October IO-October 16, 2003 Magog bar owner hits the 13th note By Leah Fitzgerald Record Correspondent Jean-Denis Dubuc’s album La Treizième Note has been 13 years in the making.The co-owner of Le Chat du Moulin-ier in Magog has been playing sax at the popular bar, and at its previous incarnation Le Chat Noir, since 1990.“People asked for an album for many years," he says.“It was about time to do this album.” The album is a blend of jazz standards and classic French songs.It opens with Summertime, performed by Dubuc’s partner in life and in business, Micheline Roy.It continues with instrumental tracks featuring Dubuc and three pianists, Jean-Jacques Beauchamp, Pierre Blais and François Morin.Beauchamp and Blais play regularly at Le Chat, while Morin has made several appearances.“He’s a very talented young guy," says Dubuc, who plays saxophone on the album.“It was good to have him along.” Also featured on the album are drummer Simon Bergeron, graduate of the jazz program at the University of Sherbrooke and a regular at the club, bass player Guy Breton, also a regular, and drummer Jacques G a u -dreau, who plays on the single Misty.“That’s me fulfilling a promise I made 15 years ago," Dubuc explains.“I told him that when I record Misty, he would play on it.” The album was recorded in Sherbrooke using a simultaneous recording method.See Album, Page 3 one takes only half an hour of prep time, and looks like something straight out of a five-star restaurant menu.I learned how to make this as a young girl (yes, I spent lots of time in the kitchen at the early age of seven).It is the simpler, down-to-earth version of the classic French recipe.Instead of calling for expensive vanilla beans or confectioner’s sugar, it requires only a few basic ingredients: eggs, orange juice, sweetened condensed milk, sugar and water.Don’t be fooled by the apparent simplicity, though.Serve this decadently creamy flan to your pickiest dinner guests, and I guarantee they will beg for seconds.This has always been the dessert I serve when I really want to wow someone.Try a bite and there’s no going back — it will always be one of your winners too.Orange crème caramel Ingredients (for six) 3 eggs, separated 1 cup sugar 2/3 cup water 1 can sweetened condensed milk (300 ml) 1 can of orange juice (use the empty can to measure) Directions 1.Choose the mould you will use.The easiest is the one that looks like a donut with a whole in the middle, but you can also use two terrine moulds.Cook the sugar in the mould until it melts and darkens to the same colour as maple syrup, stirring with a wooden spoon and tapping any sugar lumps to help them dissolve.Add the water.Don’t worry, the caramel will smoke, bubble, fizzle and look funny, but slowly, as you keep stirring the water, will blend into it.You will end up with a nice and smooth caramel sauce.Remove from the heat and let it cool for at least 15 minutes.2.Beat the whites until they form hard peaks.Add the yolks, condensed milk and orange juice.With your mixer set to its lowest speed, beat until blended, but not too much — you want to preserve as many air bubbles as possible.3.Using a ladle, pour the custard mix into the mould gently so that it stays on top of the caramel instead of mixing with it.Cover the mould with tin foil.Bake in a pre-heated oven set to 350F for one and a half hours, in a bain-marie (meaning you have to put the mould inside a bigger one containing water, adding more if it dries up).Let it cool for at least 10 minutes.Run a knife around the edges and magazines and cookbooks for recipes that catch my eye.I am always on the lookout for a recipe that is tasty, interesting and uniquely flavoured, but also fairly straightforward to make.I’m pleased to report that I have just the kind of recipe we’re all looking for and we have Lucy Waverman to thank.Waverman is one of Canada’s most successful food writers.Her substantial food resume includes a number of cookbooks to her credit.Today’s recipe is as delicious as it is dead simple.You mix up a bunch of stuff in the food processor, slap it on some boneless chicken, and roast it in the oven.You could even prepare it ahead of time and then shove it in the oven just before dinner.Could it be much easier?This recipe takes about 15 minutes to prepare and 20 to 25 minutes to cook.1 suggest serving it with basmati or jasmine rice.Indian Spiced Roast Chicken (Serves two) 4 large boneless chicken breasts Salt and freshly ground pepper For the mint-chili pesto: 2 tablespoons (25 mL) fresh ginger, chopped 2 tablespoons (25 mL) garlic, chopped 1 teaspoon (5 mL) garam masala 1 teaspoon (5 mL) jalapeno pepper 1/4 cup (50 mL) fresh mint, chopped 1 tablespoon (15 mL) lemon juice 3 tablespoons (50 mL) vegetable oil Preheat oven to 425 F (220 C).Directions 1.Combine all pesto ingredients in a food processor and process until smooth.Rub over chicken and season to taste with salt piano coming to Lennoxville, but there’s no playing involved.At least not for the audience.On Oct.16, Lorraine Desmarais will give her piano lecture concert Evolution of Jazz Piano at Centennial Theatre.The award-winning pianist will present a program explaining the styles of jazz piano, the differences betweenthe periods of jazz music and give examples of every style.Desmarais, known for her own compositions and style of jazz piano, will be emulating the greats, including Scott Joplin, Bud Powell, Thomas “Fats” Waller, Chick Corea and McCoy Tyner, to better explain jazz music to the audience.