Weekly Guide to Arts & Entertainment INSIDE Quebec music From Pag to Céline see Page 5 INSIDE Holiday CDs are out there now see Page 6 .J in the Eastern Townships THE RECORD.December 8 Dkcemrer 14.2006 Choir and strings play season favourites Les petits chanteurs de Granby team up with Cordes à vent for concerts in Sutton, Granby By Philip A.Godin Record Correspondent Knowlton Two of the Eastern Townships’ more recognized musical groups will combine their talents and present two classical Christmas concerts on Sunday, Dec.10 in Sutton, and on Sunday, Dec.17 in Granby.Les petits chanteurs de Granby, a 42-voice choir, will accompany the 30-member Cordes à vent string orchestra in a moving Christmas musical program drawn from their respective repertoires.Cordes à vent conductor Françoise Turcotte will lead a select group of the string ensemble’s members that have charmed classical music lovers since 1985.Isabelle Petit, the choir’s director since 1999, will lead the Petit Chanteurs' voices that have been captivating audiences internationally for the past 75 years.In more recent years the Petits chanteurs have performed in Germany, Belgium, Switzerland, Louisiana, Manitoba and Quebec City, gaining both in recognition and popularity.The choir has adult bass and tenor adult voices that back up children singers that range in age from eight to 18, singing alto and soprano, covering all of the ranges.For her part, Turcotte is pleased at the opportunity of once again blending the choir's voices with her group’s instrumental renditions of Christmas favourites.The Cordes à vent play several venues as part of their annual concert series, ending the season with a Christmas special that has been enjoyed by capacity audiences in Sutton, Bromont, Granby and Knowlton.The concerts make use of area churches where the quality of acoustics are recognized as favouring both strings and voices.“The acoustics allow the orchestra’s sound to fill the church; everyone can clearly hear every instrument and voice," said Turcotte.The orchestra’s presentation follows over two months of intensive practice, scores of memorization and adjusting arrangements.The Petits chanteurs are celebrating their 75th anniversary this year and have prepared accordingly.As many as 75 former choir members ranging in age from 13 to 84 will be onstage in Granby.Both concerts will include traditional and contemporary classics such as Handel’s ‘Hallelujah’ and ’Joy to the World’, Gruber’s ’Holy Night', Vivaldi’s ’Gloria’ and Schubert’s ‘Ave Maria.’ Featured this year will be solo violinists Lindsay Turcotte, Margot Beauchemin and l’Orchestre symphonique des jeunes de Montreal’s Sandrine Zuyder-hoff-Craig, playing the popular Bach Double concerto in D Minor.Absent from this year’s stage will be emeritus violinist David McAdam, whose presence both on stage and in the orchestra’s staging room will be sorely missed Over time, the Cordes vent lias become I he area's foremost arena for siring concerts, a collective where hundreds of newly acquired and more solidly anchored talents have met and developed.The orches tra’s accolades haven't gone unnoticed by patrons or supporters."We have earned recognition for the quality of out-public performances and the few private functions that we manage to fit into our schedule." added Turcotte.Si i 'D am.Page 5 Canadians Up For A Bunch Of Grammys hu photo A plethora of Canadians received nominations Thursday for the 49th annual Grammy Awurds, Including Fast Coast songwriter Gordie Sampson, Victoria-bom Nelly Furtado, Winnipeg rock veteran Neil Young, Vancouver's Daniel Powter.whose ’Bad Day’ Is nominated for male pop vocal and Diana Krall of Nanaimo.P C., whose From This Moment On is up for jazz vocal album.See Page 4 for more details Ulverton artisans • Alex’s Pantry • Wynonna • Paul Brandt |TH£| page 2 December 8 - December 14, 2006 RECORD .“.' '-= TALK Pecans add festive touch to mocha crème caramel I think I love the countdown to Christmas even more than Christmas itself: Hanging ornaments on a fragrant tree, driving into the North Hatley village at night and seeing it all lit up in different colours, and watching the crew at Hovey Manor (the inn down the road from my house) hang wreaths on every door, twinkling lights on the pines and garlands everywhere.Certain foods just go naturally with these times — dried fruits, dense and boozy cakes, the almighty turkey and root vegetables.Oh, and nuts, of course — especially chestnuts and pecans.The latter served as inspiration for this week’s recipe, a silky crème caramel topped with a crown of caramelized nuts, rich and comforting as the season requires.Serve it at one of your holiday gatherings and it’ll be sure to garner compliments galore.Mocha crEme caramel with CARAMELIZED PECANS Ingredients (for eight to 10 portions) 4 eggs, separated 1 cup sugar 2/3 cup water 300 ml sweetened condensed milk 1 can of strong, fresh coffee or espresso For the nut topping: 80 grams coarsely chopped pecans 1/2 cup sugar Directions: Choose the mould you will use, making sure it is non-stick.Tire easiest is the one that looks like a donut, with a whole in the middle, but you can also use two terrine moulds.Cook the sugar in the mould until it melts and darkens to the same colour as maple syrup, stirring with a wooden spoon and tapping any sugar lumps to help them dissolve.Add the water.Don’t worry: the caramel will smoke and