' — i, , i ¦¦THE i ¦ ' page 2 October 19-October 25, 2001 Let your taste buds do the walking - fine dining is a Townships tradition dining out Record Local restaurant takes on Italian chef for the week STEPHEN MCDOUCAIX/SPEC1AL I US# : ¦ ¦ • ¦¦ : E.: •: , • ' ' ; .— ÉC * - * *"\j, A -a»»».% 1 m W;, Pictured (tight to left): Raffaele Aiello joins Temps des Cerises chef Vincent Montcalm and owners Martine and Patrick Satre in celebrating Italian week.il/ioiJ aAoH Ca*JaAia+JS Uve.serious prok >le>\s curtk rejuiriu^j turrtiog A+JcJr MArtk.I-&OO-202-IO0A Liiericy Foundttlon Dan ville resta uran t Le Temps des Cerises welcomes Raffaele Aiello By Stephen McDougall Special to The Record Danville The award-winning Danville restaurant Le Temps des Cerises has decided to go Italian for the week.Yes, the Belgian gourmet restaurant run by Martine and Patrick Satre are hosting Italian chef Raffaele Aiello until Saturday, Oct.20.Their aim, apart from promoting their own restaurant, is to welcome more European cooking to the Eastern Townships.“Raffaele comes from the Miravidi Hotel in the D’Aoste valley of Northern Italy, which has a special type of Italian cuisine,” said Martine Satre.“It’s mountainous region near bordering France and Switzerland, and the food products there, such as the cheese and the deer meat, have a quality that you can’t find in North America.“The cow’s milk has a richer flavour, so their cheese is different.The deer there are not the same as they are here, so the meat also has a special taste to it.” The Satres discovered chef Aiello by chance.A sister of Martine was travelling in northern Italy this past spring when she decided to try the Miravidi hotel.After sampling his cooking, she phoned her sister right away.“She said you have invite him to your restaurant, he’s that good,” said Satre.“I realized he would be taking his holidays in the fall, so 1 offered him a chance to visit Canada.He accepted.” The Satres agreed to pay for all of Aiello’s travel expenses and salary in exchange for his culinary skills at their restaurant.It was also an opportunity for their local chefs to learn more European techniques.“I want to learn recipes that are authentic,” said Temps des Cerises chef Vincent Montcalm, who lives in nearby Victoriaville.“It is not the complexity of the recipe that is important, it’s the freshness and the originality of the products that are called for that make the difference." Montcalm welcomes the opportunity to learn from European chefs who have more formal training than their North American counterparts.Aiello learned his trade after three years training at the Istituto Profession-ale Alberghiero Soverato cooking school in Italy.Montcalm said his training consisted of several months of chef school, and a lot of on-the-job experience.A chef at Le Temps des Cerises for more than three years, Montcalm has not had the opportunity to travel to improve his trade.“It may be expensive to have Raffaele come here, but it will help me with my skills and produce higher quality cuisine here,” he said.“If I am ever given the opportunity to travel as a chef, I’ll take it.” But Aiello’s visit has not been without a glitch or two.Martine Satre understood that most northern Italians speak French, so she assumed she would be able to converse easily with Aiello during his stay.“When he arrived, we learned he was originally from the South of Italy, and he knew very little French,” she said.“I am from Europe, but I don’t know any Italian.But when we both know cooking, the language barrier becomes less difficult.” With some translating help from Satre and Montcalm, Aiello said he needs to travel to pick up foreign culinary skills that will add to his reputation back in Italy.He adds the trip can also promote travel by Canadians to Northern Italy.“I am a sort of promoter for the hotel and an ambassador for my region,” said the 30 year-old Aiello.“If I can get to travel to other parts of Canada and the United States, I will learn more and be a better chef.” This is not the first time the Satres have had European chefs at their restaurant.Three years ago, they had a chef from Switzerland, and last year, one from Brittany, an area in the north of France.“Next year, because it will be our 15th year in business, I intend to have chef from Scotland,” said Martine.“I think this is appropriate given that the restaurant here used to be a Presbyterian Church, which originated in Scotland.” Taking advantage of Aiello’s presence this week, the restaurant is offering a four-course northern Italian meal, with at least three choices per course.On Friday, Oct.19, the restaurant has invited tenor Perry Canestrari to sing Italian Opera.On Saturday, the theme will be Venison, using local deer meat, but served up the northern Italian way.
