A fresh turkey from your butcher is truly wonderful.Or, if you’re cheap, you can buy a frozen utility-grade buzzard that may be missing a wing, but otherwise will be fine.For turkeys under 16 pounds (8 kg), figure at last 1 pound (500 g) of turkey per person.A 14-pound (7-kg) turkey will feed 14 people, or nine people with ample servings and leftovers; an 18-pound (9-kg) bird will make 20 average servings, or 12 ample portions with leftovers.Now, just follow these hints, tips, suggestions and you can’t miss.Remember, the recommended roasting times listed here are approximate, so leave yourself some flexibility should the bird need a little more (or less) time in he oven.Thaw it There are two safe thawing methods: in the refrigerator or under cold water.The refrigerator is the best method.For either method, leave frozen turkey in its original plastic wrap.Once thawed, keep turkey refrigerated and cook within 48 hours.• In the refrigerator: Thaw breast-side up on a tray.Allow one day of thawing for every four pounds (2 kg) of turkey.• In cold water: Place breast-side down in cold water to cover.Change water every 30 minutes to keep surface cold.Allow 1 hour per pound (2 hours per kg) to thaw.Clean rr • When thawed, remove plastic wrap.Remove neck and giblets from body cavity.• Rinse turkey well, inside and out, with cold water.Pat dry with paper towels.• Always wash hands thoroughly in hot soapy water before preparing food and handling raw meat.Do not let raw meat or juices touch ready-to-eat foods, either in the refrigerator or during preparation.• Do not put cooked foods on the same plate that held raw product.• Wash utensils, dishes and surfaces for cutting turkey with hot soapy water, then, rinse with hot water in a sanitizing solution made with 1 tablespoon (15 mL) of household bleach per 4 cups (1 L) of warm water.Brine it An overnight soak in a dilute salt solution (unless your bird is kosher) gives the uncooked meat a chance to absorb moisture and seasoning.While brining is not essential, it does make a wonderful difference.TO BRINE YOUR TURKEY • Find a container large enough to hold the turkey submerged in brine (a clean plastic bucket works well).• Estimate how much brine you’ll need by submerging bird in enough ordinary water to cover, then remove bird and measure the volume of water.• To make four quarts (4 L) of brine, mix 1 cup (250 mL) coarse pickling or kosher salt into 4 quarts (4 L) of water.Stir until salt is dissolved.• Immerse turkey in brine, using a sealed jar as a weight to keep it submerged in brine.Store in refrigerator eight to 12 hours, then remove and rinse well to remove any clinging salt.Stuff rr Don’t pack too much stuffing into the cavity, because it does tend to expand.Overstuffing also tends to inhibit juices from the bird from penetrating into the stuffing.Roast rr Hot oven or cooler oven?The debate rages among cooks, as those who prefer heat at 425 F (220 C), then reducing the temperature after 30 minutes to 325 F (160 C) say the initial blast cuts cooking time.Perhaps, but we’re keeping things simple by sticking with the 325 F (160 C) temperature throughout, which is recommended by the Ontario Turkey Producers.Cooking times Cooking time will vary according to the size of the turkey, obviously, as well as the temperature of the bird when it goes into the oven.That is, a turkey straight from the refrigerator will take longer to cook than one allowed to warm slightly to room temperature.Use an instant-read meat thermometer to be certain it’s done.Approximate cooking time for stuffed turkey at 325 F (160 C), for unstuffed, subtract 20 to 40 minutes from total cooking time, depending on size: 8-12 POUNDS (4-6 KG) 3 - 4 HOURS 12-16 pounds(6-8 kg) 4 - 4 1/2 hours 16-20 POUNDS Townships a mecca for artists and art-lovers Saint-Benoit-du Lac exhibit kicks off season By Tricia Davidson Record Correspondent Sherbrooke The Musée des beaux-arts de Sherbrooke unveiled an exciting new 2001-2002 season for those passionate about art.The exhibitions beginning on Saturday, Oct, 13 are entitled ‘The Builders of the Abbey Saint-Benoît-du-Lac’ and ‘Yves Trudeau, Parvis et Portails’ (church squares and portals).Included in the two shows are architectural plans and photographs from the monks of the Saint-Benoit-du-Lac Abbey, and a series of architectural drawings and sculptures by Yves Trudeau.In