By Taylor McClure Special to Brome County News On Nov.13, Knowlton\u2019s very first Microbrewery officially opened its doors.As the new hot spot in town, La Knowlton Co.offers a variety of freshly brewed beer and a generous menu made up of homemade dishes.Since opening just a few weeks ago, the business only continues to flourish and we got the scoop on what makes La Knowlton Co.so special.After graduating from university in British Columbia, Nick Allan, owner of La Knowlton Co., always knew that he wanted to start a business of some sort.\u201cI come from a family of entrepreneurs,\u201d explained Nick, \u201cI went to university and when I finished I knew I wanted to start something and I was very open minded about what that could be.\u201d He also knew that whatever he started, he wanted to do it in Knowlton; a place he said he identifies with.As he and his father made their way across the country to come back to Quebec, they visited various breweries and that\u2019s when the idea clicked.\u201cI\u2019ve worked in a couple before,\u201d mentioned Nick, \u201cand I\u2019ve always been a beer fan.After visiting 15 breweries, we decided we wanted to start one ourselves.We thought a restaurant would be good for business as well.\u201d In partnership with his father, Nick started to build La Knowlton Co.and finally opened its doors to the community a few weeks ago.CONT\u2019D ON PAGE 3 BromeCountyNews PAGE 2 T uesday , December 3, 2019 Brome County Community Bulletin Board December 4 & 7 HANDEL'S MESSIAH! out our beer already,\u201d said Simon Vaillancourt, head chef of La Knowlton Co., \u201cwe sold out our cream ale and our wheat ale.We sold 5000 litres in the first week or so.We started canning other beers this week.\u201d \u201cWe sold out two barrels; it went way faster that we thought,\u201d added Nick, \u201cOur first 215 packs of cans sold out in five days.We are hoping to have more next Wednesday.\u201d As the makers of their own beer, they try to use local products when possible.In terms of their menu, they have a variety of tasty choices and as the restaurant\u2019s head chef, Simon emphasized that all dishes are homemade.\u201cEverything is homemade except for the hamburger buns,\u201d mentioned Simon, \u201ceven our pizza dough is homemade.\u201d An important part of building the business was keeping the Microbrewery family friendly.\u201cWe have a liquor permit to taste beer but not wine or hard liquor,\u201d explained Nick, \u201cWe could get a permit but we would have to have a bar which would restrict the business to children.I want it to be family focused.\u201d Choosing the right name for the business was also apart of the process.\u201cWe wanted to have a local name that is well known,\u201d explained Nick, \u201cand I think Knowlton\u2019s name is well known.We wanted to use familiarity.It\u2019s also a trend to name a town\u2019s first brewery after the name of that town.\u201d While Nick has future plans to expand the business, his focus is on the right now.\u201cI have plans for expansion, I might push it to maybe a distillery down the Active December for Emmanuel United in Cowansville BromeCountyNews T uesday , December 3, 2019 PAGE 5 By Louise Smith On Saturday, the Christmas Tea was a great success at Emmanuel United.In just three hours over 50 people came for the \u201cfancy sandwiches\u201d and tea and coffee.The baked table and arts and crafts and Attic Treasures were a draw for visitors too.It is a launch to the Advent leading up to Christmas.People did not just stay for the meal, but spent the afternoon visiting and meeting new people.This Sunday marks the first Sunday in Advent, the Sunday of Hope.A candle is lit each week as the Advent season progresses.Three are purple and the candle of Joy is pink.On Christmas Eve there will be a 4 p.m.service.Everyone who wants to share the true spirit of the season is welcome to come.Rev.David Lefneski loves Christmas and his energy is infectious.\u201cThe Church near Giant Tiger\u201d is enjoying a growth in its congregation size and much is due to this past year of the new minister.LOUISE SMITH (Left) \"Norma and Elva helped out at the Christmas Tea.\" Dynamic Author, Eric Walters, Commanded Respect and Awe at Heroes\u2019 Memorial By Louise Smith On Thursday, Nov.28, prolific Canadian author, Eric Walters, came to speak in three different sessions to the students at Heroes\u2019 Memorial.Eric has written over 100 novels.He was a teacher in Ontario for the Peel School Board and in 1993 he wrote his first novel, \u201cStand Your Ground\u201d as a means to motivate the reluctant readers in his class.He hasn\u2019t stopped since.He told his young audience that the first book that really captured his attention as a reader was The Apprenticeship of Duddy Kravitz by Mordecai Richler, a Quebec author.He wanted his books to appeal to readers too.Eric writes books for different age groups and his work appeals to adults too.Many of his books include features and storylines from experiences he has had.Eric is also involved in a community outreach program in Kenya for children in the Mbooni region, The Creation of Hope.Funds raised by schools are matched with a sponsor and the money goes directly to the centre in Kenya.Eric has worked the African theme into recent novels like \u201cBeverly Hills Massai\u201d and \u201cJust Deserts\u201d and \u201cAlexandria of Africa\u201d.All students had their ears and eyes focused on Eric Walters.He moved about and had a slideshow on the wall behind him.He is very tall and he talked about being \u201cold school\u201d.Only one person at a time could be talking.If a student was talking, he stopped and said that he would continue when that person stopped.He did not have to stop more than once for the message to get through.He said it was a life lesson to know how to show respect.He not only spoke about his books, but he had a message for the children, \u201cOne person can change someone\u2019s life.\u201d His book, \u201cToday is the Day,\u201d describes the annual birthday party given to all the orphaned children at the centre in Kenya.The children have no documentation and no birth date.They get party hats and cake at the annual party, but more importantly, they get a birth certificate, which is a tool that is so important to them being able to move forward in their lives.Eric passed on information while keeping the children fascinated.He told of how sensitive an elephant\u2019s nose is.Elephants have a sixth sense, a chemical palate.They can even detect cancer.The closest relative to an elephant is the manatee.Both animals have a special buoyancy control in their bodies.He also spoke about the future prospect of a mammoth walking the Earth again.Seventy per cent of its DNA has been decoded and the prediction is that by 2035 a mammoth will be born somewhere.He has written a book about such a possibility, \u201cElephant Secret\u201d.The sessions flew by.His books are available at Brome Lake Books in Knowl- ton or at any Canadian bookstore.A special date coming up is Feb.19, when people across Canada are encouraged to read any book that is written by a Canadian author.We have so many great Canadian authors to choose from, but if you have not read Eric Walters\u2019 work, he is a great choice for that day.
