Pie.\u201d A large and fashionable audience attended the Chateau Frontenac yesterday afternoon to hear Professor Adami, of McGill University, Montreal, who lectured under the auspices of the Women\u2019s Canadian Club on the subject of \u201cThe American versus the English Pie.\u201d Not a little amusement was afforded by the plea of the lecturer that the committee were more careful of his reputation as a man of science than he was himself and so had announced him as about to talk about Pottery.lt was true that his interest in old China and the like had led him into this by-path of stientific research, but Pie was the subject and Pie he was going to talk about.To illustrate his address Dr.Adami brought with him some interesting and curious specimens of 17th ard 18th century pie dishes, both English and American.The President of the Club, Mrs.Jwell-chosen words, both in English and French, and at the conclusion of the lecture a véte of thanks was proposed by Mme.George Tessier and seconded by Mrs.W.Price.His Honor the Lieutenant-Governor, Lady Langelier and Hon.Sir Louis Jette were among the invited guests present Preceding the meeting at the Chateau a very successful lunch was given at the Garrison Club by the committee of the Women's Canadian Club to meet Professor Adami.Mrs.J.T.Ross presided.There were present His Honor Sir Francois Langelier and Lady Langelier, the Hon.Sir Louis Jette, the Hon.Sir Lomer and Lady Gouin, Rev.Canon Scott, Mr.Molson Macpherson, J.T.Ross, J.C.McLimont, Dr.Ahern, and Dr.Rousseau.They might think, said Dr.Adami who was in somewhat alliterative mood, that it was pure profanity for a professor of pathology to preach pie.But it was worthy of thought to consider how the study of the causes of disease led inevitably to a contemplation of the causes of health.To come nearer to his subject, the study of indigestion lead naturally to an inquiry into its causes.They had heard it stated that the national dyspepsia of their neighbors below the line was intimately associated with, if not brought about by their predilection to pie.Here, then, was some justification for his text.It was a striking fact that the two great divisions of the Anglo-Saxon race were differentiated to the nature of the pies which they devoured.While the English, Scotch and Irish were addicted to the deep pie, a pie with upper crust alone and relatively abundant and juicy contents, the United States pursued the cult of an allied but distinct article, shallow and possessing both an upper and under crust, between which reposed a comparatively narrow layer of what might scientifically be termed the specific constituent, be it apple, pumpkin, raspberry, cranberry or what not, and that constituent was semi-solid.It wis the upper crust that was so essential to the English article, the under to the American.For himself, said Professor Adami, he was wedded to the English pie but he freely admitted that the American was at liberty to speak with equal enthusiasm of his country\u2019s product.But, from the point of view of digestibility, the very existence of its distinctive under crust demanded a paste so tough in consistency that it would not become sodden with the juices of the fruit in the process of haking and very often the upper crust was of the same close-grained composition as the lower.This must make for indigestibility.In fact, an American friend had told him that he regarded the under crust as the cause of the dyspepsia-producing qualities of the American article, although he added that it was,