February 2002, the museum will also host La Collection Duplessis, composed of 36 paintings recognized as European, Canadian and Quebec works of art.The most famous painting of the collection is an original painting by Joseph Turner.Originally from Montreal, English sculptor Liz Davidson will have an exhibition of recent sculptures in March 2002.Local artist and sculptor Michel Goulet will have an exhibit of his work as part of the bicentennial celebrations of the city of Sherbrooke.The concluding exhibit of the 2002 series is composed of 49 borrowed works from the years of 1915-16 and 1918-19.The Sherbrooke Library and Art Association, founded in 1886, was the first association dedicated to the arts in the municipality of Sherbrooke.For those wanting to get an early glimpse of the offerings for the forthcoming exhibits, there is a preview of the works of Yves Trudeau on Saturday, Oct.13 at 5 p.m.Trudeau was born in Montreal in 1930, studied at Montreal’s École des beaux-arts and was a professor at l’Université du Québec à Montréal.He has had more than 20 solo exhibits and many collective shows, symposia and other events in Quebec, France, Switzerland, Hungary, Belgium, Czechoslovakia and Great Britain.‘Parvis et Portails’ focuses on five drawings based on Gothic architecture.These drawings focus on the entrances and façades of buildings, more specifi- cally on doors, posterns and portals.“In dealing only with a fragment of a building, a façade or a wall, I refer particularly to remnants of buildings,” explained Tudeau.“These relics are all that remains from buildings that have disappeared, been damaged or nearly erased through the passage of time, or as a result of pollution, an ancient war or recent adverse event.In other words, it is a warning against the drastic solutions constituted by armed conflicts.” The drawings complement the series of 17 sculptures and form a fascinating look at often overlooked elements of architecture.“One has to see the exhibit in a global way.The drawing and the sculptures go together,” said Lise Boyer, the Director of Communications at the museum.“His interpretations of Gothic architecture in his drawings are then reproduced in his sculptures,” In harmony with the architectural theme, the exhibit ‘The Builders of the Abbey Saint-Benoit-du-Lac’, showcases a total of 14 drawings and plans as well as 40 photos.Dom Paul Bellot, Dom Claude-Marie Côté and Dan.S.Hanganu are the builders highlighted in the exhibition produced and circulated by the Centre du design of l’Université du Québec à Montréal.An engaging complement to the drawings, plans and photos of the builders is the collection of photographs by Dom Jacques Côté, one of the current monks at the Abbey.The addition of Dom Côté’s photos to the exhibition happened in a roundabout way.The exhibit was in planning for the last year, someone found out about the photos and thought they would consummate the collection.There was a slight hitch in the efforts to add his photos to the exhibit.“He is in Rome right now for a year,” noted Boyer.“We work via email and the photographs were sent to will invade Waterloo’s La Maison de la culture this Saturday night in part to promote their latest album, entitled Original.The Stephen Barry Band, which features Barry on vocals and bass, Michael Brown on guitar, Andrew Cowan on guitar and vocals, John Mc-Colgan on drums and Martin Bood-man on the harmonica, is an accomplished blues band whose recently released computation features 11 original tracks alongside three essential blues covers.From a folk-rock ballad, ‘Doomed from the Start’ to a spoken-word number, ‘Talking Bullet Hole Blues’, to the Latin influenced ‘Beautiful Disposition’, many of the singles are in addition to Barry’s exceptional blues numbers.Even the three blues standards on the album are reworked, as the single ‘Rollin’ and Tumblin’ has an African feel.Barry’s English literature bachelor degree from McGill University is also made quiote evident in the literary quality of certain tracks, while his eccentric poetry comes through in spades on several original numbers.Born and raised in Montreal, Barry has established himself as one of the best blues men in Canada, performing across Ontario, Quebec and the Maritimes over the last 20 years.Barry has also worked with the best, performing alongside blues greats like Big Mama Thornton, John