TALK OF rr< THE/ • lownsnips The Weekly Guide to Arts & Entertainment in the Eastern Townships January 7-January 13, 2000 Vs- SSaMi x Work by Bishop’s prof shortlisted By Catherine Dean Record Correspondent Regarding Fauré, edited by Bishop’s University music professor Tom Gordon, made the short list of the 1999 Prix Opus, given by the Conseil Québécois de la musique.This is the first time an English book has been awarded such an honour.Gordon described the genesis of the book.“It’s a complete Bishop’s story.1995 was the 150th anniversary of Gabriel Fauré,” he said.“He was the teacher of Ravel and was a very important French composer at the end of the 19th and in the early 20th century - a very influential, very important composer whose music I have always loved as a musicologist.I had never done any research on his work and it became a personal project to get to know more about Fauré and his work.I decided to invite everyone who had written something about him.It was the only sesquicentennial conference on Fauré.It was held at Bishop’s University in May of 1995 and enjoyed the participation of scholars from France, England, the United States and across Canada." Fauré is probably best known for his romantic work in the late 19th-century.“His best known work is a setting of The Requiem,” Gordon said.“Many composers - Mozart through Verdi did settings of The Requiem.Fauré’s is distinctive because it leaves out hell and retribution and looks at Paradise and the welcoming of the angels.It is set in the most sensual music you could imagine, which is why it is one of the most frequently performed of the requiem settings.” Fauré’s work was not elitist.“His songs were written so they could be performed well by amateur singers instead of by professional opera stars,” Gordon said.“Fauré says in his letters that they put too much emphasis on their technique.He was extremely popular with music lovers, but not with musical performers.” Though Fauré’s early music was considered more traditional, his music of the early 20th century was as avant-garde as that of Debussy and Ravel.“Everyone who contributed papers (to the conference) did so in light of the anomalies of the composer loved by am- PERRY BEATON/SPECIAJL Gabriel Fauré ‘was the teacher of Ravel and was a very important French composer at the end of the 19th and in the early 20th century - a very influential, very important composer whose music I have always loved as a musicologist.' ateurs and ignored by professionals who wrote music a lot of amateurs would find too weird and too adventurous,” Gordon said.Gordon and the other participants were particularly pleased to welcome scholar, Jean- Michel Nectoux to the conference.“Jean-Michel Nectoux is the world’s foremost Fauré scholar and has remained close to the Fauré family.Over the last 30 years, he has published Fauré’s correspondence, critical writ- ings on his music, edited his music for republication and has added an evermore comprehensive biography of Fauré.Not only did he write one of the best essays in the volume, but he brought with him two young performers who did a series of concerts during the conference.At the conference, he came to everyone’s paper - it was like a scholarly laying-of-hands,” Gordon enthused.Gordon’s next project will examine the work of French writer Jean Cocteau.Donation Luc LaRochelle: A history of photography The Bishop's University Art Gallery presents the exhibition Donation Luc LaRochelle: A History of photography through the collection of the Museé des beaux-arts de Sherbrooke.French, British, American and Canadian photographs are included in the memorial exhibition highlighting LaRochelle’s gifts to the Sherbrooke museum.LaRochelle, lawyer, art lover and man of letters, has gathered an important collection of 600 works of art, 300 of which have been donated to the museum.Bishop’s presents the collection of photographs, which offers a glimpse of the history of modern photography.The exhibit runs from Jan.12 to Feb.20.Opening hours are Tuesday to Sunday from 12 to 5 p.m.The opening reception takes place on Jan.19 from 5 to 7 p.m.Look What’s Inside Sherbrooke restaurant L’Arlequin captures the subtle flavours of Europe.Reviews of Crocodile Soup by Julia Darling and Ex Libris by Russ King.A diversity of exhibits to begin year 2000 and discover the book L’amour Mallarmé.The myth that plagues Keanu Reeves and more metaphysical movies on the way.Jim Carrey delivers a stunning performance as Andy Kaufman in Man On The Moon. The affordable eatery is Restaurant L’Arlequin on Belvédère Street in Sherbrooke.Owners Frédéric Paul and Jean-François Ruel specialize in European cuisine and each mouth-watering