fine dining is a Townships tradition Hovey Manor the Taj of the Townships PERRY BEATON/SPECIAL : Ù \ ¦ -¦.m mm Everything at Hovey Manor, the country house hotel located on the shores of Lake Massawippi just outside the village of North Hatley, seems to be a work of art.By Sunil Mahtani Special to The Record When I was about 12 years old, my family planned a trip to India and one of our stops was to be the Taj Mahal.1 told my parents I remembered visiting this wonder of the world when I was younger.They said that was impossible, they had never taken me there before.I was dumbfounded.The image of the Taj Mahal was so indelibly etched in my mind I was certain I had visited it before.I could picture the majestic white structure at the end of a long pathway featuring a pond quite clearly in my mind’s eye.One of the reasons for this was that my parents had visited the Taj Mahal, took home movies and played them for us over the years, etching a striking image in my mind that I could conjure up easily.When I actually visited the Taj Mahal in person, I felt a tremendous sense of déjà vu.This was the same feeling I had the first time 1 visited Hovey Manor, the country house hotel on the shores of Lake Massawippi just outside the village of North Hatley.The turn-of-the-century estate with a large verandah, white pillars and tastefully appointed Colonial-style rooms has been photographed and written about in newspapers and magazines so often that upon seeing it with your own eyes, you feel a sense of instant recognition.Add to that the heavy aura of history that surrounds the estate, built in 1900 by Henry Atkinson, an Atlanta businessman who used as his inspiration George Washington’s home at Mount Vernon, Virginia, and the atmosphere is simply intoxicating.For the first half of the century, it was known as “The Birches” since it was built in a birch grove.In 1950, Montrealer Robert Brown purchased the property, converting it into a country inn and renaming it “Hovey Manor.” Almost three decades later, Stephen and Kathryn Stafford purchased the estate and have retained its grandeur while upgrading its facilities.One of the reasons Hovey Manor receives so much attention is that it is one of the few dining establishments in Quebec to merit the distinction “Table de Prestige.” It constantly receives local, national and international awards for its haute cuisine.Although I have visited Hovey Manor in the past, I had never enjoyed the pleasure of dining there.Thus, when friends from Toronto visited recently, we planned a special lunch for four.The dining room at the Hovey is a step back in time.It has a Colonial look with a Williamsburg-style chandelier (elaborate Hovey Manor (Lake Massawippi, North Hatley) Hours: Open seven days a week for lunch and dinner.Reservations: Required.Nonsmoking: Yes Licensed: Yes Credit and debit cards accepted.Tel: (819) 842-2421 or 1-800661-2421.Website: www.hoveymanor.com.decorations featuring tiny lamps with shades), knotty pine walls, an inglenook fireplace featuring an enclave with two small benches for a romantic rendezvous and antiques scattered throughout.An annex with floor to ceiling windows looking out onto the lake is bright and airy, featuring William Morris wallpaper and Bartlett prints on the walls.Happily, the entire establishment is non-smoking! Everything here seems to be a work of art.Even the china, which is Noritake, made in Sri Lanka: the “Royal Hunt” pattern features rabbit, deer and pheasant on burgundy and deep green.The wine cellar boasts 900 selections and the menu can send your head spinning before you’ve tasted a single drop.We knew we wanted to introduce our friends to a Quebec wine, and a Dietrich Jooss from Iberville was recommended.The Cuvée Spéciale 2000 won an award at the International Eastern Wine Competition.This was a terrific choice, a robust wine with a floral bouquet that seemed to herald in spring.A basket of warm homemade whole wheat and white buns was served as we all perused the selective à la carte lunch menu.It was such a treat dining with so many others.We felt we could order almost everything, so we each chose one appetizer and one main dish.The chef does a wonderfully inventive job of creating fusion cuisine at the Hovey, mixing the flavours of different cultures together to create unique dishes with personalities all their own, all while utilizing regional products.Our four starters were deep-fried dumplings of smoked duck and shitake mushrooms ($8), spicy black bean soup ($5.50), roulade of smoked salmon with Hatley goat cheese ($8) and Mediterranean vegetables in puff pastry ($6).The dumplings were crispy and tasty, surprisingly similar to the Indian samosas, but stuffed with a melange of smoked duck and shitake mushrooms and served with watercress and a tart mango purée.All the dishes were also visual treats, utilizing various-shaped plates to create the maximum effect.The black bean soup was rich, hearty and well-spiced, the beans perfectly cooked.Olive oil toast rounds floated on top.The roulade was a disappointment.It was basically smoked salmon rolled with a creamy cheese and herb mixture wrapped in leek, but was nothing special, lacking a distinctive flavour.The toast that was served with it was slightly burnt as well.The Mediterranean vegetables were fine: chopped tomatoes, purple