Weekly Guide to Arts & Entertainment INSIDE Creamy soup is perfect for fall nights see Page 2 \ INSIDE Diane lane loves her lifeinlhe Tuscan Sun see Page 9 J in the Eastern Townships THE RECORD, September 26-October 2, 2003 A comedy about a couple of white chicks By Diahann Saddler Record Correspondent Local theatre company storyland3 is offering dinner theatre to English audiences at the Theatre des Tournesols in Cowansville this weekend and next.A Coupla White Chicks Sitting Around Talkin’ is a comedy by John Ford Noonan and directed by Christopher Freeman.Laura Allen and storyland3 founder Darleen Bell star as Hanna-Mae Bindler and Maude Mix, two women living next to each other in the posh New York suburb of Westchester County.Hanna-Mae (Allen) is an ex-cheerleader from Texas whose husband is cheating on her.Maude (Bell) is the upper-class housewife whose predictable and tightly controlled life is turned upside down by Hanna-Mae’s sudden intrusion.Their friendship will be a life-altering experience for both of them.Bell sees the play as being “about friendship and self-realization.Both women go through a change, one unknowingly, the other sees it coming.A lot of women will relate to it.“I think everyone will see something they can relate to actually; the neighbour you don’t like, whatever.Maude can’t handle it anymore and goes berserk, and really overdoes it,” said Bell.Bell does get to tussle with Allen over a suitcase; the scene is made even more surreal by her outfit — a classy white knit sweater set over a conservative navy skirt.These are not the clothes most people would wear to get physical.Bell and director Freeman emphasized the unusually ambiguous ending; it can be seen “as happy or sad, depending on how you say the very last line,’ according to Freeman.Added Bell: "A lot of issues are left to the imagination.It could be played so many different ways and it would be viewed differently each way.It can be seen as a happy or a sad ending — depending on how people take it.” See stoyrland3, Page 7 DAVID ANDERSON/SPECIAL Darken Bell and Laura Allen star as Maude Mix and Hanna-Mae Bindler in storyland3’s comedy A Couple of White Chicks Sitting Around Talking.Bell says she sees the play as being about friendship and self-realization.Waylon Jennings • Chemical Brothers • Margie Gillis • Lewis Desoto • SSO iTHEi page 2 September 26-October 2, 2003 RECORD Fall soup welcome on cooler nights Once again, this week I caught myself in the kitchen making another of my childhood favorites: A traditional Portuguese soup.Oh, how unctuous and rich and heartwarming! The Caldo Verde, or Green Soup, gets its name from the delicate thin threads of kale which give the pale potato cream a splash of vibrant colour.The greens, added at the last minute, also give it a welcome crunch.Knowing that kale might be hard to find in the Townships, I used romaine lettuce instead, which worked beautifully.I also replaced the usual Portuguese linguiça (another delicacy that is rare around these parts), with a common Polish sausage.Don’t worry, though, any other kind that can be sliced thinly and sautéed to a crisp will do.Serve this in a large tureen with a drizzle of extra-virgin olive oil and slices of country bread as dinner, or in delicate little bowls as a very original appetizer.Cream of potato with julienne of ROMAINE AND CRISPY SAUSAGE Ingredients (for six) 3-4 potatoes (1/2 kilo) 2 large onions (1/2 kilo) 1/3 cup olive oil 1 tbsp.dried rosemary 1 Polish sausage 1 head of romaine lettuce salt and freshly ground pepper 4 cups of water Directions 1.Pre-heat the oven to 350F.Peel the potatoes and onions, and cut them into large chunks of about the same size.Spread them on a baking sheet.Put the rosemary and lots of salt and pepper in the olive oil, whisk quickly with a fork and drizzle this mixture over the potatoes and onions.Bake uncovered for 35 minutes, giving it a good shake once or twice during that time.2.In the meantime, wash the lettuce leaves and press them together as if rolling a cigar.Slice as thinly as possible.Slice the sausage also very thinly and sauté about three slices per person in a frying pan (you probably won’t even need to use any oil).When browned and crispy, remove from heat and reserve.3.Blend the roasted veggies with four cups of water in batches.You will obtain a creamy and fragrant soup, which will need to be heated in a saucepan.Add salt and pepper and a bit more water if necessary.When it is time to serve, re-heat the sausage slices in the microwave.Heat the soup steaming hot then add the CanWest News Service Everyone knows that beans are good for you and that has always been reason enough to eat them.But finally the lowly bean, a mainstay in soup and baked beans, has become a popular convenience food.Since a wider variety of beans has shown up in cans on supermarket shelves, eliminating the lengthy process of soaking and cooking for us, the number of bean recipes in magazines, cookbooks and newspapers has grown tremendously.In today’s recipes, we’ve added black beans to a Southwestern mango salsa and a rich chili, spiced with chipotle hot sauce.Canned beans are convenient, but if you’ve got the time it’s more economical to cook dried beans from scratch.To replace one (398 mL) can of beans, you’ll need about 11/2 cups (375 mL) of cooked beans.One cup of dried beans will yield about 2 1/2 cups (625 mL) cooked beans.The intense sweetness of ripe mango, the spiciness of hot jalapeno and the nutty-like