This week’s recipe is the perfect example.These chewy and decadent chocolate treats are typical of Brazil, where they’re served at virtually every birthday party.The chocolatey balls are called brigadiers, like the army officials — don't ask me why! Although they look like truffles, they are softer and fudgier.The actual cooking part takes about 10 minutes, followed by another 10 min- utes of hand rolling.Piece of cake! These are great treats to bring as a gift when you’re invited to a friend’s house for dinner.They keep for days, even out of the fridge.Ingredients (for about 21 brigadiers) 1 can sweetened condensed milk 5 tbsp.powdered chocolate 2 tbsp.maple syrup 1/2 cup chocolate sprinkles Directions: In a non-stick saucepan, cook the first three ingredients on medium heat, stirring vigorously so the chocolate dissolves completely into the mix.Let it come to a boil and keep stirring.When you can clearly see the bottom of the saucepan, and it has thickened and turned sticky, it’s done.Let it cool completely, which should take about an hour.Pour the chocolate sprinkles onto a plate.Roll the dough into one-inch wide balls, then roll each ball onto the sprinkles until they stick.Place each brigadier in an individual paper cup.cirîïi % ALEX FORBES V" By Eric Akis Dark and dreary January weather really gets me stewing.Not in a heated “when will spring be here?" kind of way, mind you.It’s my culinary juices that bubble this time of year, and the best way to release them is to create a heart-warming stew.What better dish to lift your sprits when the next storm system moves in?Move from the Middle East to coastal Italy and seafood becomes the heart and soul of a stew called pesce spada in umido, swordfish in tomato sauce with potatoes, which 1 found in a tasty cookbook called Alvaros’ Mamma Toscana.When many Canadians think of stew, a simple, seasoned, thickened mixture with cubes of beef or chicken and a few vegetables is what simmers to mind.But as our population changes to reflect the global community, that generic model is being infused with a world of other flavours and ingredients.I explore some of the possibilities in the recipe I cooked up for today, it celebrates Canada’s fine seafood in a dish that should generously feed two.Canadian salmon, scallops and shrimp combine in this hearty, delicious stew.Serve with warm slices of CANWEST NEWS Canadian seafood stew for two.baguette and, if you must, a good bottle of buttery Canadian chardonnay.Canadian Seafood Stew for Two Cooking time: 20 to 25 minutes Preparation time: 25 minutes Serves two 1 1/2 tablespoons (22 mL)butter 1/2 medium onion 1/2 medium carrot 1/2 celery rib 1 small garlic clove, chopped 1 1/2 tablespoons (22 mL) flour 1/2 cup (125 mL)dry white wine 2 cups (500 mL) chicken or fish stock 1 cup (250 mL)cubed white or redskinned potatoes Pinch dried thyme 6 large East Coast scallops, each halved 7 ounces (200 g) wild salmon, cut into cubes 3/4 cup (175 mL)salad shrimp (1/4 pound/125 g) 1/4 cup (50 mL)frozen peas 2 to 3 tablespoons (30 to 45 mL)whip-ping or light cream Salt and white pepper to taste Melt the butter in a medium-sized saucepan over medium heat.Add the onion, carrot, celery and garlic and cook 3 to 4 minutes.Mix in the flour until well-combined.Slowly whisk in the wine.When the mixture starts to simmer and thicken, slowly mix in the stock.Add the potatoes and thyme.Return to a simmer; simmer until the vegetables are just tender, about 10 minutes.Mix in the seafood and peas and simmer until the salmon and scallops are just cooked through.Mix in the cream.Season with salt and white pepper and serve.—Can West News Service The weather is frightful?The stew is delightful RECORD January 20 - January 26, 2006 page 3 Students express feelings at local gallery La Ruche teens exhibit works at Centre d ’artistes Creatio By Vanessa Lee Record Correspondent It’s the art work of 26 Magog high school students at its best, and it’s on display at Le Centre d’artistes Creatio until Feb.5.Sentiments features the work of La Ruche students Étienne Audet, Gabriel Breton, Jennifer Bullard, Nina Bureau-Oxton, Amélie Chainey-Desautels, Kassan-dra Corriveau, Audrey Côté, Geneviève Désilets, Karl Desmarais, Élyse Gagnon, Sarah Gendreau Simoneau, Kacendra Girard, Emmanuelle Harvey, Fanny Houle, Nadia Jacques, Noémie Labranche-Mon-tion, Alex Langlois, Véronique I-avoie, Jessica Lévesque, Claudine MacLure, Mylène Moliner Roy, Léa Oddo, Sabrina Pomer-leau, Joanie Provençal, Joany Roy, Trisha Roy, and Gabrielle Therrien.“It’s the first time we are displaying our work in a solo show outside of the school,” said La Ruche art teacher Guy-laine Thibodeau.“The theme was decided on collectively with students because we wanted a theme that would allow them to express themselves, and not feel limited.1 invite the community to come appreciate the talent and hard work of these students.” All of the young artists are in secondary 2 to 5, and are part of the art and sports program.They attend seven periods of specialized art classes a week, which totals more than eight hours.