These dramatic comedies now playing at the Studio Theatre at Bishop's University and directed by Standjofski explore the tenuousness of modern relationships.Standjofski, also an actor, director and amateur musician, said he creates theatre as he does with music."There's a feeling I want the audience to get especially in a one-act play where you can go for one straight idea.I try to make sure to write the story around a feeling," said Standjofski."I’m a musician.I think I write more like a musician with attention to sounds and feelings.I'm not a socially active or socially conscious writer.” Despite the fact that the playwright does not see himself as socially conscious, his plays are by no means apolitical."All my plays are full of politics and interpersonal psychology.You can't write do the walking — fine dining is a Townships tradition Goose is latest delicacy to grace Quebec menus By Julian Armstrong Southam News Baie-du-febvre Like an early drift of snow, the wide band of white was tucked into a curve of the dun-coloured hillside, the St.Lawrence River a distant backdrop to the autumn scene.Closer up, the white mass could be seen to be moving slightly, and no wonder.Snuggled together were more than 300 big, white-feathered geese, participants in Quebec's latest experiment in specialty meat production, just 150 kilometres east of Montreal.And it's a delectable specialty.The meat, more flavourful than duck, is so succulent that when celebrated French chef Paul Bocuse dined in Montreal last winter, he was served this goose at a Queen Elizabeth Hotel dinner in his honour.Chef Alain Pignard had smoked the rosy-red meat, and made it into a tartare trimmed with smoked corn kernels, slivered beets and wild berries.The dish was designed in the shape of a teepee to remind Bocuse of native foods that he'd enjoyed on his trips to northern Quebec.We met some of the geese up close in Lucie Rioux's barn.She's one of seven farmers in this region to start raising free-range geese for Quebec's chefs and gastronomes."They love grass," said the tall, serious farmer, who willingly posed with one of her charges in her arms.They also love grain, she said.Part of the secret to the flavour and tenderness of the meat is the feed she provides."Wheat, corn, barley and soybeans go into their feed.My job is the recipe.We're always experimenting," said Rioux, who studied business, for the tiny goslings must be flown in from Florida when only a day old.After considerable research, including a trip some of the farmers made to France last winter to look at goose-production there, the Quebec group decided that the Emden breed of geese, available in Florida, are the best variety for their requirements, which include producing a goose with considerably less fat than the Manitoba geese we're offered frozen in supermarkets each December.Raising geese is labour-intensive, Rioux explained.Received in April, the tiny birds had to be nourished under heat lamps, growing from about 100 grams to one kilogram in three weeks.Come summer, they were big enough to go outdoors.By the time we visited her farm, the geese were in their final phase, which meant more grain in their diet and less exercise, a process called finishing.The process produces a bird with breast meat that tastes quite like the best beef."It's a red meat, with much more flavour than the Manitoba geese," she said.Chefs approve of the newcomer.Patrice Lafreniere has been trying the meat on his menus at Auberge du Lac-Saint-Pierre, located across the St.Lawrence from Baie-du-Febvre.He uses every part of the goose, making the breasts into rare-roasted slices to serve with various sauces.One contains apples and maple syrup, another he flavours with cider vinegar, honey and red wine.The chef, who has won prizes for his cuisine, likes to serve the meat either with little potatoes he sautées in goose fat or with polenta.The problem for chefs - and everyone wanting to buy this meat - is the price.Chefs are paying over $10 per kg or the whole goose, $35 per kg for the breasts.One kilogram is about two pounds.Compared to duck, Lafreniere finds he must charge about 20 per cent more per main course, "so this goose is not for everybody." November 24-30, 2000 page 3 TALK OF THE Townships Music, dance, theatre and more.ail in the Townships Foolish Games full of the bloom of youth ‘My goal was to use dance in the same way we use words in li ter a ture, philosophy or in theatre’ By Catherine Dean Record Correspondent Waterville native Paul-André Fortier returns to his old neighbourhood with Foolish Games.This renowned choreographer, based in Montreal, presents a modern dance performance at Centennial Theatre about the vigour, passion and pure expressiveness and inexpressiveness of youth.The Fortier Danse-Création team will also speak with the audience before and after the performance.Dancers Emmanuel Jouthe, Eve Lalonde and Ivana Milicevic hold Bachelor of Dance degrees from UQAM where they studied with Fortier.Jouthe and Lalonde are co-directors of Carpe Diem Danse, while Milicevic has trained