Lee Hooker, Buddy Guy, Pinetop Perkins, Bo Diddley and Vann “Piano Man’’ Walls.The Stephen Barry Band is no stranger to success either, as it has-t-oured internationally, and appeared at several Montreal Jazz Festivals.Their album Happy Man, released in November of 1995, alst> sold 5,000 copies within six months.In 1996, the band received the album of the year award for Happy Man, and was named the blues group of the year at the Jazz Report Magazine Awards.Their latest album, Original, marks a clear his life.” The theme of community is explored in the comedy Mambo Italiano, written by Montrealer Steve Galluccio and running through Oct.21.Perron excels as Gino, the infuriating yet lovable Italian father who finds it extremely difficult to accept that his son is gay.Playing opposite Mary Long as the matriarch, the pair paint a vivid picture of an Old World Italian couple who engage in daily screaming matches around the dinner table, their arguments peppered with lively Italian curse words, and speak as much with their hands as with their mouths.“Italians, like French-Canadians, like to speak with their hands, and there are three Italians in the cast, so whenever I had a question, I would ask them and they would say, “My father did this with his hands when he’s happy," said Perron.“I’m also always on the lookout — I like to study people, I like to see how they react to things, what makes them tick.” Although some of the characters in Mambo Italiano are over-the-top, Perron insists it isn’t a farce.“They are like that.They’re very passionate people.They scream at each other, but that doesn’t mean they don’t love each other.It gets operatic.There was one thing on my mind throughout the process and that is I wanted him to be genuine.I didn’t want to be a caricature.” Perron, the eldest of three boys, also used his own family as inspiration.“Every family has secrets, things we didn’t really talk about.There was a lot of love underneath it; sometimes not really being able to express what we want to say, but in the end coming around and working things out.” The graduate of Dawson College’s theatre program could be talking about the plot of Mambo Italiano.Playwright Galluccio, a first-generation Italian-Canadi- an, has revolved his plot around two gay Italian Montrealers whose families discover their secret.Early on, the warm, sensitive Angelo (Andreas Apergis) states, “Being gay and Italian is a fate worse than (he contemplates).there is nothing worse.” Indeed, the reactions on both sides of the family are over-the-top and exactly what the boys expected.The parents go from guilt trips and anxiety over what others will think to an ill-advised plot to match the boys up with women, a plan that goes wonderfully awry when Angelo’s date remembers him from high school, where he was known as “The Fag.” Mambo Italiano is an extremely funny piece of work.After a somewhat uneven first act teetering between farce and realistic drama, director Gordon McCall finds the right balance in Act 2, where the characters come into their own and are more rooted in reality.A wonderful scene in a church confessional underscores the theme of family in the play.Perron is joined by a talented group of Canadian actors, including Andreas Apergis, the heart and soul of the show as Angelo; Ellen David, a joy to behold as Angelo’s valium-popping sister; Mary Long, the petite, yet powerful matriarch; Giuseppe Gal-laccio, Angelo’s troubled lover, Nino; Penny Mancuso, Nino’s widowed mother who stops at nothing to snap her son out of the “phase” he’s going through; and Suzanna Le Nir, a brash Italian with big hair who is out to snap up Nino for herself.Townships audiences will recognize David from her numerous appearances at Theatre Lac Brome (Desire, I Hate Hamlet) and The Piggery (The Perils of Persephone), while Le Nir is a graduate of Bishop’s University.The wonderfully whimsical art deco set is designed by John C.Dinning, who has worked at The Piggery and across Canada.Originally written in English, Mambo Italiano received its first production in French in a translation by Michel Tremblay at Montreal’s Théâtre Jean-Duceppe, where it broke box office records last year.Joyous and life-affirming, Mambo Italiano will have a (Murderecords) If a Canadian band has tremendous talent, and no one’s around to listen to them, are they still any good?That is the question