la Cité fills summer with music COURTESY KEN SCHELES Martha Wainwright (daughter of Loudon and sister of Rufus) will be one of the concert's headliners.By Thomas Ledwell Record Correspondent Music will be spilling from all corners of downtown Sherbrooke starting at the end of June.Les Concerts de la Cité’s summer schedâule, unveiled Thursday night, vows that will be the case.“It will be a huge season," promises Alain de Lafontaine, the director of the Granada Theatre and head of Les Concerts de la Cité series.“It’s the most spectacular season we’ve put together.It’s the 18th edition now, this year we have more than 70 shows to present, different kinds of shows, classical music, jazz, folk, street theatre, choral groups.” The series offers free outdoor concerts throughout from the end of June until early September.The number of performances has doubled, and so have the venues.Place de la Cité, the cement amphitheatre tucked behind the Sherbrooke courthouse, is still the main venue, but there will be a second stage at the newly constructed Esplanade Frontenac overlooking the Magog River in the heart of Sherbrooke’s revitalized downtown core.De Lafontaine said adding a second stage at the Esplanade Frontenac opened the door to a much bigger production.“It’s the reason we have more contributors, more help from the city, it’s the reason we could do more.” The series’ headline acts are already front and centre.Martha Wainwright, fresh off her highly acclaimed new CD, will be one headline act in mid-July.Wainwright is a great catch, said De Lafontaine, who’s been trying for weeks to include her in the line-up.They found out this week she will be part of the series.Montreal-based Senegalese artist, Zale Seek, is headlining the African Rhythms festival that will round off the series on Labour Day weekend.Seek has earned an international reputation for blending his music with colourful vocals and dance to entice the audience into his rhythms.Wainwright and Seek are the star power, but they will be sharing the summer spotlight with many up-and-coming musicians born and bred in the Eastern Townships.See ‘Concert’ Page 6 All you need is love?By Joshua Bleser Townships Stage, Quebec’s newest English-language theatre company, is opening the 2005 Season of Laughs at The Piggery in North Hatley with the musical I Love You, You’re Perfect, Now Change, written by Joe DiPietro, with music by Jimmy Roberts and directed by Townships Stage artistid director Sunil Mah-tani.The hit musical from New York is a fast-paced celebration of modern-day relationships, best described as a cross between Seinfeld and Sex in the City set to music.Mah-tani is a veteran of the Eastern Townships theatre scene and has directed plays for major theatre men are getting interested in cooking.Over the last number of years, a growing number of food queries sent my way are as likely to come from a Bob, Bill or Bret, as they are front Jackie, Jane or Joan.Father’s Day is an opportune time to get a dad who loves to mess around in the kitchen, on the barbecue or just loves to eat or drink well, something to stimulate his culinary creativity or help him better prepare the foods he loves to cook.Below you’ll find a series of gift ideas for the gourmet dad in your household as well as a few recipes to go with some of them.Pancakes with panache A number of kids have told me the best thing their dad makes is pancakes.My friend is one of them, but he prepares them for his family of five in an old skillet that only holds a few pancakes at a time.He and other ill-equipped dads should upgrade to a good-quality, nonstick electric griddle with a large cooking surface good for cooking a family’s worth of pancakes.They are available at most hardware and department stores.Be sure to pick up a pancake flipper designed for non-stick pans; you don’t want him scratching it the first day.Grill gear Check out your dad’s barbecuing gear and see if some of it needs replacing.Or think about the kinds of food he likes to prepare outdoors and build a gift around that.For example, if he likes to cook fish, get a grill basket designed for cooking whole fish, fillets or steaks; a smoker box and exotic wood chips he can use to give his fish a pleasing smoky taste; and a cedar plank (available in the seafood department of most supermarkets) on which he can cook delicious salmon.If your dad is already well-equipped, he can always read and learn more about barbecuing.Two books I highly recommend are Ron Shewchuk’s Barbecue Secrets (Whitecap Books), and David Veljacic’s The Fire Chef (Douglas & McIntyre).Dad’s getting saucy Many dads love to marinate, baste and brush foods with a funky, flavour-filled sauce.Make a gift of them by plac- ing some of the more eclectic and interesting-sounding ones in a basket, and be sure to include a silicone basting brush or two.These brushes are heat-resistant, dishwasher-safe and won’t fray or burn like bristled brushes do.They are available at most stores that sell kitchenware.Slipping sideways The movie Sideways brought a lot of attention to the pleasures of pinot noir, my favourite wine.If your dad is like me, or is simply interested in learning more about wine, make a fun gift by filling a basket with a couple of pinot noirs recommended by a respected wine retailer; some wine tasting glasses; a wine book, such as the highly recommended modern guide to wine Have a Glass (White-cap); a DVD of the movie Sideways; and a corkscrew, wine stopper or other wine gadget you think he might like.Gourmet box lunch If you have a hardworking dad who likes to eat well, buy a cool-looking lunch box and