onion and green pepper mixed with goafs cheese nestled in puff pastry and served with a tapenade of black and green olives.Our main courses were prosciutto ravioli with a Brie-basil sauce ($11.50), Atlantic salmon with wildflower honey and ginger ($14), fbccacia of chicken and avocado ($12) and Thai beef curry crepes ($13).The ravioli was a mouth-watering gourmet dish featuring giant, triangularshaped ravioli stuffed with Italian ham and artichokes covered in a creamy white Brie and basil sauce with puréed plum tomatoes perched on top.Now I dream of ravioli! The salmon was grilled to a perfect rosé medium, with a delicate sauce, and served with vegetarian sushi (rolled rice filled with slivered carrots).Delicious.The foccacia, which our server called a “5-Star Sandwich” was indeed that, filled with chicken and avocado and served with a tempura of hearts of palm.The Thai curry crepes were also exceptional, featuring sautéed beef and mushrooms with a smoked red pepper vinaigrette.Sweets were simple but effective.The sorbet of the day ($4.50) was a rainbow sherbert served in a half moon slice with each layer containing its own distinctive flavour - kiwi, tropical fruits, pear, mango, little fruit and raspberry.Absolutely refreshing and delicious, served with two half moons of moist shortbread cookies.The fruit crumble ($4.75) was also a hit, served warm with vanilla ice-cream.Fine coffee and tea ended our meal off just right.Tea-lovers will enjoy their lengthy tea menu, with the leaves served in a Bodem-style pot.The lunch experience for four, not including wine or gratuity, was $124 (approximately $62 for two people).This is not cheap, but then, how often do you get to visit the Taj? endowment fund By Morri Mostow Record Correspondent On May 4, Townshippers will be treated to the kind of show they rarely see — a full-length dance revue.With a cast of more than 40, Leg-Work stars Patricia St.Onge and her doggers, along with other talented Township dancers and troupes.The show mixes such dance and musical styles as pop, rap, country, Irish jigs and Broadway show tunes.The Moran Irish Dancers, from Rich- mond, will perform traditional Irish step dancing, while members of Sunshine Theatre and Knowlton Players will present musical theatre numbers choreographed by Joanne Watson and Darken Bell.Watson will also do a modern, interpretive dance of her own.Patricia St.Onge, her sister, Melissa, and cousin, Steve Woodard — both in the show — have been clogging for the past 11 years.They trained under the expert tutelage of Waterville’s James Nay-lor and danced with his Rainbow Country Cloggers.Patricia and Steve are reigning U.S.regional champions, having won the North East Duet Clogging Championships three years in a row (2000, 2001 & 2002).Producer Gerry Wood recently dis- covered Mansonville’s Patricia St.Onge clogging her heart out at a local festival.“I couldn’t believe that such amazing talent was dancing on a hay wagon!” said Wood.“Patricia belongs under klieg lights in a real theatre.” So, the retired Knowlton publican decided to produce a dance extravaganza showcasing Patricia and other local dancers.To ensure a professional-level production, Wood teamed up with local theatre veterans Kate Wisdom and Ralph Steiner.The result is “LegWork”, a full-length dance spectacular, in support of the Theatre Lac Brome Endowment Fund.Nineteen-year-old Patricia chose 12 of the best Rainbow Country Cloggers to join her in eight numbers, six of which she choreographed.“It’s been a pretty big challenge,” she said, “since we’ve only had a few short months to pull it all together.” Other cast members include Meghan Allen, Bill Jarand, Sheila McManus, Juli Senier, Aldyne Kerrigan and Katherine Weldon.The show promises a lively variety of youthful energy, fancy footwork and high-steppin’ fun.LegWork will perform two shows only: a May 4 matinee at 2 promote his latest album, Unforgettable Songs, with a performance at Le Vieux Clocher in Sherbrooke.Accompanied by nine musicians on this “mini-tour”, Walsh has also been keeping himself despite having shows at the New York’s Winter Garden as well as dates in Europe cancelled following September’s tragedy in New York.The show he taped last spring for CBC (French network) at Le Grand Theatre Orchestra provides the background for Bob Walsh’s interpretation of old jazz classics.“I am anxious to watch it myself,” admitted Walsh, who is also expecting to travel to Europe early this summer before he hits the road for the summer festivals circuit.“I was so nervous on the taping night.I was kind of on the edge because you don’t get much practice time.It will be as much as a surprise for me as for people watching it.” Walsh began singing when he was four years old with his father.Sitting at the kitchen table, Walsh explains how his father and him spent countless hours singing along with the radio.In 1985 he moved to Montreal where there’s more work for musicians.Walsh has often been called the best blues vocalist in Quebec.He started out playing rock 'n roll, country and even Beatles selection — basically whatever people wanted to hear.But it didn’t take long for Blues to become his trademark.“I didn’t pick Blues, it picked me,” admitted Walsh.“This is the type of music that gets to my soul.Of course there’s a lot of pain, sorrow and sadness expressed when you sing the blues.