Wine is mentioned one hundred early days the Greeks used to preserve wine by adding tar and herbs. The tar did little to enhance the taste, but it was the only way known. In the Middle Ages wine-mak- ing spread to most European countries. It was during those years that Spain laid the founds- tions of today's great industry.Louis Pasteur made modern methods possible with his discovery of yeast. And contrary to opinions today he did not experiment in pasteurisation with milk — but with wine.In recent years the Canadian wine industry has improved immensely and samples of the produce has won high honors in recent wine-fairs in London and Paris. The grapes.for the industry are grown mainly in the Niagara area where the soil allows a hardy type of grape to grow. Many of the vines growing in France and Spain are off-shoots from these vines, for in the late nineteenth century when a disease attacked the and five times in the Bible. In x European vineyards the growers Rotarians’ wives wined and dined There are no hard and fast rules about wine-drinking and no need to follow current preferences. The essential thing is to' please your palate — that discovered that the Canadian vine was immune.Consequently they came to this country and took back thousands of grape- cuttings. The actual process of wine- making has been modernised today in Canada. The grapes are cut in the late fall’ after the juices have begun to ‘run through the vines. The grapes are crushed and skinned automatically, but all are selected for quality.; Sugar, carbon dioxide and alcohol are then added to the juices and a special ‘aging’ process is undergone before the bottling.Days of oaken-barrels, however picturesque, are over in Canada today. The inside .of a (Continued on page 14) DEATHS | MIMMS.At his November 13th, 1957, Mimms, in his 75th year, beloved husband of Jessie E.Woods, father of Dorothy (Mrs.W.R.Girling).Funeral service was held at D.A, Collins Chapel, 5610 Sherbrooke St, W., Saturday to Rideau Memorial Gardens.residence, on Albert E, HE facilities of our funeral home, being located on the first floor, are easily accessible to all members of the family.DA Collins INC.ar williams ST fA NUNNS Express your sym: pathy at a time wien the proper words are difficult to find.4509 COTE DES NEIGES RD.AMPLE PARKING FAZILITIES SSTABLIEMED 1004 RE.8-1124 Montreal's Newest and Finest Funeral Home ROSEDALE EDGAR A.WRAY (Pres.) 4911 COTE DES NEIGES RD.South of Queen Mary at Decelles We wish to advise that the new Cote des Neiges Blvd.in front of our premises is now open.e RE.1-6868 playgiounds and garden-plots.TTT eee 2 a At avt Be ce ie cage _— à ‘a Chapel of Cathadral Beau 1 — Î FINE FLOORING | : “55 YEARS IN ir WESTMOUNT" * HARDWOOD ® ASPHALT ‘ _® RUBBER ‘ e Reliable % Specializing in Refinishing Old Floors |!