stuff it with non-perishable goodies he can enjoy during a break.These could include, among others, fine chocolates; roasted, premium nuts; gourmet crackers and tin of fine pate; flavoured beef jerky; and foil-sealed smoked salmon.Family cookbook Buy a book designed for holding recipes, or make your own.Fill it with his favourite recipes, including some front his mother, grandmother or other family members.Be sure to leave plenty of room for him to add his own secret recipes.As the years go by, the book will become an important keepsake that he can pass on to his children.Skillet supremacy When people ask me what’s the best thing to buy their man for the kitchen, I always tell them a large, heavy duty, high-quality skillet with an ovenproof handle and lid.He can fry bacon in it for breakfast, stir-fry in it for lunch and roast chicken in it for dinner.He can also stew and oven braise in it, start a dish on the stove and finish it in the oven in it and (the kids with love this), make grilled cheese sandwiches in it.Fluffy pancakes A generous amount of baking powder makes these pancakes light and fluffy.Preparation time is 15 minutes.Makes 12 to 16 pancakes, depending on size 11/2 cups (375 mL) milk 2 large eggs, beaten 1 1/2 cups (375 mL) flour 1/4 cup (50 mL) sugar 1 tablespoon (15 mL) plus 2 teaspoons (10 mL) baking powder 1/4 teaspoon (1 mL) salt Melted butter, vegetable oil or vegetable spray Whisk the milk and eggs together in a large bowl.In another bowl, whisk the dry ingredients together.Mix the dry ingredients into the wet until just combined, leaving the batter a little lumpy.Let the batter sit five minutes, and then give a few stirs before cooking.Preheat your griddle to medium, medium-high heat, about 325 F to 350 F (160 C to 170 C) for electric griddles.Lightly coat the cooking surface with melted butter, vegetable oil or vegetable spray.Pour on the batter, leaving a couple of inches between each pancake.Flip the pancakes when the tops are bubbly.Continue cooking until the underside is browned and the pancake springs back when gently touched.Pinot Noir Poached Pears This divine way to cook pears is from my first book, Everyone Can Cook (Whitecap Books).Preparation time is 30 minutes; cooking time is 25-30 minutes.Serves 4 2 cups (500 mL) pinot noir wine 2 cups (500 mL) water 1 cup (250 mL) sugar 1 cinnamon stick 2 whole cloves 1 teaspoon (5 mL) vanilla extract 4 slightly under-ripe, medium-sized pears Whipped cream and mint sprigs for garnish Combine first 6 ingredients in a pot large enough to hold the pears.Place over medium-high heat and bring to a boil, stirring to dissolve the sugar.Peel and core the pears.(A melon bailer works well to core the pear from its blossom end).Trim a little from the bottom of each pear so it will stand up.Add the pears to the syrup.Cover the pan, reduce heat to medium-low and gently simmer, turning them from time to time, until pears are just tender, about 15 to 20 minutes.Remove from the heat and allow to cool in syrup, turning them over occasionally.Use a slotted spoon to transfer the pears to a plate, standing them up.Store in the fridge until needed.To make the sauce, boil 11/2 cups (375 mL)of the poaching liquid until it is reduced to 1/2 cup (125 mL).Cool to room temperature and refrigerate until needed.To serve, spoon a little sauce on a dessert plate.Place pear in the centre and spoon or pipe whipped cream alongside.Garnish with mint.Note: Leftover poaching liquid can be saved and stored in the fridge for another use.I like to use it to moisten cake pieces when making trifle or to poach other fruits, such as peaches or apricots.Can West News actress Stephanie McNamara are quick to say they don’t think so.Mahtani admits that the show’s reputation is a bit daunting, but he stresses that he and the entire cast are very excited about the opportunity to present such a big show in the Eastern Townships and “hopefully we’ve captured the flavour.” McNamara, a Montrealer trained at the McGill Conservatory of Music and the London Academy of Music and Dramatic Arts (LAMDA), is also full of enthusiasm.“I wouldn’t call it pressure,” she says, adding that for her it’s a “real gift” to be able to perform such an interna- tional crowd-pleaser in the Eastern Townships.The cast is made up of talented and experienced Canadian performers.McNamara has been in musicals across Canada, England, and the U.S., including The Turn of the Screw, Evelyn Strange, and The Importance of Being Earnest at Theatre Lac Brome.Cyndi Car-leton is the back-up singer for world-famous Elvis tribute artist Stephen Kabakos and has been in several productions in Toronto.Shaun Toohey is a regular performer on the Ottawa theatre scene.Dominic L’Orange was in the French world-premiere of Chicago and is now making his English debut.“The universality of the play is what speaks to me, it is something we can see in real life, pushed to the extreme sometimes”, remarks L’Orange.McNamara agrees, noting that the show tells stories “which, to a greater or lesser degree, we’ve all lived through.” Because the cast is composed of four actors who each play several characters in stories arranged around the same theme — the whole gamut of romantic relationships — Mahtani explains that the show combines elements of a cabaret musical revue and a book musical.Mahtani thinks this blend of great songs, over-the-top storylines, and hilarious situations will appeal to every- one, of all ages and both genders (yes, even men, Mahtani insists).The show runs June 22 to July 10, with 8 p.m.showtimes, Wednesday to Saturday, and matinées Wednesdays at 2 p.m.and Sundays