“The show showcases the young artists’ creations in four different mediums: Watercolour, acrylic, latex, and pencil crayon.” Bullard, a secondary 5 student, has three pieces in the show: Beauty, an acrylic painting; point in the opener do you see the four buddies sit down for brunch at a trendy Manhattan eatery and sing the praises of their new Bruno Magli shoes, bemoan being over the age of 30 or share advice on the subtle ways to encourage oral sex.These guys are guys, plain and simple.They operate strictly on the surface.So much so that three of them have no idea their ex-pro athlete best pal is gay.Adapted from Kyle Smith's novel, the story focuses on Tom Farrell, a kindly, idealistic record label A&R guy who gets fired from his job at Goliath Records (that name's a hint at what this company's mission statement reads like) after he gives a speech about doing it for the love of music, not the love of bigger profits.Played by the very likeable Lennoxville native Tom Cavanagh (Ed), Tom finds himself not only out of work but out of another relationship.“What do they say?When you love someone set them free?” says Tom’s girlfriend.“Did she just quote Sting while breaking up with me?” says Tom, who happen any time soon, if Sutherland has anything to do with it.While his castmates Mary Lynn Ra-jskub, Carlos Bernard and Gregory Itzin had interviewers in stitches at the winter meeting of the Television Critics Association on Tuesday, Sutherland was pensive and thoughtful, allowing himself the occasional wry remark as he talked seriously about the five-year evolution of his careerdefining role.“I think that this series, like Law & Order, is about the idea,” Sutherland said.“The idea is fantastic.We all, as actors, have talked about it.The real star of the show is the real-time format.I believe that very strongly.“(Leaving) is not something I’m in a hurry to do, however.I think the show is working.I think the character is growing on many levels.I think one thing we have all discovered is that every season has had an impact on the character, and the character has grown.And the character has been allowed to carry with him what he has suffered the year before.” That character — counter-terrorism agent Jack Bauer, constantly on the run and hardly ever in need of a sandwich or a bathroom break — is both physically and emotionally draining, but Sutherland himself insists he is infused with renewed energy.“I’m committed to the show as long as we’re moving it forward.And I’m committed to the show as long as an audience will allow me to do it.And I think they will be very clear in the end, as will (the reviewers), when it is no longer effective.“This is really from an actor’s perspective but the audience that we have, and the audience that we had from the beginning, understands that, every time they tune in to watch, they’re going to have to take quite a leap of faith with us — and they have done that.“This is one of those rare instances when a show hit at the right time in the right place with the right audience.Whether that audience would have taken that leap of faith 10 years ago, or 10 years from now, I don’t know.But at the moment, they are certainly prepared be with us, and we rely on that.“We’ve been very fortunate to have an audience that is willing to stay with us when we try to do something new.” Speaking with Sutherland for only a few minutes is like being invited inside the inner sanctum of Inside the Actors Studio, only without the grating host.“One of the things I have learned more on this show than at any other time in my career is that when you go from film to film, you can make very broad choices from one show to another.This has taught me about working with minutiae, making 15 small changes over the course of one season to the next.The unique aspect for me this year, and the challenge this year, is that Jack does not work for anyone — he does not work for the Defence Department, he does not work for CTU.“Everything that he is doing this year is an emotional response to a series of events.This is not about duty.This is not about the sense of responsibility.And how to inject that change into this character and separate this character, on a very small level, from the year before, is an incredible challenge.It is something I’m enjoying immensely, however.” A future feature film is not out of the question.The problem, Sutherland says, is that every time 24’s writers come up with a story idea that will sustain a full-length feature film, “we need it for episode 18.” Also, it’s tough to come up with a story idea that will keep the audience inside the theatre for a full day.As for the seeming lack of levity in 24, Sutherland scoffs at the very suggestion.“We think Chloe is very funny,” he a mean blues guitar but when he performs at the Vieux Clocher in Magog this weekend, the audience will get a different take on a traditional style.“It’s very positive blues,” said the soft-spoken Rood in an interview.