TALK OF THE Townships .—.«.¦¦ THE—.¦¦¦.page 2 July 19-July 25, 2002 Record Pilsen perfects pub plates By Sunil Mahtani Special to the Record The Pilsen Restaurant & Pub is housed in an attractive black-and-white three-story building overlooking Lake Massawippi from the front and Massawippi River on the side.A stream of boats float by as patrons happily consume their micro-brewed beers while munching on calamari on the terrace or enjoy a selection of three-course table d’hôte in the dining room of this North Hatley establishment.Lining the landscape are quaint homes painted in green and blue and pink and yellow. The scene seems to be straight out of one of the folk art paintings found in the unique naif art gallery close by.All right, the setting is no surprise.North Hatley is one of the pearls of the Townships. However, what is a glorious surprise is the cuisine.General manager Marc Peloquin, who took over the running of the restaurant from his father Gilles a year-and-a-half ago, and chef Steve Beauchemin, have designed a menu that surpasses most pub-style eateries. They’ve creatively incorporated international flavours, particularly of Southeast Asia, into their cuisine to create a unique bistro experience in the Townships. The dinner menu, in particular, is a revelation.A series of table d’hôte are offered for a set price of $25.On the evening my companion and I visited, the appetizers were a choice of Bruschetta, House Salad, Thai Mussels or Chinese Dumplings. The main courses were Bouillabaisse, a combination of fish and seafood with tomatoes, served with vegetables and wild rice; Tandoori Chicken, a classic Indian recipe; Pork Chops au Calvados, grilled with an apple demi-glacé and mashed sweet potatoes with green onions; and Salmon Filet in Rice Paper. For dessert - Mud Pie, Apple Pie, New York Cheesecake or Crème Brûlée.All the main dishes are also offered à la carte for between $16 and $18.The appetizers were a no-brainer.We had the Thai Mussels and Chinese Dumplings. The mussels were a heaping bowl full of juicy steamed mussels in a subtle, tasty broth of yellow curry, green onion, lemongrass and coriander. There were also lots of portobello mushrooms and thyme spears.A delicious, attractively presented dish with a nice variation on the usual wine broth served with mussels.A generous portion of the dumplings was also served.Six beef and pork dumplings were served with both a peanut sauce and a red chili sauce. This is one of the Pilsen’s most popular appetizers and one of the only ones they don’t actually make on the premises. The dumplings hail from Montreal’s China- |M||i|i|fl|gp pSi V A PHOTOS BY PERRY BEATON/SPECIAL General manager Marc Peloquin and chef Steve Beauchemin, have designed a menu that surpasses most pub-style eateries.Pilsen Restaurant & Pub (55 Principale, North Hatley) Open; Seven days a week from 11:30 a.m.for lunch and dinner. An à la carte Sunday brunch begins at 11 a.m.Reservations: Preferred.Smoking: Section provided, licensed: Credit and debit cards.Tel: 819-842-2971.Web site: www.pilsen.ca.town and it’s easy to get hooked on them.We were sold with the appetizers.Little did we know the real gastronomical treats were yet to come. For fun, I thought I’d try the dish from my native India, to see what they came up with. The Tandoori Chicken was a work of art.The tender chicken breast was a fiery red colour due to its marinade of Indian spices and yogurt, served with a homemade mango chutney featuring whole mango slices, assorted vegetables and basmati rice.Attractively arranged, it was ephemeral art - 20 minutes later, it was no longer there. The salmon was also prepared with gusto. The dish was a salmon filet in a bold Thai curry sauce served in rice paper, a thin casing that retains the flavour of the salmon.Salmon is not usually served with such a brash sauce, but this was a perfect marriage of flavours. It was also served with vegetables and basmati rice. After such main dishes, if dessert had been anything less than exquisite, we would have been disappointed. We weren’t.The Crème Brûlée was perfectly charred on top and was composed of a soft, creamy maple-flavoured custard, a touch runny but very good nonetheless. The Mud Pie was cappuccino icecream smothered in chocolate sauce and topped with whipped cream. After consuming these sinful treats, I felt as though I had committed a crime! This luscious dinner for two, not including alcohol or gratuity, was $58.The less adventurous shouldn’t underestimate the versatility of the chef and his staff, however. They also do very good traditional pub fare with more modest prices, including hearty burgers, chicken wings, sausages with house sauerkraut and grilled vegetable foccaccia sandwiches. The service provided by the wait staff, who were nicely attired in wine-coloured shirts, black pants and long black aprons, was also excellent.Water glasses were always full and the bread basket was never empty. The staff were there when we wanted them, yet were never intrusive. Now in their 15th year, the Peloquin family has created quite a gastronomical dining experience at the Pilsen. It stands tall as one of the finest pubs in the Townships.Don’t miss out. national fan fare, it is ironic that the group has now produced their best album to date, and perhaps the most well-rounded rock disk in recent years.Band members have clearly done their collective homework with Gravity as the authenticity and ardour of the album’s material speaks to both past and present. The solid guitar rifts, excellent acoustic guitar work and rough lyrics have not changed, but the disk features a more through-and-through rock melody characteristic of a Moist or Tragically Hip.Made up of singer Raine Maida, bassist Duncan Coutts, drummer Jeremy Taggart and guitarist Steve Mazur, Our Lady Peace’s latest is very different from their alt/rock beginnings.Yet as listeners may or may not agree, that is not a bad thing.