taste of black beans work in tandem to deliver a flavour punch that can’t be contained in a jar.Serve as a dip with coloured tortilla chips or as an accompaniment to chicken or fish hot off the grill.Black Bean Mango Salsa Makes about 3 1/2 cups (875 mL) 1 cup (250 mL) drained and rinsed canned black beans 2 cups (500 mL) diced (l/4-inch/6 mm) mango 1/2 cup (125 mL) diced (l/4-inch/6 mm) red bell pepper 1 medium jalapeno pepper, seeded and chopped fine 1/4 cup (50 mL) finely chopped red onion 2 tablespoons (25 mL) fresh lime juice 1 tablespoon (15 mL) vegetable oil 1 teaspoon (5 mL) minced fresh ginger 1/4 teaspoon (1 mL) salt 2 tablespoons (25 mL) chopped fresh cilantro In large bowl, combine beans, mango, red bell pepper, jalapeno pepper and onion.In small bowl, whisk together lime juice, oil, ginger and salt.Stir into bean mixture.Add cilantro: stir until combined.Taste and adjust seasoning.Chipotle pepper sauce is made from smoked and dried or roasted jalapeno peppers.It has a distinctive hot smoky flavour.If you can’t find it, use your favourite hot pepper sauce instead.Black Bean Chiu Makes 6 servings.1 tablespoon (15 mL) vegetable oil 1 medium onion, chopped 1 garlic clove, chopped fine 1 red bell pepper, chopped 1/2 cup (125 mL) chopped celery 1 (796 mL) can tomatoes (undrained), chopped 1 (398 mL) can tomato sauce 2 tablespoons (30 mL) chopped sun-dried tomatoes (packed in oil) Chipotle hot pepper sauce to taste 11/2 tablespoons (22 mL) chili powder or to taste 2 teaspoons (10 mL) ground cumin 1 teaspoon (5 mL) granulated sugar 2 (398 mL) cans black beans, drained and rinsed Salt and black pepper Grated Cheddar cheese In large saucepan, heat oil over medium-high heat.Add onion and garlic; saute for two minutes.Add red bell pepper and celery: saute for four minutes or until vegetables are tender.Add tomatoes, tomato sauce, sun-dried tomatoes, hot pepper sauce, chili powder, cumin and sugar.Bring to a simmer and cook for five minutes.Add beans and heat through.Add salt and black pepper to taste.Serve sprinkled with cheese. RECORD - TALK The tumultuous birth of the Appalachians September 26-October 2, 2003 page 3 By Debbie Tacium Ladry Record Correspondent As part of its ongoing quest to bring knowledge about our surroundings to the general public, Sherbrooke’s new Musée de la nature et des sciences has invited Laval geologist Pierre-André Bourque to deliver a talk on the birth of the Appalachian mountain range.Yes, that happy event occurred a very long time ago.“The Appalachians extend from Florida all the way to Gaspé and even into Newfoundland.Just about the entire Eastern Townships is part of the Appalachian range,” said Bourque.“The range ends at the St-Lawrence Valley, and this can be seen most dramatically in Québec City : The Haute-Ville is part of the Appalachian chain, while the Basse-Ville is part of the St-Lawrence lowlands.” Bourque also notes that the Lau-rentian Mountains north of Montreal are not part of the Appalachian range.The general consensus among geologists is that the oldest sections of the Appalachians were created approximately 600 million years ago, while the youngest parts are 400 million years old.That makes them slightly younger than the Laurentians, but older than the Rocky Mountains of Western Canada.Before the mountain range’s birth, our region was covered by a vast rocky plateau, somewhat like the Canadian Shield.Plaque tectonics, says Bourque, are the forces responsible for creating mountain chains, and the Appalachians were no exception to this rule.“This ancient Shield opened up to an ocean, in which many sediments were formed and marine creatures lived.When the ocean closed up, so to speak, the sediments and the marine creatures were fossilized and deposit- (ftecirr) to (^log FREE introduction to Clogging Come and join us and you'll have a R0CKIN, RAPPIN, COUNTRY GOOD TIME! Gillis By Nancy Nourse Record Correspondent Dancer Margie Gillis will inaugurate Centennial Theatre’s new season on Sept.30.This performance also celebrates Gillis’ 30 years of dancing as a solo artist.As a dancer and choreographer, she has created more than 70 original works.Gillis has become known as a cultural ambassador for Quebec and Canada, traveling to India, the Middle East and Europe as well as both North and South America.She was the first modern dance interpreter to be awarded the Order of Canada for her achievements as a solo interpreter and choreographer.The CBC documentary ‘Wild Hearts in Strange Times’, devoted to her, won a Gemini Award in 1998.The Record recently sat down with Gillis while she was in Sherbrooke: THE RECORD: What made you decide to enter into the choreography aspect of modern dance?GILLIS: “When I started, I devoted my time to exploring and interpreting dance in my own mind — for myself.I could never have taught someone something that I hadn’t figured out for myself.It was only when my work became more refined that I felt confident in my ability to try to explain the process to others.My brother, a noted choreographer and principal dancer with the Paul Taylor Dance Company, once said that ‘dance was the ultimate litmus test of life’ — you take everything you are as a person and evolve with it.” THE RECORD: What exactly do you mean when you say that ‘the body has a knowledge of its own’?GILLIS: “Your body does has a language all its own — a neuromuscular one.It can lead you from one movement to another without waiting for your brain to fully process the request.It knows how to connect a sequence of movements without really being told, at least not in sentences.