“It’s not the traditional blues with all those never-ending solos.It has a lot more flavour to it.” While his guitar swells with blues rhythms.Rood’s musical interest was sparked more by the British Invasion of the 1960s and less by the old bluesmen from the Deep South.Rood’s British influenced blues radiates on his first full-length album, You Shine like the Sun.“I was brought up in a lot of the music of The Beatles and the British thing.The album is really based on peace and love,” he said, adding he was part of an ensemble performing the long running British Invasion show at the Montreal Casino in 2001.Rood’s love of music stirred in him when he was a child growing up in Boucherville on the south shore of Montreal.“My first goal was to be the best guitarist in the world,” said Rood.“When you’re 10 you say you want to be the best guitarist in the world, the Jimi Hendrix, the Jeff Beck, and all these people I really admire as guitarists.” Thirty-seven years after he first picked up the guitar, Rood said he never expected to become a singer or a songwriter.He spent many years working as a back-up musician, notably with artists such as Aldo Nova and Nanette Workman.On You Shine, Rood wrote the songs, plays several instruments, and sings lead.He also added a producer credit to his credentials.Though Rood plays his own style of not so moody blues, it isn’t to say he hasn’t weathered his share of hard times.This album was released under the cloud of personal tragedy.“I wrote the album while my mom was dying of cancer,” he said, noting today marks one year since his mother, Gisèle Babin, passed away.“Emotionally it was really big.I was accompanying my mom, and saying ‘don’t worry about it, you won’t suffer anymore.They’re out there waiting for you.’ I wanted her to feel good about it, not to be scared.’ “It was a big journey.” Rood said his album was all but finished when his mother died.She had a chance to hear it.Her dying wish was for this album to be the break her son needed to make in the music business.“I told her that I would go around the world playing it.” The final track on the album — ‘Home’ — was written for her.‘Home’, which appeared on a compilation album benefiting the Canadian Cancer Society, was the first song to be released off You Shine.It will be released in English and French in Canada, and in English and Spanish in the United States.Putting out this album is the end of a long road for Rood.Previously, he attempted to release a French album, but the project died when the production company went bankrupt.Then he struck out on his own.The day of his mother’s funeral, Rood met Eric Pominville.Rood was passing out lyrics to the song he wrote for his mother.That caught Pominville’s attention.The two went on to launch their own production company — Shine Productions.“I think it’s marvellous.We’re making decisions, and we’re doing things the way we want to do them,” said Rood.See Blues, Page 6 no biker war.Feature Gangs: Cont'd from Page 1 “I told Charlie (editor Charles Bury) I was not covering the case.He told me ‘Guess what.You’re it.“I had no idea at the time it was a major crime story for all of Quebec, not just Sherbrooke." Cherry freelanced that story and others to The Gazette and eventually landed a part-time job working weekends as a cub cop reporter.A few months later, he left The Record for a full-time job at the Montreal daily during which time he was a general assignment reporter and worked a stint in Quebec City covering the National Assembly.Shortly after he returned from Quebec City, he was offered a crime reporter job.“For some reason, 1 didn’t think about it.I just took it.It seemed natural for me.” Cherry said crime stories — particularly organized crime — interested him the most.“The fact that four of five people can get together in a room and decide they are going to break the law has always been a mystery to me.” During his first few years on the crime beat, Cherry was frequently called upon to cover the casualties of the biker war.He said that when he went to the scene of a murder one day, he asked The Gazette’s photographer to drive around and see if he could spot a mini-van on fire.A few blocks further, he found one.“That’s how predictable it has become,” Cherry said, noting the signature for a Hells’ hit was a drive-by shooting in a stolen vehicle that was later torched.Cherry said the book’s publisher contacted him out of the blue and asked if he was interested in writing a book with highlights from the first biker trial that was aborted in 2002.Cherry convinced the publisher an account of upcoming cases where more than a dozens Nomads and Rockers were charged with more than a dozen murders and other crimes including conspiracy, drug trafficking and gangsterism would be more interesting.While Cherry did not cover all the hearings, he spent hours pouring over digital tapes and mountains of evidence.While most of the biker cases ended in guilty pleas, Béliveau was the first gangsterism trial to go to verdicts.Cherry said that is important because a jury of ordinary Canadians determined the Hells were a criminal gang.As he did research for his book, one thing that kept coming up was the independence of the Sherbrooke Chapter of the Hells.