bubble and fizzle and look funny, but slowly, as you keep stirring the water will blend into it and you will end up with a nice and smooth caramel sauce.Remove from the heat and let it cool for at least 15 minutes.Beat the whites until they form hard peaks.Reserve.In a different bowl, beat the yolks, the condensed milk and the coffee until well blended.Then set your mixer to its lowest speed, pour the yolk mixture onto the whites, and mix carefully — you want to preserve as many air bubbles as possible.Using a ladle, pour the custard mix into the mould gently, so that it stays on top of the caramel instead of mixing with it.Cover the mould with tin foil.Bake in a pre-heated oven set to 350 F for one and a half hours, in a bain-marie (meaning you have to put the mould inside a bigger one containing water, adding more if it dries up).Let it cool for at least 10 minutes, run a knife around the edges and the centre then unmould it onto a platter, being careful to turn it quickly to the caramel sauce doesn’t splatter all over the place.In a non-stick frying pan, melt the sugar until it turns honey brown and all lumps dissolve.Add water and stir until smooth again.Turn the heat down.Sprinkle the nuts over the caramel and shake around until they're all evenly coated.Let the nuts cool on a baking sheet.Place them on top of the custard.Refrigerate for a couple of hours before serving.Alex’s Pantry / COURTESY li ***** , '-r Vegetarian option proves a hit By Judy Schultz CanWest News Service Although Lenny Maria Sousa Witt is a Portuguese girl, she credits the Italians with this northern classic, baked polenta, or cornmeal, with vegetables and goat cheese.Baked Polenta With Roasted Vegetables and Goat Cheese Makes a 9-by-13-inch (22-by-33-cm) baking dish For polenta: 6 cups chicken or vegetable stock 2 cups (500 mL) yellow cornmeal 1 cup (250 mL) butter 1/2 cup fresh basil, thinly sliced 2 cloves garlic, minced 1 medium white onion, diced For roasted Vegetables: 1 medium red pepper, quartered 1 medium yellow pepper, quartered 1 medium orange pepper, quartered 2 small zucchini, sliced 1 medium red onion, slivered 2 small garlic bulbs Olive oil Balsamic vinegar Fresh ground pepper Sea salt 4 ounces (113 g) chevre (goat cheese) Directions: Grease baking dish.In a deep saucepan over medium heat, melt butter and saute garlic and onion.Add stock and bring to a boil.Reduce heat to low.Gradually whisk in cornmeal.Cook approximately five minutes, stirring constantly.Add fresh basil.Pour into prepared greased baking dish.Cover and set aside.In a large bowl, combine the cut vegetables and garlic bulbs.Toss with olive oil: transfer to a parchment-lined baking sheet.Roast vegetables at 400 F (200 C) for approximately 45 minutes, or until vegetables begin to brown.Remove from oven and let stand 10 minutes.Transfer vegetables to a large bowl and squeeze out the roasted garlic bulbs.Drizzle with balsamic vinegar and toss thoroughly.Season to taste with fresh ground pepper and sea salt.Crumble half the chevre over prepared polenta.Spoon roasted vegetable mixture over prepared polenta.Crumble the other half of the chevre over top.At this point, it may be covered and refrigerated overnight.Bake, covered, at 350 F (170 C)for 30 minutes.Uncover and bake an additional 20 to 30 minutes, until cheese has melted and top has slightly browned. joining in the chorus of Mel Torme’s ‘The Christmas Song’ every time it’s heard.And that will be often, according to ASCAP, the music rights organization, which just published its list of the Top 25 Christmas songs heard on the radio throughout the last five years.The Torme song, originally covered by Nat King Cole, is at the top of the list, beating out timeless classics like ‘Have Yourself a Merry Little Christmas’, ‘Winter Wonderland’ and ‘White Christmas.’ It’s theme music spun on endless tape loops for hard-pressed shoppers and weary travellers.But, hey, who needs a reminder?Some radio stations have been dishing the stuff out since early November.We’ll all be primed for deprogramming on Dec.26.Christmas goodies have been coming at us from music companies since as early as September, even before Canadian Thanksgiving.This year, as always, several established artists have tossed their takes on the season to the ever-mounting pile of Christmas albums.Among the more prominent names high number of new CDs to come up with some sugar plums and the odd sour grape.Here’s the list: • Various Artists Ultimate Jazz Christmas (Blue Note) This recent compilation from EMI is a real gem with the original Nat King Cole Trio version of ‘The Christmas Song’, Charles Brown’s ‘Merry Christmas Baby’, Booker Ervin's ‘White Christmas’, Thad Jones/Mel Lewis’s ‘A Child is Born’, and the Count Basie Orchestra’s ‘Basie’s Jingle Bells’.Recent greetings from Eliane Elias, Norah Jones, Lou Rawls and Dianne Reeves make this one for the ages.• Sarah McLachlan Wintersong (Nettwerk) As the title suggests, this is a tribute to the season of lights, with not specifically Christmas music by Gordon Light- foot, Joni Mitchell and McLachlan herself.But there are carols, too, and a terrific cover of John Lennon’s ‘Happy Xmas (War Is Over).’ • James Taylor At Christmas (Sony/BMG) This luscious, jazzy collection was produced by Dave Grusin, and includes the version of‘Have Yourself a Merry Little pickled tongue and marmite.Of course, you could get even and surprise them with a CD of the Greatest Hits of the Grateful Dead, or a gift certificate for a visit to the Museum of House-hold Insects.But this is the season for forgiving and being generous, right?So in the hope that somehow the Christmas spirit will prevail, here are my suggestions for a baker’s half-dozen books calculated Apocalypto.By Katherine Monk CanWest News Service Once thought to be the appropriate epithet for his post-mug shot career, Mel Gibson’s Apocalypto may well represent a step towards the fallen actor-director’s resurrection.Revisiting similar emotional and visual terrain as his divisive but phenomenally successful The Passion of the Christ, Apocalypto is a period piece set in ancient times that revolves around one man’s struggle to save something of personal importance.For Jesus, the object of salvation was the entire human race.For Jaguar Paw (Rudy Youngblood), the quest is more humble.He simply wants to save his family, and his small group of forest tribespeople, from the blunt axe and bloodlust of the Holcane warriors.If you’re not up on your Mayan history or the timeline of human settlements on the Yucatan Peninsula, the Holcane warriors are fierce killers who serve the Mayan leader and his sacred priest by rounding up mountaindwelling tribesmen for sacrifice.With failing crops and a disfiguring illness claiming villagers, the Holcane warriors are working overtime to meet the demand for ritual killing, and when the film opens.Jaguar Paw and his people come face-to-face with a group of ragtag survivors.They are in shock, and they have the vacant look of someone already half dead.Jaguar Paw’s father tells him they are sick with fear, and as a result, their fate is sealed.A few scenes later, we meet the Holcane warriors in the flesh and immediately understand the terror they inspire.Zero Wolf (Raoul Trujillo) is the death squad leader, and thanks to his epaulets made of human mandibles and his necklace made from fragments of human skull, we can be assured he’ll figure as the central villain.The rest of the narrative is self-sustaining: Jaguar Paw must elude capture by the Holcane, save his wife and son from certain death, and preserve his tribal way of life for future generations.Seems simple enough, but surviving massive cultural upheaval and a climate of ambient fear is not easy — and if Apocalypto has any great thematic goals, it’s teaching its audience some timely lessons about the perils of paranoia, and the risk of non-resistance.Jaguar Paw comes close to certain death several times over the course of this adrenaline-fuelled jaunt through the jungles of Mexico, but thanks to his manly resolve and the acceptance of his own human limitations, he refuses to fold in the face of terror.In this way, he shares some key similarities to other Gibson heroes — including the blue-faced warrior William Wallace (Braveheart) and Jesus (Jim Caviezel in The Passion of the Christ).Even Gibson’s pre-lapserian alter egos from the Lethal Weapon and Mad Max franchises fit under the same manly banner.Gibson seems to enjoy watching half-naked.muscular men engage in blood-sport.Half the scenes in Apocalypto involve inano-a-mano bonding and intense violence.Given the historic period, and the available archeological information on the Mayan Empire, it may well be an accurate representation — but there’s no doubt it borders on voyeuristic sadism as seen through Gibson’s lens.At one point, after witnessing everything from graphic decapitation to the ceremonial removal of a live victim’s beating heart, Gibson goes the extra distance and continues a tradition he began with Passion of the Christ: He finds the one special effect that is so ridiculously gory and gratuitous, it prompts a giggle.Granted, there is nothing funny about a fine spray of blood spurting from someone’s cracked skull, but we’re so accustomed to the rapid progression of violence in Apocalypto, it's hard not to conjure the odd thought of Monty Python and the Holy Grail every time we see another severed head bounce down the steep steps of the sacred pyramid to a jubilant crowd below.The only thing that saves Apocalypto from being yet another thinly veiled snuff film is the development of Jaguar Paw's character, and the collective performance value from the incredible cast — which is forced to speak in ancient Yu-catec Maya.Because Youngblood brings an undeniable integrity and sense of dignity to the role of Jaguar Paw, we care about what happens to him — and that’s enough to keep Apocalypto off the edge of Gibson’s creepy, self-serving abyss of eroticized violence.Despite his deeply troubling views on gender, religion and race, there’s no denying Gibson’s ability to make a movie.He knows what he’s doing, and he knows how to do it well.Apocalypto is not a complex film.It strips narrative down to the bone and uses visceral imagery to communicate the majority of the storyline — but it works.Gibson’s tableaux of blood, guts and tribal warfare are depicted with a throbbing sense of urgency, and as ugly as it gets, Apocalypto delivers a salient message about the fall of a major civilization without pandering to white guilt, notions of the ‘noble savage’ or select audience groups with special interests.Gibson still has a long way to climb if he’s looking to reclaim his dominant position on Hollywood's power pyramid, but Apocalypto suggests he’s moving in the right direction by focusing