“Sometimes though, it’s about disturbing situations which are exposed by songwriters in a light way.Just take a look at country music, it’s like white man blues.” Although, this friendly giant has penned a few songs, he considers himself an interpreter.“Interpretation for me, means taking someone’s song and making it my own in the way I relate to it, regardless of what the writer had in mind when he wrote it’ he explained,” he said.“It is like a painting; everyone relates to it or sees public in 2002 and 2003.Twenty of the 86 arts groups are firsttime grant recipients.The 86 groups to receive funding in 2002 represent a broad range of artistic disciplines including visual arts, music, literature, opera, dance, theatre, film and multi-media.Among them are Canton d’Orford’s Le Centre d’Arts Orford, for theatre; Quebec’s l’Oeil de Poisson, for visual arts and Rimouski's Festi Jazz Rimous-ki, for music.“The overwhelming diversity of this year’s proposals are a true indicator of the outstanding contribution Quebec organizations are making to the arts community within the Sounds to soothe the savage beast Amadeus Ensemble music to perform Sunday By Jutta Riegel Special to The Record The Ensemble Vocal Amadeus de l’Estrie presents a concert of sacred music on Sunday, April 14, 4 p.m.at St.Jean-Baptiste Church on rue Conseil in Sherbrooke.Four soloists and an orchestra will accompany the choir.The first part of this concert consists of three excerpts from the Vesperae solennes de confessore by Mozart and two cantatas by Anton Bruckner, Libera me in f-minor and the Ave Maria.The second part is truly dedicated to the patron of the choir with the Requiem Mass by Wolfgang Amadeus Mozart.The Requiem was Mozart’s last work, written in 1791 and left incomplete at his death.The strange circumstances of its composition have given it a legendary aura.The piece was commissioned by Count Walsegg as a requiem for his wife and was completed by Franz Xavier Suessmayer at the request of Mozart’s widow.The Suessmayer version has been considered somewhat controversial by musicologists and critics and alternate versions are often performed.The version presented at this concert is that of André Martin, which stays very close to the traditional version, but eliminates some of its major inconsistencies.The conductor for this concert will be André Martin who has been musical director of the choir since its foundation in 1991.The soloists are Sylvie Malenfant, soprano, Chantal Denis, mezzo-soprano, Philippe Gagné, tenor, who participated at the choir’s recent Rachmaninov performance and Robert Huard, bass, who sang many concerts with the choir theatre to communicate cares D Youville: Cont’d from Page 1 “Music carries good energy and communicates something special,” said Tremblay, adding that it has played an integral part in all her productions.Many of the show’s players work in the D’Youville wing, whose beds are by no means restricted to the elderly.Starting from as young as 18, the residents are all permanently bed-ridden, paralyzed from sporting or motor accidents or debilitating illnesses.“They’re there for the rest of their life — that’s their address,” summarized Tremblay.“It’s sad, but that’s the way it is.We have to show these people we’re there for them because they don’t want to die.” Tremblay has chosen theatre as her forum for communicating that care.Her involvement on stage began with a dream of singing and dancing in a musical.She took her first step toward that dream when, in 1993, she was a line prompter in a Bishop’s production of Les Belles Soeurs.Tremblay said she enjoyed the experience so much that she began seeking other outlets for her growing interest.At the same time she knew a resident of the D’Youville wing, and also knew the wing could always use financial help.But beyond her dreams and the one BU production, Tremblay had little theatre experience.“I have no theatre training, no university baggage,” she said cheerfully.“I use my life experience and that of others.” Undeterred by the D’Youville wing’s lack of financial backing for her theatre proposal, Tremblay made use of the training she did have — in accounting — to scare up some corporate sponsors.Beyond that, she knew she could rely on a certain take from tickets and beer sales at the show’s intermission.In 1994, the year she ran her first production, proceeds totaled $3,500, which paid for one new bed with remote control.So much effort for one bed might seem incommensurate, but considering that it will act as the main living space for one resident puts the achievement in perspective.After the initial show’s success, the hospital was more than pleased to have Tremblay lend her considerable and varied talents to their cause again.The next year, while looking for actors for her show, she happened upon Gaétan Demers.With 25 years’ experience in drama for radio, tele- vision and local theatre, Demers was the perfect complement to Tremblay’s inexperienced inspiration.He and assistant lorraine Dubuc have since directed Tremblay’s last five shows.But after six shows, the annual project has remained unquestionably Tremblay’s baby.As producer, she drums up sponsors and financing, prepares posters, programs and tickets, and handles media relations for a show she also, incidentally, writes and performs in.But the middle-aged dynamo, who blows off some of her seemingly boundless energy in karate and step aerobics classes, takes the pressure of the production’s responsibilities in her stride.