“Police often refer to it as one of the most powerful and influential Chapters in Canada,” Cherry said, noting he could see Sherbrooke’s fingerprints on what was happening with Hells Angels gangs across Canada, including Vancouver where they were growing more and more powerful.While the megatrials had little effect on the Sherbrooke Chapter, Sherbrooke played an “important role in a strange way,” Cherry said.He notes the purge of the Laval Chapter in Lennoxville in 1985, commonly referred to as *'fill By Jamie Portman Albert Brooks is the sort of comedian who can even find humor in the fact that this morning he suffered a near concussion during a TV interview.So why should we surprised that, as his post 9/11 comic riff, he’s giving us a new movie called Looking For Comedy in The Muslim World?The 58-year-old entertainer — whose birth name is Albert Einstein, and isn’t that grounds for humour in itself?— has delayed his meeting with print reporters for more than an hour in order to make an emergency visit to his doctor.It’s a sensible move, considering that a light stand crowned him during an earlier session with a TV reporter.“Are people here?” he asks plaintively, peering at the assembled journalists.“I am dilated right now.I don’t have my glasses on, but I know people are here.“Let me count!” he insists as reporters start laughing.He broods comically over the cruel workings of fate.“I’ve been all the way around the world and nothing happened.How did it happen in this (expletive) hotel?This is life in a nutshell.I swear to God — this speaks volumes of the world we live in.India, Pakistan, Dubai — no problems.” Brooks also hopes audiences will be laughing when Looking For Comedy in The Muslim World opens Jan.20.He himself is still laughing over the fact that Sony, the original distributor, freaked out over the title and decided to dump the film.After he finished shooting.Brooks had a meeting with Sony officials and showed them a rough cut of the opening scene.Brooks sensed a problem when one of the Sony brass commented: "Great title — 1 guess we’re going to add a lot of phones to answer the calls we’re going to get on this one.” His fears proved justified five months later when Sony demanded that the title be changed.When Brooks and his colleagues balked, Sony dumped the film and cancelled its scheduled October.2005, release.The film was picked up immediately by Warner Independent, which had no problem with the title.“I was so mad that they had wasted our time,” Brooks says now.But there’s at least one positive note to Sony’s involvement: he can make fun of the trail- er that studio had prepared.“Not only did they not want the title, but they didn’t want to tell anyone what the movie was about.It looked like ‘Bill And Ted Go To India.’ I really couldn’t figure it out.” Missing from the Sony trailer was the scene in which he is summonsed to Washington and asked by the government to help in a new diplomatic effort — by spending a month in India and Pakistan and writing a 500-page report about what makes the 300 million Muslims in the region laugh.Brooks — a quirky entertainer who writes, directs and stars in his own movies — keeps being told that he’s en- tering a minefield with a project like this.For example, there’s a scene in this fish-out-of-water story which sees Brooks, playing himself, visiting the controversial Arab news channel, Al-Jazeera.He thinks he’s going to get the low-down on what makes Muslims laugh: instead he’s offered a role in a new sitcom called That Darn Jew about an American Jewish man who moves into a Muslim neighbourhood.But Brooks isn’t worried about controversy — especially after previewing the film to an appreciative Arab audience at the Dubai International Film Festival.“The very fact that there are no movies like this is entering a minefield,” he comments.But he notes that until recently Hollywood has been shying away from post-9/11 subject matter.“There have certainly not been any comedies and very few dramas — just the few that are coming up now which I call the ‘terrorists with a heart of gold’ dramas (with) suicide bombers changing their minds.The bulk of the movie takes place in India, which is essentially a Hindu nation, and there’s a key sequence in which Brooks does a stand-up routine before a New Delhi audience and flops.Responding to questions about his choice of India as his setting, Brooks drolly notes that there would have been big problems trying to film in predominantly Muslim countries like Saudi Arabia, Pakistan, Iran or Syria.“I’m not getting into Iran, I’m not getting into Syria.You can get the Fox News crew into Saudi Arabia, but you can’t get a hundred Americans led by a Jewish director.—Can West News Service CLICHÉ RÉPÉTÉ A ÉCLAIRAGE DIFFÉRENT EN RAISON DU TEXTE IMPRIMÉ SUR FOND GRIS OU DE COULEUR