-J.Z.Breaking Point Coming of Age (Epic/Sony hard rock number. Also, ‘One of a Kind’ is a quality, hard-line alt/rock single.Yet, the rest of Coming of Age is flat, sounding too much like many metal/rock bands already out there.Although many songs on the album are true life stories, the reality is that Breaking Point, made up of Brett Erickson, Justin Rimer, Jody Abbott and Greg Edmondson, is a one-star band in a five-star music TALK OF THE Townships " mi ¦THE—h i i ii -RECORD _ July 19-July 25, 2002 page 9 A world of adventure, comedy and drama awaits movies Newman hasn’t lost charm in twilight of career SOUTHAM Paul Newman stars as an Irish mobster opposite Tom Hanks in Road To Perdition.Don't expect his latest role to be the actor’s swan song, however, as Newman expects to continue a hectic schedule.By Jamie Portman Southam News ££ I’m getting half deaf,” Paul Newman confessed the other day, apologizing to a reporter for being unable to hear the question. Then, on being asked to identify his personal acting heroes, he started to reel off names — Marlon Brando, Lee J.Cobb — and then suddenly stopped because his memory was betraying him.“I really should not have mentioned them, because one forgets.I’d have to go through all my books and it would take me five days to figure that out_ There are just too many people I admire.” He sat on an elevated platform in a Ritz-Carlton hotel ballroom, thinking about other names he could cite, and finally came up with wife Joanne Woodward.“Joanne’s in there somewhere too.I’ve got to tell you.” Then, his dramatic timing still impeccable, he paused for a moment before finishing: “I would have been killed iff didn’t say that.” One of the most revolutionary and eerie aspects of the video and DVD phenomenon is that it’s now possible for an actor’s younger self to be always with us.We can see Butch Cassidy exercising his insolent charm on our TV screen, or still earlier a drunken and heartless Hud using his sexual charisma as the most lethal of weapons, or, going back even further, a scarcely articulate Rocky Graziano punching his way to ring fame in Somebody Up There Likes Me, Newman’s 1956 breakthrough film. The images of the past tend to intrude upon the present, as they did in Chicago when this man of 77 slowly mounted the platform, a plate of scrambled eggs in one hand, and inspected the battery of microphones on the table.“It looks as though somebody’s going to declare war!” The voice was softer, huskier, but the eyes peering out at the assembled reporters were still that unmistakeable Paul Newman blue.“Have I just been elected to public office?” Then, after a final inspection of the mikes, one final quip: “None of these things are loaded are they?” There was an old-fashioned courtly charm to the proceedings, leavened by these spontaneous bits of humour.“My wife told me to sit up straight,’’Newman confided and then proceeded to sit up straight. As for the secret of his 44-year-old marriage: “I don’t know what she puts in my food!” There was also a sense that in the twilight of a remarkable half-century career — as an award-winning actor, racing car driver, philanthropist (through his charity-raising line of Newman sauces and salad dressings) and prominent supporter of liberal causes — Newman was still having trouble growing old.He was asked whether his new period movie — Road To Perdition, in which he delivers a superb performance as an Irish mobster — constituted his acting swan song, and he responded with a sigh of resignation.“I keep trying to retire from everything, and discover that I have retired from absolutely nothing.I was going to get out of the racing business and I’m back in the racing business.I was going to let somebody else deal with the spaghetti sauce and I’m back with the spaghetti sauce.I just finished the first play I’ve done in 35 years (Our Town for Joanne Woodward’s prestigious West-port Summer Playhouse) which is like sticking a rifle in your mouth. So I don’t seem able to retire.” Film historian David Thomson, who admits to puzzlement over Newman’s appeal, once wrote that the actor struck him as having “an uneasy, self-regarding personality, as if handsomeness had left him guilty.” A harsh pronouncement, but one wonders whether Newman would disagree with it that much.In Chicago, a reporter told Newman he had an “icon” status and the old actor cut him short.“Who said I was an icon?My grandson does not think I’m an icon. He’s three years old and came through the door the other day and said: ’I am obsessed by the Yellow Submarine?”’ After the laughter subsided, Newman continued with the punch line: “What will he say when he’s six?” But what about this icon label?“I don’t think anything about that stuff. What you achieve on the screen has nothing to do with you .I don’t take much of it seriously.I really don’t and — uh — that’s all I have to say about it.” Actually he had more to say later when he reflected on his years with New York’s Actors Studio, recalling his “long and detailed formal education in the theatre at Yale and Kenyon” and concluding that Talmost everything” he learned about being an actor came later from the Actors Studio. Then came more self-revelation when he confessed unhappiness with his own work.“There’s not a performance I can look at comfortably with any sense of satisfaction until after the late Seventies.” He was quick to make a couple of things clear when asked whether he considered it his responsibility as a celebrity to help people through good works. And only now did a note of anger surface.“This is not a celebrity issue. This is a political issue. The concept that a person who has a lot holds his hand out to someone who has less or to someone who’s hurting — that’s simply a human trait that has nothing to do with celebrity, and I am confounded at the stinginess of some institutions and some people, and bewildered by it.“You can only put away so much stuff in the closet. In 1987, the salary of the average CEO against that of someone who was working in his factory was 70 times higher. Now it’s 410 times.Aristotle said the greatest government is the one that has the least number of people at each end, and that makes sense.” Then the windup: “So I don’t think there’s anything exceptional or noble in being philanthropic. It’s the other attitude that confuses me.” Ciné m 3 SHOWTIMES EFFECTIVE JULY