“Performing to a live audience, you become connected to them in a neuromuscular way.Regardless of the outer body movement, or lack there of, of those watching the performance.Internally, the body is processing and following the tempo of music and the movement of the dancers.” THE RECORD: You are obviously very passionate about your work.Why does it have so much appeal for you?GIT,US: “I like the challenge and excitement that is always there.The glass is either half full or half empty,’ as they say.There are obstacles that make this a reality.People say that dancers portray the music.This is not entirely true.We may start out experiencing the music, but soon end up conversing with it and letting it guide our movements.By exploring a certain beat, emphasizing a different quality, it is possible to perform the same piece of music so that it becomes totally unfamiliar to an audience.” THE RECORD: You are credited with introducing modern dance into China after the revolution?How did this experience come about?GILLIS: “I had the unique experience of being asked to tour China with Paul SSO kicks off 65th By Leah Fitzgerald Record Correspondent Sherbrooke The Sherbrooke Symphony Orchestra kicks off its 65th season this weekend with a special concert featuring Sherbrooke native Jimmy Brière on piano.With Saturday’s concert, this season is the first where the symphony has an official presenter — the Government of Canada.“We presented the request to Communications Canada, whose mandate is to promote the government of Canada in all different events,” said Chairman of the Board Annie Beaudin said.“The request was for our 65th season, which is a very big event for a regional symphony.” The SSO is the third oldest in Que- bec, after Montreal and Quebec City.The symphony found out in June they would have an official presenter for the first time.The season features concerts for all tastes, including an appearance by the Montreal Symphony Orchestra in a program featuring music by Leonard Bernstein, George Gershwin and Dvorak.“We try to do the season in a crescendo,” Beaudin said.“The level of difficulty increases as we go.” Beaudin added it’s an honour to close their 65th season with the MSO.“It’s really going to be a special event.” people from different societies, not from the same cultural background.I was interested in finding out if they related to the work I was doing any differently than my usual audiences did.This was at a time when China hadn’t really opened up its doors to outsiders, so imagine our surprise to be asked to perform at an important gathering of high level season ka’s Rouslan et Ludmilla overture and Borodin’s Symphony no 2 in B Minor.“This is a great program,” Stéphane Laforest, conductor of the symphony said.“It’s a privilege to be able to conduct it.It’s exciting Russian music.” Brière has been touring North America, and Laforest is happy to have him back.“It’s good to be able to play Rach-mapinoff,” he said.“And this is an easy piece to listen to.” The concert is at 8 p.m.this Saturday at couldn’t be happier.I have always had family ties with this area.My great-grandfather came from this area, and my younger brother was with the Sherbrooke Castors.It is a great place to perform — a perfect size that really allows you to reach out to the audience.” Brief Jazz guitarist at Sutton’s Les Appalaches Guitarist Peter Gossage, who lives in Knowlton, appears every Friday through to Oct.17 at Auberge des Appalaches in Sutton.Gossage grew up in a family that produced three professional musicians: Brothers Bill (bass), Dave (flute), and Thom (drums), who are all well respected contributors to the Montreal music scene.Having played guitar in various folk, rock, and jazz settings through the 1970s and early ‘80s, he decided to forego a career in music to pursue graduate the Arion Ensemble By Leah Fitzgerald Record Correspondent Lennoxville Centennial Theatre kicks off its classical music series next week with the Arion Ensemble, a baroque group from Montreal.The ensemble has played at Centennial several times.This is their first appearance with conductor Jaap ter Linden, who has worked on several projects with Arion over the past three years.Based in Montreal, Arion focuses on recreating the Baroque period with period instruments and arrangements, as well as guest-conductors from all over the world.The program for the Oct.4 show features ter Linden, from The Netherlands, conducting Johann Sebastian Bach’s suite for Orchestra No.1, Suite in B Minor for flute and orchestra and the 5th Brandenburg Concerto.The presentation of the Brandenburg will be done without the full orchestra, featuring two violins, the viola, cello, harpsichord and double bass.The other two pieces feature a solo flute and solos on the oboe and bassoon.“They’re all extremely good pieces,” ter Linden said.“There’s no special theme.It’s just four of his best orchestral works with an interesting mix of soloists.” Ter Linden was educated as a classical cellist, and focused on Baroque period music, including the Viennese school (of which Bach is a member).“I wouldn’t say I specialized in it," ter Linden said.“I just find it all very interesting.” Ter Linden teaches at a music conservatory in Holland.This is his first concert in Sherbrooke, and his first in a small city in Canada.“I’ve done concerts in Toronto, Vancouver, Montreal and Quebec City,” he
