by-laws, 20 per cent being in this category.Quebec was next with 15 per cent reporting compulsory pasteurization by-laws.Of the 366 reporting municipalities, 90, or approximately 25 per cent, reported their entire supply was unpasteurized.Sixteen revealed that while they had no compulsory by-law their supply was 100 per cent pasteurized.Forty-one municipalities, including 15 in Quebec and eight in Alberta, revealed that 90 per cent or more of their milk supply was pasteurized.From the results of the survey, it would appear that many thousands of Canadians are drinking raw milk despite the fact that raw milk can be dangerous \u2014 despite the fact that milk-borne diseases have caused much needless, killing and crippling illness.Pasteurized milk is the only safe milk.\u201cA BUSINESS OF MY OWN\u201d That's the theme of a little booklet for veterans which has just been issued by the Bank of Montreal.It is called \u201cWhat's the Score on these Veterans\u2019 Loans?\u201d and is about the new Veterans\u2019 Business and Professional Loans Act.In it the bank answers, in the straightforward words of one of their managers, a series of questions put by a veteran who wants to know \u201cthe score\u201d for himself and for his friends.Copies are, we understand, freely available at the local office of the bank.There has been a certain amount of doubt and misapprehension as to what the Veterans\u2019 Loans Act would enable banks to do in the way of making loans to veterans who have started, or who wish to start, a business of their own.An unfortunate delay in the supplying of the government's printed forms and details of the regulations did not help matters.Now the Bank of Montreal has brought out this attractive little volume which really answers the question put on its cover.It dispels, too, any idea that the bank is less than enthusiastic about advancing money under the terms of the act.Running through the foreword and the answers to the veteran\u2019s questions is a wholehearted endorsement of the widespread desire for \u201ca business of my own\u201d.But the bank does not hesitate to impress veterans with the fact that they must have a sound business proposition.With this we agree.Besides their money, veterans are investing their time, effort, and their very future in these new businesses, and the government and the banks would not be serving these citizens well if they assisted in ventures which had no reasonable chance of success.WHIPPING CREAM COMES BACK It is with a happy smile that homemakers across Canada welcome back their menus more and better cream.For several years, due to war conditions, the use of heavier creams has been prohibited as a means of conserving the butter-fat for more essential purposes.Butter is an indispensable item of both war and peace-time menus.Cream is not pure fat, but rather that part of milk which contains the most \u2018fat.It is usually according to the percentage of fat it contains.The \u2018kinds of cream commonly sold on the market are cereal cream, coffee or table cream, and whipping cream.The home economists of the Consumer Section, Dominion Department of Agricyl- ture say that there are several factors which influence the successful whipping of cream, such as age, temperature and richness.Cream for whipping should contain about 30% butter-fat and should be from 12 to 24 hours old.It will whip more easily if thoroughly chilled to below forty degrees, Fahrenheit.Do not whip for too long a time, otherwise the fat globules may collect and form butter.Cream above at length for the comfort and encouragement of those who are suffering from the birth-throes of public utterance, and also to show that Shaw's apparent flippancy is merely a mask for the I have just started to read Hesketh Pearson's life of Bernard Shaw, and in glancing over the photo illustrations of his friends in the latter years of the nineteenth century, it struck me that they were all men who took themselves very seriously.This may be said with even greater emphasis of Shaw himself, for although he usually assumes a jocular air in his pictures and in his writings, he leaves no doubt as to his personal opinion of his importance.In the frontispiece portrait taken at the age of 82, he sits, with his arms folded and his brows knitted}, against a background of books.It is obviously a pose, but the portrait is very revealing of the underlying serious + nature of the man.* emotional side of his nature.As a young man Shaw says he was tormented by \u2018\u2018an abnormal shyness\u201d which made him \u201cunmannerly and arrogant in social intercourse.\u201d He tells of how he used to visit a house in Cheyne Walk on Sunday evenings: \u201cI suffered such agonies of shyness that I sometimes walked up and down the Embankment for twenty minutes or more before venturing to knock at the door; ;indeed I THE EXAMINER, FRIDAY, MAY 16, 1947 We all have two sides to our nature, and portrait painters tell us that most people are two-faced \u2014that one side of our face is more or less different from the other.In Bernard Shaw, as in most men of genius, this difference is accentuated.In his young manhood Shaw not only took himself very seriously, but he took life in general seriously in his writings, He was well versed in the Bible and Pilgrim's Progress, studied and played classical music, tried to write a Passion Play in blank verse, and wrote several novels.He thus had a thorough grounding in the serious side of life, but it was not until he let the lighter side of his nature have free play that he began to cut a figure in the political and literary world.But it was not without a struggle with his more serious self that he emerged into the limelight, Pearson tells us that when Shaw made his first plunge into Public controversy, \u2018he rose to his feet, shaking with nerves, and heard himself speaking.He was pitifully self-conscious and felt certain when he sat down that he had made a fool of himself.\u201d That is a common experience with young aspirants to public speaking \u2014 except with those who are naturally glib of tongue and are not bothered with any depth of thought or temperament, Although the young Shaw felt that he had made a fool of himself in hig first attempt at speaking in public, Pearson tells us that he \u201cthere and then resolved that he would never miss a meeting and never miss an opportunity to speak, however much he might suffer in the process.He kept his resolution, suffering agonies before his turn came, and wondering whether anyone could hear the painful hammering of his heart.He was so nervous, that he could not read his notes, so apprehensive that he could not remember them.He assumed that everyone realized his condition, was amazed when asked to take the chair at his third appearance, guessed that he had been able to cover his fright with an outward semblance of calm, but gave the imposture away to the secretary when his hand shook so should have funked it altogether, and hurried home asking myself when it was easy to run what was the use of torturing away, if I had not been
