fine dining is a Townships tradition Rediscovering lost recipes during Embassy trips Claire Carbonez, wife of the Belgian ambassador, displays vol-au-vent prepared by embassy chef Arsene Delrue for the annual WaterCan fundraising dinner.V ' clTf ' ' ¦ ‘ S0UTHÀM By Ron Eade Southam News Every so often a once-loved recipe falls out of favour in my kitchen and, with the passing of time, I forget how darned tasty and easy it is to make.Forget, that is, until I rediscover the dish and fall in love with it all over again.Which explains why I’ve been making a lot of vol-au-vent pastry lately, after stopping by the official residence of the ambassador of Belgium.There, I caught up with Belgian chef Arsene Delrue as he put finishing touches to this vol-au-vent dish he’ll be serving at the annual WaterCan embassy dinner to raise money for potable water and sanitation projects in developing countries around the world.This is the main WaterCan fundraiser of the year involving more than 40 embassies who provide food, beverages and entertainment.Last year, WaterCan raised almost $70,000.Among the enthusiastic participants is Belgian ambassador Luc Carbonez and his wife, Claire Carbonez.“It’s a wonderful opportunity for embassies to bring their foods and promote their culture and cuisine,” says Carbonez.“In our case, we always bring our Belgian beer.And it’s the same with Belgian chocolates - the beer and chocolates are very popular.” This year we’ve also asked the Embassy of Thailand for a peek at what it will provide.At the residence, chefs Varaporn Akravitayapoom and Duan Moore prepared this recipe for Phad Thai, which is an easy-to-malce prawn/shrimp dish with rice noodles, vegetables and seasonings.(Do not try to substitute pasta noodles for rice noodles, which will affect the texture.) “Pad Thai is frequently served at restaurants, but at home it’s a dish for special occasions,” says Akravitayapoom.“It’s very delicious with flavours working together -sweet and sour, a little spice.It’s easily prepared and comes together quickly.” “We served this at WaterCan last year and it disappeared within 15 minutes,” says Pitch Sookmark, of the Thai embassy.Vol-au-vent is also a must-try.It is essentially a puff pastry shell that resembles a pot with a lid.The pastry is usually filled with a cream sauce-based mixture of chicken, fish, meat or vegetables.The puff pastry lid is set on top of the filling.This dish may be served as an appetizer or an entree.Delrue suggests home cooks use frozen puff pastry shells available in grocery stores rather than make their own.“It’s easy, and there are no surprises,” he says.(Of course, if you’re ambitious, go ahead and make it from scratch!) Also available are premade puff pastry vol-au-vent shells at the supermarket, but in my experience these are not as good.The nice thing about this dish is, it’s great for leftovers.At home, I toss in leftover chicken chunks along with, say, mushrooms.You may also use leftover ham - either way, it’s an elegant way to recycle food that might otherwise wind up in an ordinary sandwich.“I make these frequently at the residence.You can vary the meat, from chicken to seafood - even mussels,” Delrue says.“It’s very simple and inexpensive to make.You can actually serve four to six people for about $20 and that’s it.” Serve vol-au-vent with simply prepared asparagus or a green salad to complete the plate.Gee, who said you have to use exotic ingredients to eat well?Vol-au-vent From: Arsene Delrue, chef at the Embassy of Belgium residence (Serves 4 to 6) 1 chicken, about 3 pounds (1.5 kg) 1 bouquet garni (2 sprigs thyme, parsley, 1 bay leaf, tied together with twine) 4 tablespoons (65 mL) butter 1/3 cup (75 mL) flour 3 cups (750 mL) chicken stock Salt, pepper, grated nutmeg to taste 3 tablespoons (50 mL) white wine Juice of 1/2 lemon 1/2 cup (125 mL) heavy 35-per-cent cream 2 egg yolks 2 1/2 cups (625 mL) fresh mushrooms, sliced 4 to 6 vol-au-vent puff pastry shells (frozen, or pre-made) Fresh parsley, to garnish • In a large pot of boiling, lightly salted water, simmer chicken with bouquet garni until tender about 45 minutes.When done, remove chicken and set aside to cool, then peel off skin and cut chicken meat into cubes about 1/2-inch (1-cm) thick.