“We call it, ‘everything you ever wanted to know about jazz but were afraid to ask,’” Desmarais jokes.The conference was first performed in 1994.Desmarais did 50 concerts that year, 25 of them at the Maison de la Culture in Montreal.The next year, she took the conference on tour around Quebec.“It’s not me, not my own concert,” she says.“But it’s a nice compliment to my own work.” Desmarais says she prefers to work on her own compositions and improvisations when she plays, but the strict structure of the conference provides a challenge to her.“They ask if I can play like Oliver Jones,” she says.“I can try, and do a lit- tle bit like him.But everybody has their own voice.You can still say this is Oliver Jones, this is Oscar Peterson, this is Lorraine Desmarais.” Desmarais first started playing on a toy piano.Her parents saw how much she enjoyed it and set her up in lessons.“I already improvised at a young age,” she says.“My teacher was good, sharing a love of music, not just technique.” Encouraged by her teacher, Des-marais pursued jazz piano.“I have cassettes at home of my own compositions,” she says.“They’re from when I was 12.” Desmarais recently returned from a concert with the Nova Scotia Symphony, where she played the orchestral arrangement of her album Love.The CD kicks off with Victor Young’s When I Fall in Love, and follows with a series of songs exploring the many facets of love that Desmarais wrote.The orchestral arrangement was done by Simon Leclerc of the Orchestre Symphonique de Montreal.“Symphony orchestras really like playing the music,” she says.“They want new repertoire.Most of the orchestras I’ve worked with have really like the new aspect of jazz.” Desmarais’s next project is an album of classic Christmas tunes for next track,” Dubuc explains.“The way you’re blowing influences the other musicians.The spontaneity and creativity is boosted with playing at the same time." Coming Soon: Atanarjuat, winner at Cannes Film Festival, Indi film October 22nd at 7:00pm (tickets: $4.00) Scènes d’intérieur with Sylvain Émard Danse October 28th at 8:00pm (tickets: $23, $18) ‘subscriptions still available* iTHE, page 4 October 10-October 16, 2003 RECORD =^==^———= TALK Local artist feels her work evolving NANCY NOURSE/CORRESPONDENT Suzanne Deslauriers is currently making plans to exhibit her work in Montreal next summer.By Nancy Nourse Record Correspondent Suzanne Deslauriers’ paintings and figurative artwork have been admired by many throughout the area in recent years.Her studies in Plastic and Graphic Arts have led her down a path that has seen her work evolve from abstract oil painting, to her current love of working with textures.Her use of collage, using coloured cutouts, horse hair, fur and cotton cloth produce a sand-like texture as background for her artwork.“I still enjoy painting with oil, but I find that working with collage and textured art keeps me constantly in the discovery mode,” explained Deslauri-ers.“Using this technique, I find that I am able to achieve a greater depth of emotion and activity than I could by merely using paints.The energy comes from its roughness and actual lack of perfection.” Even as a child, Deslauriers was interested in art.Although she tried other interests, she always seemed to come back to her love of painting.She feels the world has so much natural beauty to offer.It is for this reason that she decided to spend three months dur- ing her university years backpacking throughout Europe.She deliberately chose this form of travel because she didn’t want to be labelled as a tourist.It was in this way that she was able to really mix with the people and learn from their cultures.She would sit for hours sketching local people and scenes.“It was an exciting time but problems did arise, due to the fact that I couldn’t always speak the language and was unfamiliar with my surroundings,” Deslauriers added.“I remember visiting one museum in particular.I was so fascinated by one of the paintings that I tried to get as close as possible to study it.What a commotion! I didn’t have any idea that I was the one who was causing such a stir! It was only through the kindness of someone who could speak the language that I finally understood and very sheepishly stepped back.” Deslauriers’ work has been exhibited at the Centre Culturel Azur and most recently as a part of the symposium Estrie Vert.She is currently making plans to exhibit her work in Montreal next summer.