that Sloan band members are facing from critics as they ride their recently released album.Pretty Together into stores nationwide.As in the past, Sloan delivers another quality, down-to-earth, alternative album that is as innovative as it is improved from the last.The single ‘If it Feels Good Do it' is a traditional garage rock number driven by a thundering bass, while ‘It’s in Your Eyes’ slows it down by mixing a progressive rock with a classic alternative backbeat.Yet, despite their enormous talent, Sloan, who is Jay Ferguson, Chris Murphy, Patrick and Andrew Scott, is overshadowed by mainstream American bands like Weezer.While the latter is an amazing and developing group in its own right, Sloan is better, if not for their consistency then for their diversity.Just compare ‘Never Seeing the Ground for the Sky’ and ‘Are you Giving Me Back My Love’: they’re in no way alike, and in fact, sound like two sperate bands.Yet they’re both great, and that’s just what Sloan is — their latest album, their recent tours and their past records: Devil is my kind of band.These Orange County, Ca.rockers have a catchy blend of pup punk and alternative-rock - think Sum 41, Blink 182, The Ataris, The Killjoys and a slew of other alt-rock and pop punk groups rolled into one.This outfit formed last year, signed with a major label soon after, and in.the space of less than a year, has co-produced (with Jeremy Popoff of Lit and Ed Stasi-um) their debut album, entitled Love and Kisses from the Underground.Choice cuts range from the energetic, very fine pop punk ‘Tie Me Up’, to ‘Sorry Charlie’ , which is highlighted by its melodic vocals.Also featured on this album is the slightly rockabilly punk number, ‘Hard Living Clean’, as well as ’Barbecue’ and ‘Bring It On’ which showcases somewhat different elements: imagine thumping drums and corresponding vocals with the occasional “Hey! Hey!" and attitude respectively incorporated into a hep, punk, rawk sound.-T.D.HSIiliiilirfiliili i mîJîISsSiî» s*»*m KliiraiiiijljëiipiUai» r The New Deal Self-titled (Electro/Zomba Records) From the dotted line to a full-length, self-titled album, members of Toronto’s The New Deal have seemingly taken their rise to stardom in stride.Yet, with a loyal legion of fans in the U.S.and Canada, as well as a fantastic collection of technojazz tracks behind them, it’s to be expected from this Canadian trio, whose emergence is not only sudden, but welcome.The success of New Deal’s debut album is truly a testament to each member’s experience within the industry.Frontman/keyboarder Jamie Shields, drummer Darren Shearer and bassist Dan Kurtz, all in their late 20s, developed nicely in bands like One Step Beyond, Gypsy Sol and Que Vidal, respectively.Now together, and with a record deal with Electro/Zomba, their music is re- fined and lively — call it a mix of disco meeting house music.With the slowpaced, rock/jazz single ‘Exciting New Direction,’ to the pure house number, ‘Back to The Middle’ the entire album is simply awesome.Although Shields, Shearer and Kurtz are best known for their legendary live performances, they have successfully captured that energy within this album, and shown that they are the “real deal”.-JZ.Tenacious D Self-titled (Epic/Sony) If the old adage “don’t judge a book by its cover’ holds any water, then that is the case for Tenacious D’s latest self-titled album.The cover looks frighteningly odd, but the music and lyrics are not that bad.If anything, the album demonstrates that two older, not so physically appealing men can make some interesting noise with the help of the Foo Fighters’ Dave Grohl on drums.The album also features a host of accompanying musicians on everything from a sitar to strings to echoplex and keyboards.What does it all add up to?A quirky album from two acoustic guitar players, Jack Black and Kyle Gass who have strangely witty observations on life and sex.The dialogue pieces are conversations between the two artists added to the beginning, end or occasionally over top of the songs.Musically, Tenacious D’s self-titled album is solid, if not strengthened by its different lyrical outlooks on life.