fine dining is a Townships tradition m embarrassment of riches PHOTOS BY MAURICE CROSSFIELD till .• - Owner Alphonse Alfonso is a jolly, enthusiastic man who instantly puts his clients at ease with his friendly demeanor.By Sunil Mahtani Special to The Record There are many jewels to be found in Dunham which, in 1796, was one of the very first Townships to be established.A quintessential Loyalist town, Dunham’s charm comes from the numerous stone and brick buildings — including three distinctive churches — which line its Main Street.Some buildings date back 150 years.This is also the heart of the province’s wine country and its famous wine route attracts tourists from far and wide.Just minutes west of Cowansville, Dunham is also home to one of the most enchanting restaurants in the Townships, Le Piccoletto.Housed in an inviting stone building dating to 1832, Le Piccoletto exudes charm.Both the house and the grounds are lit strategically to exhibit its solid, multi-hued exterior and the green-eiy which surrounds it.An outdoor dining area is reminiscent of little country eateries in France, instantly transporting patrons to another time and place.Its interior is comfortable and welcoming - walls papered with country flowers above hunter green molding and wine-coloured wainscoting, and a diversity of paintings define one of three dining rooms.Another, for private parties of eight to 10 people, was also cozy, featuring an old-fashioned stove.The warm atmosphere is further accentuated by green, glass bottle oil lamps and the distinctive personality of our host Alphonse Alfonso.A jolly, enthusiastic gentleman, Alfonso instantly puts his clients at ease with his friendly demeanor.He often takes Polaroid photographs of his customers when they are celebrating a special occasion at the restaurant, which are placed in collages on some of its walls.Alphonse told us the name of his restaurant is derived from the word piccolo, a popular red table wine in France (as well as a musical instrument).Clearly a wine-lover, he acquainted us with one that he had imported from France, a Merlot which, he proudly stated, is Piccolet-to’s true house wine sold by the bottle.My friend and I decided to try it, and it was good, but a bit too cool for a red wine, so we let it sit for awhile.Piccoletto is a place where you can take your time.Two substantial, warm sesame seed buns were placed on our table while we inspected the menu.These crusty treats were terrific, clearly homemade and delicious.Alfonso rhymed off a dizzying array of appetizers that are included with the table d’hôte.There seemed to be no end to this mouth-watering list.Likewise, the main dishes were 10 diverse selections — seafood, poultry, red meat, they were all there, cooked with a variety of techniques, for between $22.50 and $29.50.Unbelievably, the menu changes each week.I decided to try the mussels to start.This was a large plate of mussels on the half shell with a divine sauce made with cream, white wine and saffron, which Alfonso told us is a specialty of the Larochelle region of France.The rich sauce managed not to overpower the mussels, making this dish delicious.My friend started with fresh tomatoes.This was also a very generous plate of sliced, plump tomatoes with an olive oil/balsamic vinaigrette and crumbled goat’s cheese sprinkled on top.Extremely flavourful, this will make you think about tomatoes in a different way.If these savory starters are indicative of what was to come, my friend and I thought, we’ve discovered another little piece of heaven in the Townships.We were not disappointed.The fish of the day was Boston bluefish — large, melt-in-your-mouth fillets served with a tasty mustard sauce.On the side were broccoli and cauliflower florets, carrots, zucchini and potato — a delectable dish.Each week.Le Piccoletto takes visitors to another land by offering one dish from a different country.This week the voyage was to Belgium with Le Waterzoi, two generous portions of chicken on top of basmati rice with a sauce made of cream and egg yolks.A subtle recipe that is not exactly an explosion of flavours, it was nonetheless good and served with pearl onions, mushrooms, zucchini and carrots.After the main course, a young waitress came by to collect the bread crumbs that had inadvertently fallen on the table from the crusty buns.This appreciated action, de riguer in France, is rarely seen in Quebec.Bravo! The table d’hôte came with a choice of either a cheese plate or dessert.If Alfonso had known me, he wouldn’t have asked, for I can never pass on dessert! The Charlotte was layers of alcoholic lady fingers and white and dark chocolate; the cheesecake was light, featuring a modest crust and served with strawberries and raspberries.Both were superb.In an unusual move that belies the generosity of each dish we received that evening, coffee and tea is not included with the table d’hôte.The dinner for two, not including alcohol, gratuity or these after-dinner beverages, was $65.Le Piccoletto also offers a pasta