• To make the sauce, in a saucepan on medium heat melt butter and stir in flour, whisking until foamy to make a roux.Do not brown.Whisk in chicken stock and gently cook a few minutes to thicken slightly.Season to taste with salt, pepper, a pinch of nutmeg; add white wine and lemon juice.In a separate bowl, mix cream with egg yolks and add to the sauce, whisking to incorporate well.Add the cubed meat, mushrooms to the sauce.Bake frozen vol-au-vents puff pastry shells in the oven at 365 F (185 C) until they rise and turn golden, about 12 minutes.If using pre-made shells, simply heat until warm, then fill pastry shells with the chicken/sauce preparation.Garnish with snips of fresh parsley.Phad Thai From: Embassy of Thailand (Serves 2) 2/3 cup (150 mL) vegetable oil 2 teaspoons (10 mL) garlic, finely chopped 3 to 4 prawns, medium size 10 ounces (285 g) rice noodles, soaked in warm water for 15 minutes 1 tofu or bean curd cake, about 5 ounces (125-g), sliced into pieces 3 tablespoons (50 mL) sugar ‘ 2 tablespoons (25 mL) fish sauce 1 tablespoon (15 mL) tomato ketchup * 3 tablespoons (50 mL) tamarind juice 2 eggs 1 cup (250 mL) bean sprouts 2 green onions, cut into 1-inch (2.5-cm) long pieces 1 tablespoon (15 mL) dried shrimp 1 tablespoon (15 mL) ground roasted peanuts * Available at East Asian food stores • Heat 3 tablespoons (50 mL) of oil in frying pan.Fiy the garlic and add prawns.Cook just until prawns are pink, then re move from pan and set aside.Add noodles.Keep turning the rice noodles constantly to prevent sticking.Remove when noodles are done.• In a frypan, heat another 3 tablespoons (50 mL) of oil and fry the tofu for 2 to 3 minutes.Add the rice noodle mixture and stir.Add sugar, fish sauce, tomato ketchup and tamarind juice to the noodles.Keep frying until the noodles turn red, about 3 to 5 minutes, then remove from heat, place into a bowl and set aside.• Put another 2 tablespoons (25 mL) of oil into the pan.When the oil becomes hot, break 2 eggs into the pan and scramble.Spread the egg over the pan, then return the noodle mixture to the frypan and mix together well.• Add half of the bean sprouts and green onions to the noodles.Mix thoroughly and will host a BBQ.at its Saturday, May 11 jam session.The special season’s finale will commemorate the society’s 10th anniversary season of bringing traditional bluegrass and “old-tyme” country music to the Townships.The jam session will take place from 1:30 to 5:30 p.m., followed by the dinner between 5:30 and 6:30 p.m.At 7 p.m., an evening of music will be provided by Eastern Townships bluegrass band Last Chance, who will open for 40 West.40 West is a familiar band to TSBOTMS members.The group has been a featured band in the society’s winter soncert series, as well as a guest band at its popular Christmas concert.The Ottawa Valley band features Dave DeVries (guitar, bass, lead and harmony vocals), Steve Hanes (five-string banjo, dobro, acoustic bass and harmony vocals), Bill Lansdell Mav 12 - 8 am to 4 pm Championnat de volleyball cadet de l'Est du Canada - 2002 May 12 - 1 om to 2 pm Organ Concert at the Cathedral Paroisse Saint-Michel Site : Cathédrale Saint-Michel Mav 12 - 4 pm to 6 pm Targuiya by Moussa Diagana Aine de jeu - delegated producer Site : Mont Notre-Dame (^] Desjardins 10* % Mo-qu^boc Canada School: Cont’d from Page 1 “We were helped by the church and sent there.And thank God—we had such a lovely life there,” she said.Falconer, who was the youngest of four sisters to dwell there, said that it was at BMH that she found the support she had never known before.“It was like a big family, really.We always had good things to eat, good clothes to wear, and a lot of playmates because there were 18 girls there at the time.” The girls certainly had fun together, and sometimes maybe a little too much.“We never used to get in any.well, too much trouble,” recalled Linda Durocher, Falconer’s elder sister.Said Cass: “Like the young kids that we were, we used to try all kinds of antics.A few of us did get into trouble from time to time, but nothing more serious than losing our dessert.” Falconer, who sounds to have been a less mischievous child, emphasized the solid grounding BMH gave them all.“We weren’t aloud to run the roads.We had responsibilities and study times, a structure we followed,” she recalled.“For me, it gave me a good founda- tion in life,” said Cass.“If it hadn’t been for that training, I would probably have stumbled along, because I was doing just that when they found me.It could have been terrible.” But stumble she didn’t.Having learned about caring in their surrogate home, both Cass and Falconer went on to become nurses.Years later, Cass had the opportunity to return the kindness she had received when she nursed Miss Carter, “everyone’s favourite BMH matron,” at the Sherbrooke Hospital.As for the building itself, how could one not feel lucky to live in such sumptuous splendour?“I always wanted to own that place because it’s so beautiful— the fire places and hardwood floors and so many windows,” said Falconer.The City of Coaticook does a superb job of maintaining the edifice with fresh paint, impeccable floors, and outdoor repairs that render its age evident only through its design, not its condition.Starting next week, a photographic-display of the BMH years at the Norton residence will be on view in the Musée Beaulne.And, if you listen carefully when you go, you’ll hear the ancient echoes of laughter from happy little girls who know now, if they didn’t then, just how lucky they are to have called that place home.Some of the Bishop Mountain Hall girls get together for a picture in the 1950s.Some of the Bishop Mountain Hall girls get together for a picture in the 1950s. City’s Carnegie Hall is one of the more prestigious concerts halls in the world — one that many performers only dream of playing at.At 11 years old, pianist Marika Bournaki has not only accomplished that, but has also played with the world renowned Montreal Symphony Orchestra and McGill Chamber Orchestra.