“It took a lot of encouragement on the part of my family and friends to get me to exhibit my works.It is only now that I finally have accepted to let my artistic talent take over and lead me down unfamiliar paths.It can really be a very scary process,” she concluded.Life After George lacks emotion By Diahann Saddler Record Correspondent The Centaur Theatre held its season opening in Old Montreal recently with the Canadian premiere of the Australian play Life After George.Playwright Hannie Rayson flew in from Melbourne to attend the evening.Given all the hoopla, was the play itself worthwhile?It all depends — if you enjoy overly long and earnest theatre with little to offer in the way of wit or emotional impact, then George is the play you’re after.SOS Open 7 days BETOtL' Paints fashion & decoration fabrics We now offer a complete decoration center including painting services, furniture and design, in-store or at Comforters Wallpaper Accessories, etc.home.In-store seamstress service 67 Main West, Magog • 868-2527 The play went on for three hours — and it is definitely a two-hour story.Rayson wrote the play in 2000 and it has been produced in Australia, London, and now Montreal.Somewhere during that time somebody might have suggested some judicious editing.Or perhaps it started out being four hours long! There are over 60 scenes in the production, and though it is deftly directed by Gordon McCall, the play drags.Much of the information is unnecessary and many of the scenes are redundant.Compacting the play would have improved it.The story just isn’t good enough to go on that extra hour.The plot revolves around Professor Peter George (George to his intimates), who crashes his plane in the opening scene.His three wives gather for the funeral, along with his daughter Ana.His best friend Alan Duffy tries to keep the peace between the women.George may be dead from the first scene on, but he makes many appearances in flashbacks.He is a likeable man, passionate and convicted, full of integrity where intellectual standards are involved, much less moral in his personal life.His three wives are all interesting and accomplished women.His daughter has never grown up and out of his shadow.His infi- delities are exposed as the play unfolds.Secrets are revealed, funeral plans are made and unmade, and some life-altering realizations take place by the end of the show.A lot is happening - but the core of caring is missing.Ron White heads an excellent cast as George.Deborah Kipp plays first wife Beatrix, Patricia Yeatman is superb as the unsympathetic second wife Lindsay, and Paula Jean Hixson is the widow, Poppy.Anne Day-Jones is good as the rather annoying Ana, and Kent Allen is solid as George’s best friend Duffy.The set is minimal but imaginative, and director Gordon McCall has given us a polished production.Despite fully developed characterizations, the people in this play somehow don’t move us.It is not the fault of the actors — it is a thoroughly good ensemble.Rayson has written the play with too much emphasis on ideas and not enough on emotions.This production has some merits, but not everyone will enjoy this show.For a student of 20th century leftist history there is a lot of meat.For a playgoer wanting to be touched or moved, there are just too many words.Life After George is playing until Oct.19.For tickets and information call the Centaur Box Office at 514-288-3161. taken her as far as creating the group Literacy in Action, formerly St.Francis Literacy Organization.The Record recently sat down with Jackie for an interview.THE RECORD: How and why did you first get involved in the literacy project?HALL: “I was asked to take over Leila Atkins’ adult class in Magog when she retired.It is a very difficult thing for an adult to admit that they have a problem such as this, and even more difficult for him to ask for help.I felt the key was to focus on family life — bring the opportunity into the family when the children are young.A parent is much more comfortable asking for help for their kids than themselves.In the end, they all win.” THE RECORD: What made you decide to ‘home school’ your children?HALL “There are three types of literacy: functional, cultural and marginal.School and hospital systems today have become so big that it is impossible to see the individual person.Handing my children over to a system that I didn’t really believe in didn’t seem quite right.“I taught my children to participate and appreciate life’s gifts through reading stories, cooking and general family togetherness.The special time that I spent curled up next to the fire reading to my kids while other parents were shipping their little ones off to the bus will always be very precious to all of us.