table d’hôté from $12.50 to $14.50, featuring soup or green salad, and a large selection of lasagna, ravioli, tortellini or a pasta of the day featuring sauces made with gorgonzola, cream and bacon, shrimp or vegetables.The summer lunch menu features soups, salads, omelets, pizza and fish.Alphonse Alfonso will be celebrating the 10th anniversary of Le Piccoletto next year.He and his team have much to be proud of.They have created a menu and a dining experience that is simply an embarrassment of riches.Le Piccoletto, 3698 Vocal Arts Month in Richmond.By Tricia Davidson Record Correspondent Throughout August, the Richmond Arts Centre hosts Vocal Arts Month, with concerts every Saturday, running Aug.11 to Sept.1.The month-long series features Quebec artists, and for the first time this year, a performer from outside of Quebec.Denise Bibeau, a member of the Arts Centre Administration and coorganizer for this year’s event, said that the Vocal Arts Month, which was first created in 1993, is dedicated to some of the best voices in Quebec.Bibeau, who worked in conjunction with Carol Kipling in creating this year’s Vocal Arts Month, began planning for the event last March.“In the past we have had performers such as David Belanger, Linda Lemay, Nancy Dumais, Marie Jo Therio and Jean Lapointe,” said Bibeau.“They are a few of the popular French singers.This year is the first time that we will have a performer from outside of Quebec.” Henri Loiselle, a baritone bass from Saskatchewan, will be performing on Aug.18.Loiselle said that since he was young he has always been interested in singing.“When I was five-years-old, and sang like a god — at least I thought 1 did — I was pretty good,” Loiselle recounted.“I was lying on the kitchen floor, early in the morning before anyone was up, wailing away.I thought then that if I couldn’t do anything else I could make a living singing.While Loiselle interest is founded in singing, however, his main occupation until recently had been farming.“I’ve been farming all my life," Loiselle said.“1 went to university and got a degree in agriculture and took opera performance.” At the age of 17, while attending college in Munster, Saskatchewan he participated in Glee Clubs, musicals and other musical pursuits.Loiselle has studied at an opera school, toured with the Canadian Opera Company on a number of occasions, and independently through B.C., Alberta and Ontario.In addition to his stop in Richmond this month, he will be making his way through Nova Scotia and P.E.I.Next September, Loiselle is tentatively planing a tour through Belgium, France and Switzerland.“In this show you can expect some love songs, some Broadway tunes like ‘Old Man River’, ‘How To Handle A Woman’, some material from Don Giovanni, Schubert and French singer Felix Leclerc,” Loiselle said.In other concerts, Les Tubes will bring their blend of popular 60s and 70s Francophone hits on Aug.11.Les Trios Divins, composed of Nancy Roy, Qaire Mercier, and Caroline Tellier, will perform on Aug.25.On Sept.1, Claude Gauthier, an author, composer and expected when we spoke over a month ago, saying that the way the musicians work together is essential for live jazz performances.I mentioned earlier that Biddle has been in the business for over 50 years, but that was a mistake.As he demonstrated Sunday, Biddle has been about many things in the last 50 years such as humor, family, friendship and music, but he does not consider jazz a business.While tickets were sold, a date for the performance set and equipment brought in, I felt like I was in Biddle’s basement.1 felt like I was just listening to a few friends enjoying themselves, loving each other and playing to make themselves and everyone else happy.Puppeteer plays it out in North Hatley By Lisa Ladouceur Record Correspondent Puppet theatre lovers will have a real treat for the next five weekends as Tim Gosley, a well-known puppeteer, will resurrect his one-man show, The Ugly Duckling, at North Hatley’s United Church every Saturdays until Sept.1.Gosley has worked in both live theatre and on television shows, including Fraggle Rock and Canadian Sesame Street (as everyone's favourite polar bear, Basil).He was most recently in Lennoxville at a puppet workshop that he hosted on Friendship Day.Gosley first performed The Ugly Duckling 20 years ago at schools and libraries.When he was offered the opportunity to work on Fraggle Rock, Gosley put live puppet theatre aside to pursue a career in television.But after 25 years working as a professional puppeteer, Gosley decided it was time for a change.“ With TV your not interacting with anyone,” he said.“You lose track of the kids, and that’s what it’s about.” He decided to start with a workshop on puppet and mask making at Friendship Day, and now hopes that his live shows will garner new interest in puppetry.