dish tastes as good as it sounds, all delivered with style and substance by chef Christian Fréchette and sous chef Mariejosée Dodier, who did a magnificent job the night my companion and I ate there.The owners obviously adhere to the principle that a few main dishes done exquisitely is better than the mediocrity that inevitably faces a small restaurant that attempts a great number of dishes in the name of offering selection.L’Arlequin has about 15 main dishes served in the evening, but they are so brilliantly prepared one misses nothing.And there is enough variety in the main courses to please even the most discerning tastes.But let’s not get ahead of ourselves.A good meal must be savoured from the starter.We begin with the soup.It must be said that most restaurants unfortunately do not make a good soup.My experience has been that soups in local eateries are either watered down or so thick with corn starch they are inedible.Either way they are bland.This is not the case with L’Arlequin.The Velouté de poissons is an excellent fish soup, very smooth and creamy with a little punch to it.My friend’s Potage du marché, the daily soup which tonight was Crème de legumes, was also light and smooth.Both were served in perfect, modest portions and left us in anxious anticipation of the delicacies to come.The appetizers were also delicious and refined.The Quenelles de chèvre frais aux deux sesames grillés was an attractive dish of creamy goat’s cheese formed to look like honeycombs covered in black and brown grilled sesame seeds.The delicate cheese was served with tomatoes, cucumber, salad which included the eyecatching kale, and a creamy white house dressing.The Salade de thon frais et fines herbes was a delightful surprise featuring tiny chunks of fresh tuna - the real thing - veggies and olives around the plate.If these were just the appetizers, imagine the meals.The delicate odours of the triumphant main dishes preceded them to our table and started our juices flowing.The Rosette d’agnéau à la crème de brie et miel was a lamb dish that simply melted in the mouth.Tender slices of lamb were served with an excellent subtly sweet and sour dark sauce.It was served with puréed beets, herbed potatoes and al dente veggies.The Aguillettes de canard aux noix d’acajou et érable followed the lead of the lamb.It was a fabulous, tender duck dish covered with ground walnuts and a pleasant maple sauce.It came with the same fine accompaniments.We decided to try some cheeses and were served a varied selection including Le bénédictin, a blue cheese from St-Benoît-du-lac; Le Biquet, a goat’s cheese from Chesterville; and Le Victor et Berthold, made with unpasteurized milk in Notre- Dame-de-Lourdes.They were elegantly served with pears, apples, oranges and starfruit.By this point, we expected the desserts to be exquisite and were not disappointed.The Gâteau mousse au chocolat et Grand-Marnier was a sublime, smooth creation that would satisfy any chocoholic.The pièce de resistance was the Mille-feuille aux amandes, Cappuccino et Tia Maria, in which the layers of light pastry were covered with bars of real chocolate and almond paste, with just a hint of coffee and Tia Maria.Simply amazing.The coffee was bold and punctuated the meal with the confidence expressed throughout the evening.Two table d’hôtes, not including gratuity, costs around $68.Other mouth-watering dishes on the table d’hôte include Fricassée de ris de veau et foies de faisans à la coriandre et olives; Éventail de boeuf et foie gras à la grenobloise; and Portefeuille de thon rouge et langoustines à la florentine.A seven-course Menu Gourmand is offered for around $34.50 and an eight- service Menu Gastronomique will cost you $42.50.They are also open for lunch and nine daily specials cost between $6.95 and $13.95.Often the service at a restaurant is simply an afterthought for the owners, but at L’Arlequin, they take pride in catering to the every whim of their clients.They’ve got it right off the bat, with water glasses waiting on the table for customers, but only on the reserved tables for a most personalized service.And when the charming waitress didn’t know the answer to our question about what a Filet de vivanneau was in English, she phoned and promptly returned with the answer, Red $napper.Frédéric Paul and Jean-François Ruel have taken everything into account to create one of the finest dining experiences one can have.Make your reservations now.9 • • • • Restaurant VArlequin is located at 875 Belvédère South in Sherbrooke.Tel: (819) 573-2818.It is open Tuesday to Sunday from 5:30 to 9 p.m.and Tuesday to Friday from 11 a.m.to 2 p.m.You read about our breakfasts.NOW TRY OUR SUPPER MENU!