“Sometimes there’s a certain fatigue, which is normal,” she said.“But to get people interested in the The plot of the film is rooted in the infamous Leopold-Loeb murder case of the 1920s which saw two privileged young males commit murder for the sheer thrill of it.The crime inspired both novels and stage plays, as well as two widely admired films - Compulsion and Alfred Hitchcock’s Rope.Bullock says the time is ripe to examine such subject matter again, given the proliferation of teenage killings.“Lately, it seems like there’s been an influx of these events.It’s something that needs to be addressed now because we need to look at our society, we need to look at our home life, and ask questions.What is it that’s making young people so unhappy, so angry and so capable of doing things like this?Unless you address this, it’s not going to be solved.” Last year, because of the success of Miss Congeniality, industry polling concluded that Bullock was Hollywood’s second most bankable female star.But she says it all has to be taken with a grain of salt.“It will change next year and I’ll be back down at No.67,” she giggles.“You know what this means?It means that I had a good year and made the studio some money, and now I may choose some projects for next year that make no money." For those who wish to experience dinner-theatre, dinner will be served from 5:30 to 7:00 p.m at the school.Tickets: $7.Info 819-826-3702.Red-Headed Stranger gets better with time One of the greatest songwriters of his time, Willie Nelson’s music seems to go better with time — case in point his latest album entitled Tire Great Divide.Often referred to as the ‘Red-Headed Stranger’, Nelson, who has been married four times and will turn 69 this month, isn’t showing any signs of letting up on his recent release.The Great Divide is a savvy, eclectic album, featuring a collection of his signature stylish work and always slick production.The album is highlighted by several big name artists, including Sheryl Crow, Rob Thomas of Matchbox 20, Bonnie Raitt and country superstar Lee Ann Womack, whom accompany Nelson on a mix of singles.As usual, Nelson is constantly trying to innovate with his music.Working in the past with top notch producers like Chet Atkins, Jerry Wexler, Daniel Lanois, Don Was and Chips Moman, he joins forces with producer Matt Serletic, the man behind Santana this time around.The Great Divide starts off strong as Nelson and jazz guitarist Jackie King team up to write and perform the title track.The singer/songwriter also revives Mickey Newbury’s vintage pop number, T Just Dropped In’, and goes so far as to team up with rock sensation Kid Rock in the single ‘Last Stand In Open Country’.The first single released from The Great Divide, however, is the best.Entitled ‘Medocino County Line’, Nelson performs a duet with Womack, who was voted CMA Female Vocalist of the Year.I can’t think of a better match than those two to sing that song.Other notable singles on the album is a cover of Cyndi Lauper’s haunting ‘Time After Time’, which is convincing and commanding as Nelson gives it a new life.There’s also Leslie Satcher’s ‘You Remain’, which was originally penned as a tribute to Nelson.The selection goes on to include ‘Maria (Shut Up And Kiss Me)’ an infectious num- COUNTRY Connection Jessie Aulis ber with horns, harmonica, pedal steel and a strong Brazilian feel.Heavily produced, The Great Divide is what you call a career album, although it’s not the only one in Nelson’s case.From the opening number to the last single, there’s only great songs on this disk Born in Abbott, Tex, the longhaired singer has come a long way since his first picnic performance in 1937 when he was four years old.The former DJ _______ worked hard before he had his professional fortunes turn.Actually, it didn’t happen until he joined forces with Waylon Jennings, Tompall Glaser and Jessie Colter to record an album that would spawn a legion of successful releases for Nelson.Although known as singer/songwriter, Nelson has also done well on the big screen, He’s stared in films like Honeysuckle Rose, Where The Hell’s That Gold with Delta Burke and Stagecoach.But Nelson has went through some rough times too.He has divorced three times, had troubles with the I.RS.— to the order of $16.7 million — and was faced with the devastating suicide of his eldest son Billy in 1991.Despite everything however, the first thing that came to my mind when I met Nelson at the Champlain Valley Fair (where he gave a conference on American Farmers before performing) was how strongly he exuded a kind of dignity and grace with what ever he was asked.Nelson is one of country’s most enduring stars, and his list of hits is endless.If you like Nelson, you have to buy this new album.If you don’t know him, however, this is the perfect opportunity to discover one of America’s greatest artist.Note: Don’t forget the giant jam session for Multiple Sclerosis Branch 2000 on Saturday, April 13 starting at 3 p.m.at Army, Navy 8i Air force on St-Francis Street in Lennoxville.There will be many bands, door prizes and fun and this is all for a good cause.Admission $5.
