THl RS .Al G 30.1979 - 13 From canned chicken to prize roses?By CLAUDIA BOWERS KNOWLTON — Nestled in the green hills above Brome Lake lies the village of Knowlton, a jewel in the bracelet of towns and villages around the lake Here, hidden behind hedges, stone fences and walls, one can find some of the most beautiful summer residences in the Eastern Townships and, if one is persistent, some of the most sought-after talent in the fields of handicraft, art, horticulture, and agriculture Just about the only time these shy and retiring people come out into the eye of the public with the talents that could make them famous is during the Brome Fair, a yearly event that inspires flying fingers and various other tools to produce articles that have become world-renowned for their originality and beauty.Of course this includes gardening and horticulture and at the Brome Fair we find living side by side, two societies ~ the Horticultural and the Agricultural These two societies have, in recent years, combined their efforts and once a year, the fruits of their labors during the past twelve months is put on display in a grand and glorious fashion at the fair Two people who have been involved with both societies over the span of half a century are Mr.and Mrs.Bert Phelps, well-known gardeners and growers of fine flowers since 1933.Mrs.Phelps, a tall, gracious lady originally from England, explains that growing flowers here in Canada was her way to overcome the loneliness she experienced in a new land that at that time had not yet become accustomed to the masses of flowers that she had grown up with “When I arrived here, one saw a few geraniums outside and perhaps one or two other kinds of flowers, but farmers weren’t interested in growing anything much for decoration.Time and energy was devoted to eking out a living in a land that could be harsh and unkind to anyone who slowed down to enjoy such social amenities as flower shows while there were still crops to see to and other more important work to be done.” “The first year we were here, I was absolutely homesick, and as a result, both my husband and I returned to England and stayed one year.” “That year back home seemed to turn the tide, because when we returned and took up residence on a farm in West Bolton.I seemed to be satisfied to stay in Canada.” “Of course, we brought many different varieties of seeds with us, and I’m proud to say, we were the first to grow gladiola and carnations outside in this part of the country.” The Phelps’ joined the Horticultural Society in 1933 and haven’t looked back since, even though their garden today is much smaller than it used to be “We moved here to Knowlton, and I guess you might say we have retired, but.we will still exhibit flowers at the fair.” Gertie Phelps explained “Seems as though once you start, it’s non-stop until it’s physically impossible ” This doughty couple, whose farming experience has covered everything from keeping a dairy-herd, to raising chickens and canning the poultry for sale in all parts of the world, keeping bees and exhibiting honey, to tending one of the most beautiful flower gardens in the area, are proud of their accomplishments “We worked very hard during the chicken-canning era Our 4 brand name was Rushbrook Farm Canned Chicken and we had to meet standards that were as difficult in those days as they are today,” Mr Phelps ex plained.“It took the better part of a year before the government gave us a permit for this type of enterprise ” “Flouid and solid contents of the cans had to be checked, weighed and tested for a period of several months before they received the go-ahead Then the really hard work began.” Mrs Phelps told of long hours in the kitchen where, with the help of local women, orders were filled for Morgan’s store in Montreal and parcels overseas ” “We even received letters from servicemen during the war.expressing their pleasure and thanks for a taste of chicken that smacked of home and fireside As a matter of fact.” added Mr Phelps, “one letter was written on the back of a label off one of our cans ” “Then, all those hours in the kitchen seemed worthwhile,” Mrs Phelps said The day we visited the Phelps' residence, a multitude of flowers were just beginning to show color See PHELPS, Page 14 B.HAMEL PHARMACIEN Record pholo -
