rack of lamb with herbs in its own juice; pork tenderloin with a mustard and pickle sauce; beef tenderloin in a pepper sauce; sweetbreads with apples and calvados; veal kidneys in a mustard sauce; poached salmon in a sorrel sauce; and filet of Doré (pike) done with an almond cream sauce or citrus butter with capers.The only table d’hôte offered the night we were there — a reasonable $19.95 for soup or salad, main dish and dessert — was veal schnitzel, quite different from anything else on the menu.Charbonneau explained this is a tribute to the heritage of the building, which was Dressler’s Schnitzel House for 25 years, from the late 1950s to the early 80s.Charbonneau, who has been running Le St-Martin for 18 years, asked Mr.Dressjer himself for the recipe for his most popular schnitzel.Veal Schnitzel Cordon Bleu is now served occasionally.We decided to precede our soup or salad with an entree from the menu.We chose the escargot and shrimp.This was a tasty treat of small shrimp and plump escargot served between delicate pastry sur- PHOTOS BY DAVID ANDERSON/CORRESPONDENT André Charbonneau, left, once served movie star Marlon Brando at his elegant restaurant on the outskirts of Knowlton.The dining room itself is enhanced by warm lighting picking up the deep burgundy in the decor.rounded by a garlic- and- herb-spiced cream sauce.The cream soup this evening was carrot, a rich, smooth soup, however carrots needed to be more predominant in the taste, here they got lost in the cream.The salad was a wonderful sui prise, featuring leaf lettuce and an excellent coriander vinaigrette.Subtle and delicious.The veal schnitzel was a generous portion of very thin veal, stuffed with ham and melted Swiss cheese.It was served with two wedges of rosti potatoes (potatoes mashed with spices and cooked on a skillet in the form of a pancake).This traditional German dish was quite tasty.The second meal was the sweetbreads and, for connoisseurs, these were delectable, cooked to perfection and the creamy sauce composed of apples and the digestif calvados was a fine compliment to their flavour.This was served with fine roasted potatoes.On the side of both of these dishes were a dazzling array of fresh vegetables: broccoli and cauliflower florets au gratin, green and yellow beans, mashed squash, turnip and even leeks in a Phyllo pastry.Colourful, delicious accompaniments.A mouth-watering selection of homemade desserts was then offered.Some were included with the table d’hôte; à la carte, they are $5.25.We tried the frozen mint pie, a terrific summery treat where a generous slice of cool mint pie on top of a chocolate crust is surrounded by swirls of chocolate, strawberry and cream sauce; September 7-September 13, 2001 page 3 TALK OF THE Townships § .II Sounds to soothe the savage heast music Moses Mayes and Co.mosey into Lennoxville Winnipeg-based group visits Townships for first time COURTESY MOSES MAYES AND THE FUNK FAMILY ORCHESTRA Although only on the music scene for two years, Moses Mayes and the Funk Family Orchestra is turning heads with a recent nomination for a Prairie Music Award.The band will make a stop in Lennoxville Saturday at the Golden Lion Pub.By Tricia Davidson Record Correspondent Lennoxville Fresh out of Winnipeg and amid an extensive cross-country tour, Moses Mayes and the Funk Family Orchestra make their Townships’ debut in Lennoxville at the Golden Lion Pub Saturday, Sept.8 as part of a promotion for their independently released CD.Although relatively new to the music scene — the group has been around for two years — Moses Mayes has already flirted with national success, picking up a nomination for a Prairie Music Award.The group, composed of Chuck Cope-nace, trumpet; Paul Farley, bass; Antin Muzyka, drums; Scott Senior, congas, timbales and percussion; Mark Penner.guitar; Nathan Reimer, rhodes, moog, clavinet and keyboard and Grant Paley, turntables and vocals, began playing out ofWinnipeg in 1999.Two years later, the band now tours in a 15‘passenger van, loaded with five keyboards, seven turntables, an amp, two big congas, timbales, drums, a trumpet, a bass, a guitar and merchandise, not to mention band members.“I’ve been a DJ since I was about 15.1 was always more into live music,” said Paley, who is also the band's manager.“I had this opportunity to play with amazing dance, funk, jazz type music in this band.While this will be the band members first visit to Lennoxville, Moses Mayes has performed at several well-known festivals in recent years, including the 1999 Pan American Games, Urban Groove Festival, Winnipeg Fringe Festival and Saskjazz.“Our largest crowd was about 2,000 people during the Winnipeg Jazz Festival at an outdoor show,” said Paley.“Our smallest crowd was about eight EMAIL YOUR CLASSIFIED TO US! religious rites, as well as social and economic terms, the artist found partners in the contemporary art venue La Galerie Horace, 74, Albert St., Sherbrooke.He also discovered that the building had once harboured Sirop Mathieu’s famous pharmaceutical laboratory.Sirop Mathieu was made of cod-liver oil, so inspired by this research, Vigneau has installed in the gallery’s entrance three stages of a “fictional laboratory” with a giant still, recreating the industrial and medicinal transformation of fish.All scenes are superbly made of materials like steel, plaster We will also presen t several movies for bilingual audiences’ and pigments.The site will be open to visitors until Oct.14 Georges Comtois Festival Director/ Co-ordinator La Galerie Horace also presents, from Sept.7 to Oct.14, results from an uncanny association between artists and environmentalists from Sherbrooke.Recuperating materials salvaged from the environmental cleaning of brooks banks in Saint-François river’s territory, nine artists have made some recycling wonders.Worth - checking out, and you can go through all the exhibits for free.For details, call the gallery at 821-2326.Until next time, enjoy your cultural rides! (819) 829-5772 ¦: ’ .v *>•>- < | .: " " 1 , WebCommunications M.C.Mario MCMario.com (Sony Music Canada) From start to finish, MC Mario’s latest installment — entitled MC-Mario.com — offers everything you need in a pure, up-to-date dance compilation.With featured artists like Darude, Ian Van Dahl and Safri Duo, the album boasts an awesome montage of current chart toppers with ‘Feel the Beat’ and ‘Castles in the Sky’.Additionally, the album also features several breakout singles in ‘Dance With You’ by Caater and ‘Somebody’ by Shortie vs Black Legend.The old school ‘Move It’ remix that M.C.Mario kicks off the album with is another example of this compilation’s progressive range.It also illustrates his fearlessness in sampling tracks from yesteryear, complements of a personalized remix.The album’s only discouraging quality is the addition of Destiny Child’s ‘Survivor’.The popular R&B single by the sexy trio simply does not fit among the trance-inducing, techno dance tracks characteristic of traditional M.C.Mario albums, despite his attempt at a remix.Yet, if an album’s only gaffe is to include a chart-topping single by one of North America’s favourite R&B groups, then the album cannot be that bad.-J.Z.N’Sync Celebrity (Zomba Records) Amid an ever-changing music industry, listeners are constantly subjected to one-hit wonders, new “discoveries” and peri- odic crazes, whether that be in the form of female R&B artists, reality TV creations or the plethora of boy bands.Concerning the later, N’Sync, a pioneer in their own right, recently released Celebrity, their much anticipated follow-up album to No Strings Attached.While singles like ‘Pop’ ‘Celebrity’ and ‘Tell Me, Tell Me .Baby’, will likely drive millions of teenage girls to music stores across the world, it’s unsettling to know that an album like this will outsell, outplay and outdo other quality albums like Alicia Keys’ latest or Sugar Jones’ debut album.Admittedly, the boy band craze has died down, but what we have instead is another band attempting to redefine themselves, this time with an assortment of techno-pop singles.In an attempt to distance themselves from the stereotypical boy-band sound, N’Sync’s “new sound” now closely resembles Michael Jackson’s single ‘Black or White’ — a mix where pop plays second fiddle to techno.Does the changes to N’Sync’s music, good or not, matter though?No.Of the few constants left in today’s music industry, Michael Jackson will always be the king of pop, Ice Cube is a better rapper then actor (as scary as that is) and N’Sync will sell millions upon millions of albums, bad or not.-J.z.Moses Mayes and the Funk Family Self titled (Independent) Moses Mayes and the Funk Family Orchestra has got the funk.Moses Mayes and company creates compositions filled with ‘70s style funk and jazz vibes ideal for dancing to or just plain relaxing with friends.The songs are instrumental, save for select vocals and some sampling.The tempo varies from moderate to fast throughout the CD.Rather than have just a keyboard, they employ a variety of instruments like the Moog and Clavinet.Wiry settle for just drums when you can incorporate congas and timbales?Choice tracks were toward the end of the disc.Songs like ‘Moses Mayes’ and ‘Hobgoblin’ were enhanced with pronounced sounds of guitar incorporated into the funk.The Winnipeg outfit doesn’t have a member named Moses but they are a funk family of seven.-T.D.System Of A Down Mm.Toxicity (American/Sony) You can tell from the get-go that this is going to be one of those bands that loves to create a musical ruckus.Read about the ruckus over their canceled free concert at www.systemofadown.com.‘Prison Song’ starts off with a burst of intensity, grabs and throttles you with metal sensibilities.On their sophomore release, System of a Down bangs and hollers their way its through fourteen tracks.‘Chop Suey!’, the first single (picked up and put into video rotation by MTV no less) punctuates the noise with melodic bits.As one nears the end of the disc, the pace slows.‘ATWA’ starts out slow, just as one is relaxation, they bring the noise, only to alternate with a mellow bit and then again to noise.Witness cacophony, hard rock and melodic sensibilities merging.It all ends with a two minute piece reminiscent of Native American music.Diverse and delightful.-T.D. ; : _ TALK OF THE Townships September 7-September 13, 2001 page 7 A world of adventure, comedy and drama a waits movies Mark Hamill looks back on the force of Star Wars By Jamie Portman Southam News Ask Mark Hamill about his favourite “fan from hell” story and his face lights up.The incident naturally involves the Star Wars phenomenon and Hamill’s performance as youthful adventurer Luke Skywalker in the original three installments of George Lucas’s ongoing epic.But as he tells his “spooky” tale he's also allowing yet another glimpse into his own ambivalent feelings about a series that changed his life and about the idiosyncratic filmmaker who made it all possible.It happened more than two decades ago at the height of the first Star Wars frenzy, and Hamill was on a delayed flight from Canada to Los Angeles.“There was a strike up in Canada and we had to sit on a plane for hours and hours while they found a pilot,” he said."We finally took off at 2 a.m.Eastern time and we were landing in LA.at 3 or 4.It was a really surreal experience.” Even more surreal and upsetting was the cabdriver who picked Hamill up at the airport, recognized him immediately and began sounding off.“This guy starts going on about how he was filing a lawsuit against George Lucas, so I said: ‘Get in line.This guy’s got a building with nothing but lawyers.’ To make a long story short, this guy was going on about how Lucas was preventing the anti-Christ from coming to Earth.” The driver’s rant immediately set off alarm bells for Hamill who devoutly wished he was anywhere but in the company of this demented cabbie who could even have a firearm in the car, for all he knew.“When this guy reaches for the glove compartment, I’m ready to hit the floor," Hamill said.“Instead it turned out to be something else, but I’m thinking — 0 my god!"