professionally with Helene Blackburn and Louise Bédard.While living in Granby, Fortier discovered an interest that changed his life."I knew nothing of dance.At that point, I'd seen only one dance performance, the Nutcracker Suite by the national ballet and it didn't leave a print whatsoever," said Fortier."I was teaching literature at Granby.There was a woman teaching the phys-ed section who had a small dance ensemble.1 was teaching all the theatre classes.She invited me to watch her rehearsal.I went and I made comments.She said, 'You seem to have a good eye for the stage.' She told me she was going to attend a summer workshop with Nouvel Air in Montreal and invited me to come along in 1972.The director of the company told me I was talented, which I didn't know, and she said, 'If you want, you can come back in the fall and take classes for free.' I jumped at the opportunity." Fortier said he threw himself into dance."I really fell madly in love with the people and this idea of being able to express myself through my body without words," he said."I started to train and train and first thing I knew, I was a member of the company and 1 left my teaching.That was 28 years ago and I'm still there." Becoming a choreographer was another surprising development."When I started to dance, I never though I would become a choreographer.During a season where I was really not involved in the repertoire the company was performing, I asked another dancer, in the company, Ginette Laurin (director of O Vertigo) if she would work with me in a corner.That's where I created my first choreography," reminisced Fortier.The dancer/choreographer believes strongly that dance is not only about entertainment."My studies in literature have influenced me a great deal.Dance has always been seen as an entertainment, rather than a place where I would think and address social or political or moral issues.When I started to choreograph, one of my main concerns was to get away from strictly an entertaining point of view and put into the choreography the social issues I was interested in.In humanity, there is a complexity and sophistication of the mind and yet there exists a stupidity of the same mind.It seems we don't learn that weapons kill.So I'm very fascinated by those issues.I've treated choreography like 1 would treat a play or novel, not expecting that everyone will like what they see." TALK OF THE Townships — THE — — ¦¦"¦¦¦¦ ¦ November 24-30, 2000 page 5 A fine selection of museums and galleries make the Townships a mecca for artists and art- lovers Seasonal sights and beautiful buys PERRY BEATON/SPECIAL Nicole Lab be, who has been a volunteer at Uplands for a number of years, with her four seasons.By Catherine Dean Record Correspondent Lennoxville Looking for a unique Christmas present for a loved one?The Uplands Cultural and Heritage Centre has invited eight artists from the area to display their works just in time for the holidays.Townshippers may wish to attend the opening reception of Bonheur d'hiver 2000 simply to admire these works or to put away a special piece - whether it be pottery, stained glass, or a watercolour, acrylic or oil painting.Marc Bolduc has created stained glass frames using glass with a variety of colours and textures, perfect for family photographs.Loïc Therien's beautiful pottery reflects the snow and frost this season using the unusual technique of crystalline glazing.Paintings in the exhibit are a diverse group, from Yves Bergeron's long, narrow abstracts and Beth Girdler's tiny Eastern Townships scenes to Nicole Labbé's colourful flowers and Darren Millington's thought provoking paintings of animal skulls.There are also Ann-Marie Saumier's delightful pen-and-ink and watercolour paintings of flowers and street scenes and Michéle Saumier-Watson's pen-and-ink 'View from the Elephantus Barn.' Loïc Therien's pottery was discovered by an Uplands Board member at the traditional Scottish Festival in Gould this year."When I had exceptional pieces, 1 kept them.I've been doing that for four years now, thinking there would be an occasion to exhibit my best pieces," said The-rien."I was interested to be among artists instead of artisans." Very few artists are using the technique to achieve crystalline glazing that Therien uses.It is an expensive and exacting process."This glazing is a random process.It needs a very accurate control of temperature and has to be done mostly with electric kilns so the temperature can be changed rapidly," said Therien."This kind of glazing is fired at 2350 degrees.The crystallizing process occurs at around 2000 degrees - then I have to go rapidly to the top, so the glaze doesn't run too much.After that, it goes down rapidly to 2000 degrees, then it has to stay there for three or four hours so if some crystals begin they have the time to grow and provoke crystallization around them." The effect is unique.Each piece is always different."Glaze is glass and glass can crystallize.It is the same process as water changing rapidly from a liquid to a solid and can give different shades."