“About three years ago, the Waldorf School moved into Waterville as part of the alternative education offered by public school system.My kids have been attending this school ever since.The curriculum of Waldorf deals with the whole person, the spirit, mind and heart.Music and art are a part of classes.” THE RECORD: You also have a love of dance and music from the days of our ancestors.What is contra-dancing?HALL: “Contra-dancing is actually a form of Appalachian clogging which has no specific steps.The actual dance is influenced by the actual mood of the music.I guess it is really a mix of Irish and Québécois dancing styles.“I also teach this type of dancing, and am delighted with the interest of the young people lately, especially the Bishop’s crowd.In the U.S., contra dancing is very popular in the 40 to 60’s crowd, but it is so exciting to see this newest development.Nicolas Williams, from Tuq, will be playing at our upcoming dance on Oct.18.His music has a sort of Celtic/gypsy sound to it.” THE RECORD: Tell us a little about nancy year putting on the Words on a String Festival.This open-air festival centers on family involvements, theatrical shows and readings, and music.” “Our association with the Tools for Life Project in Stanstead has also been great.The young mothers and children involved in the project learned how to make the most of what they had and talents that they weren’t even aware of.The co-ordinating staff was perfectly matched for the project.” THE RECORD: Could you elaborate on why you think communication is so important?HALL “I believe that it is very important to work on ourselves as individuals.The answers are all inside us.When I speak about communication, I am not just referring to talking but the most important aspect is listening.Marilyn Manson, despite much negative press, was right on the mark with his answer when someone asked what he would say to the kids involved in the Columbine tragedy - ‘I wouldn’t say anything, I would just listen.’” Saluting our Friends -The Quoi de Neuf?Bigger is preparing to film his latest project, entitled Graniteville, in the area.Director loves the area so much he’s moved here By Nancy Nourse Record Correspondent Stan stead The Eastern Townships, a recent home to big-budget movie shoots including The Human Stain, Taking Lives and The Secret Window, will now welcome another production by a director who loves the area so much that he has moved here.Director, producer, writer, editor and actor Bashar Shbib is preparing to film his latest project, entitled Graniteville, in the area.Not only that, but he has also set up residence full time in Stanstead.Shbib is best known for his work on films Julia Has Two Lovers, The Kiss, and Strawberries and Wine.He has worked with the likes Dominée Cara- pella, Geoff Deadman, Neil McDon-nough (now acting on the TV series Boomtown) and former X-files lead David Decovney.His films have also appeared at the Berlin Film Festival, and received critical acclaim at both the Montreal Film Festival and the New Orleans Film Festival.“I spent my youth growing up on a Charolais beef ranch in Coaticook, so I am very familiar with the area,” said Shbib.“I did move to Los Angeles for a while, but I returned because of the mentality of the Canadian people.Their openness is very refreshing.” Graniteville is a murder mystery that takes place in a small town.He has been have been holding casting calls for the last couple of months to fill the positions that are needed.“I want to involve as many local people as possible,” said Shbib, who is president of his own independent film production company, Oneira Pictures International.“I originally wanted to call the pro- duction Granite Falls, but I recently found out that there was a copyright on that name, so it is now entitled Graniteville.The sessions will wrap up in December, and we plan to start shooting sometime in March.” More than 65 people, ages five through 70, have already answered the casting call for actors and crew members.They will be divided up into two teams that will receiving a 10-week training session.Shbib is also bringing in two people from Montreal, one from New York and one from Hungary to host the sessions.A special screenwriting workshop will also be starting on Oct.15.At the end of this time, each participant will have written their own screenplay.Shbib said his prudent shooting schedules enable him to freely direct and produce the modestly budgeted movies that he personally enjoys making.He noted that at least 25 per cent of his crew on Granitville will be made up of trainees.Is this tic/Warner) An impressive variety of influences meld here to create a series of moods as presented in piano-based pop ballads and songs.This debut is here, there and everywhere with pop one moment then folk, country and gospel.There are instances of rock and roll with ‘Breaking All The Ground,’ but then the tempo changes into something quite a bit more country with ‘Can’t Stop Loving You’.It is precisely this sort of vacillating that will either vex the listener greatly or win them over.Firstman takes full advantage of technology to offer an album just over 76 minutes in length without a bad
