie Portman Southam News Jamie Lee Curtis can’t understand why some actresses get uptight about on-screen nudity and sex scenes.To her it’s no big deal.She also can’t understand why members of the media are so preoccupied with such scenes during interviews.For example, reporters have been lately asking her about a brief scene in The Tailor Of Panama in which she lies nude on the bed awaiting the arrival of husband Geoffrey Rush.Was she embarrassed?Was she uncomfortable?Was the scene an ordeal.Her response to journalists: get real!