-T.D.Modmania Various Artists (Sony) This compilation is an assortment of artists from the mid 1960s to 2000.Noteworthy numbers come from Montreal mod rockers The Datsons with T Am The Eye’ and fellow Canadians, The Flashing Lights on ‘Elevature’.Listeners may also recognize classic tunes from The Kinks, with ‘All Day and all of the Night’, Aretha Franklin’s ‘Think’, and two Motown outfits, Smokey Robinson & The Miracles and The Temptations.The album doesn’t end there, however, as it also features Oasis and Suede, The Jam, The Specials and the legendary Clash single ‘Train In Vain’.A decent all around disc with a mod perspective, suitable for general listening.If only there was a substantial album jacket that summarized the history of mod, the attire, lifestyle and all of its aspects, instead of the measly one that is provided.- T.D.GBringymir/urn i/y anif/rieni/sJor a ^Bronte ^8a£e cfacB/east at tfie p/fod aBent Sf&gufar ta£(e if hôte andifuck menu starting at Stitt °fVéePeni(s through tOetoPer ejfion t he (ate.cad us to reserve your (Jdtristmas party! OUR CLASSIFIEDS ARE ON LINE! www.sherbrookerecord.com TALK OF THE Townships «THE— .h i —- October 5-October 11, 2001 page 7 A world of adventure, comedy and drama awaits movies Denzel introduces rookie cop to life on the streets By Jay Stone SOUTHAM NEWS Alonzo Harris is a Los Angeles police narcotics officer with an attitude.He dresses in black shirt and black pants and black watch cap and black leather coat and he wears chains around his neck and two guns on holsters over each shoulder.When he makes a bust, it might be a bunch of white college kids who have wandered into the wrong L.A.neighbourhood to buy some marijuana and get ripped off by the local law enforcement agent.“Gimme that pot,” Det.Harris yells, aiming his gun at the head of the petrified driver.“Gimme those cigarettes.Gimme gimme gimme gimme gimme.” Acquisitive devil, but it seems funny rather than frightening because, fortunately for us, Alonzo Harris is played by Denzel Washington, an actor of winning presence even when he’s gleefully bending the law.“Look at it,” Harris says, watching a small-time drug transaction.“Sexy, isn’t it?” And watching him watching it, with his toothy smile, is sexy as hell, even as Harris sends out beams of some thing close to danger.There's not another actor who can make half-cocked violence so alluring, and after a series of recent films like Remember The Titans, in which he had to bury his anger under a veneer of inspirational brotherhood, it’s good to see Washington on the streets, charmingly explosive.Harris is the anti-hero of Training Day, a film that looks at modern law enforcement in the modern American city, or at least at a corrupted version of it.It's a down and dirty movie that starts as a cautionary tale about crime in the 21st century but soon develops into a good guy-bad-guy popcorn flick of the kind that they keep telling us Hollywood isn’t going to make anymore.In Los Angeles, Harris tells us, they’ve stopped that “beat-up-everything-that-moves Rodney King shit,” but apparently they haven’t ended the “bludgeon-the-audience-with-a-lot-of-gritty-drug-talk-then-wrap-it-up-with-vi-olence-and-coincidence” business.The trainee in Training Day is Harris’s new partner, Jake Hoyt (Ethan Hawke), a beat cop who wants to get into the drug-busting line of work and has only one day to prove himself to his unconventional mentor.As played by Hawke, Hoyt is a slacker refugee from Adam-12, his wispy goatee a flashing light that screams ‘rookie.” COURTESY WARNER BROTHERS In Denzel Washington’s relaxed and seductive performance, Alonzo Harris is a black Clint Eastwood.Ethan Hawke stars as rookie narcotics cop Jake Hoyt.Someone says to him, ‘You’re a long way from Starbucks, homey,” and indeed, both Hawke and his character seem like deer caught in the headlights of the inner city.Hawke is no match for Washington just as Hoyt is no match for Harris, and the movie is unbalanced by Washington’s magnetism.The audience is also being trained: we’re meant to see the world of drug-pushers and street toughs and of cops who take shortcuts, through the eyes of the fledgling policeman who thought all you had to do was catch the bad guys and lock them up.Hoyt is introduced to the reality of Harris’s hectoring style in a series of vignettes in which the rookie is variously ordered to smoke PCP-laced marijuana that is seized from the schoolkids.He’s taken around to the homes of Harris cronies who all seem to dwell on the fringes of the law, shown how a wheelchair-bound pusher can be persuaded to give up his stash -