“If there’s enough interest, I’ll make new shows for next year,” he said.Gosley also hopes to get a more permanent workshop program off the ground, giving kids and adults a chance to learn puppetry skills and mask and puppet making techniques.On top of these shows, Gosley is also currently working on a TV program for YTV, airing September.Gosley’s performances start this Saturday.There Biggs was convinced that screenwriter Adam Herz wouldn’t be able to match the gross-out humour that turned American Pie — with its bunch of randy teenage males intent on losing their virginity — into such a huge hit.But then he saw Herz’s new screenplay and discovered more mortification in store for him.“I didn’t anticipate Adam coming up with any of this,” Biggs laughs.“I just didn’t think it was possible.I was nervous they weren’t going to push the envelope enough." Instead.Herz pushed that envelope beyond Biggs’s raunchiest expectations.There’s already talk of an American Pie 3, and Biggs jokes that the very suggestion makes him nervous.“I’d want $13 million to do it!” Seann William Scott, who’s back as a sex-crazed jerk named Stiffler, ups the ante even more.“You couldn’t pay me $30 million to do Number 3." he chuckles.Stiffler suffers his own embarrassments in these films.In the original, the glass of beer he’s drinking contains bodily fluids; in the new movie, he’s hit by a shower of human urine.But even as Scott broods over what might be in store for him if he returned for No.3, he admits that he has a strong affection for these movies.And when he returned for the new one, he felt a strong responsibility to fans.“I didn’t want to disappoint them," Scott says.“I knew it had to be at least as funny as the first time around.” Still, he thinks that maybe the American Pie films should quit while they’re ahead.Scott suspects that the gross-out humour genre — as represented by films like There’s Something About Mary and American Pie — is running out of steam.“People are not responding to it anymore,” Scott says."I think it may have run its course." He adds that ‘Pie’ does have one factor strongly in its favour: the outrageous situations are rooted in the characters.“The gross-out scenes in the context of this movie come from a grounded place," Scott says.“You want to see how things happen to this guy and to see how he reacts to it.” Chris Klein, who plays Oz, the group’s hopeless romantic, is involved this time in a frustrated phone sex encounter with long-distance girlfriend Heather, played by Mena Suvari.He echoes Scott in insisting that even scenes as outrageous as this one are grounded in truth.“The coolest thing about American Pie and American Pie 2 is that the sequences in the movie are not blown so far out of proportion that you can’t believe them,” Klein says.“The reason they’re funny is that these are situations that can actually happen to people.These characters are real, and you've seen them grow up and we feel for these characters.The situations are real and happen organically within the story.” Klein isn’t deaf to the idea of a third Pie movie.“Whatever happens happens.” Brothers Chris and Paul Weitz, who directed the original American Pie, are on board this time as executive producers, and have turned over the directing chores to a trusted colleague — J.B.Rogers, who worked as first assistant director on the original film.But the linchpin remains writer Herz who had to deliver an acceptable encore to his earlier screenplay.In the original movie, the guys are just out of high school.In the latest, they have completed a year at college, and are pursuing their summer conquests from a beach house while making some money on the side as house painters.Herz says his imagination worked overtime in dreaming up more outrageous situations: in “researching” the Crazy Glue scene, he even sent an assistant off to both a sex shop and a Home Depot to pick up necessary supplies in order to determine whether the sequence would work.But he insists that these two movies are ultimately about friendship and that whatever takes place is rooted in reality.In fact, he drew on his own background for aspects of the script.“The first movie was about their friendship and their rites of passage together,” Herz says.He remembers that after his first year at college he and his friends' spent the summer painting houses — so that experience worked itself into the movie.“There was certainly pressure and expectation when I was writing it,” Herz says.“We’ve always said: It’s its own movie — it’s another chapter.We weren’t trying to top anything.And if it didn’t feel real, we didn't put it in.” Herz is open on the subject of a third movie.“As long as you’re interested in the characters and care about them and understand them, you can always tell more stories about them.” Shannon Elizabeth, back as an exotic Czech exchange student named Nadia, says she would never reject the idea of another installment.“For me personally, it launched my career,” Elizabeth says.“There’s a part of me that says I owe them a lot.so if everybody else is willing to come back, how could I say no?It’s a group effort and it’s fun and there’s a built-in audience that wants to see more of these characters."