“It was a gala concert,” she said.“It was in levels, and I was in level nine solo.The people in that category with me were 14 and 17 years old.” Now, the young musician will bring her international experience to the Townships, as Bournaki is scheduled to perform at St.Elizabeth’s Church in North Hatley as part of the Festival du Lac Massawippi on Sunday, May 12.Having started playing piano at the tender age of five, Bournaki’s mother Jocelyne Caumartin said that it only took her daughter two years to decide to pursue a career as a pianist full-time.“She would really like to travel and play with big orchestras,” she said.“She has her breakfast, practices for 45 minutes, goes to school, practices there and practices again at night.“Our two other children are also involved with music.My son plays the cello and my youngest daughter plays the violin like her father.” It is a love for art and dedication that Bournaki said sustains her skills as a piano player, explaining that she usually aims for about three hours of practice per day.She added that she also has an appreciation for ballet, attending classes on Mondays and Wednesdays.Although school is out in June, Bournaki will have busy summer ahead as she will travel to Romania to compete in a competition, with return performances in Cincinnati and various parts of Canada As for her Sunday performance, Bournaki said she enjoys all of the pieces chosen, particularly a Beethoven selection.“Of the program I’ll be playing I really love Beethoven.I will be playing the Sonata Opus 13 (Pathe.),” she added.“I chose almost all of the pieces that I will be playing.They are pieces that I have learned this year.” Other composers of note that are on the program are Bach’s Prelude and Fugue No.21, Chopin’s Nocturne, Opus 55 No.1, in addition to pieces from Scarlatti, Schumann and Mendelssohn.Bournaki Marika Bournaki.All Skanadian Tour HI starts in Sherbrooke By Tricia Davidson Record Correspondent Sherbrooke Moving, grooving and dancing are in order as the third edition of the All-Skanadian Tour III begins its cross country tour with a stop in Sherbrooke on May 15, ending, in Montreal a month later.Chris Murray, The Kingpins and General Rudie are on the bill for Wednesday night’s concert.Since 1997, General Rudie has been playing ska, consistently refining the craft though personnel changes and numerous live concerts.Added to that, the group now has a recording under their collective belt after recently releasing Cooling The Mark.“There are lots of surprised in a live show.We do a lot of different stuff and we go with the jazzy, improvisational side of ska and it also goes on the crowd, how they’re feeling and what they want,” explained Phil Dixon, lead vocalist, sax player and an original member of the group.On Wednesday, Dixon will be joined by bandmates Mike “G” Gasselsdorfer on drums, Nicky “Six-Pack” Popovic on trombone, Stefan “Popo” Popowycz on bass and backing vocals and Marc Thompson on keyboards.The lead vocalist explained that although there have been a fair number of changes within the band over recent years, all of the changes have been amicable with people parting on good terms to pursue different interests.“We started writing songs two summers ago, the summer of 2000,” Dixon recounted.“We got them all done by De- cember 2000, worked on the songs, recorded in summer of 2001 and it was out in October 2001.“The album is kind of a journey.There is a definite flow going on if you compare the first 7 songs to the last.I like ‘All That’ — that one kind of sums up things, and the ending of‘Rickshaw Ride’ gets a little kooky.” The Stomp and biographies to cookbooks and beyond, there's nothing like a good read Richard Nixon: A fascinating character Richard M.Nixon, the former U.S.President, was a fascinating man.Remembered for the Watergate, this politician was far more than an adept of dirty tricks.He made his was to the top with a combination of ambition, pragmatism and hard-work.If it was only that, he would be like many politicians.But there was much more to the 37th President of the United States.In author Richard Reeves’ last book, President Nixon: Alone in the White House, he comes to the ‘most politician, good and bad, Between The Covers Marc Nadeau conclusion that are men who can’t stand to be alone.Nixon did not like to be with people.” It may well be the basis on which Nixon should be understood.One of the main conclusions of ‘Alone in the Whitehouse’ is Nixon wanted to be isolated from most of his staffers and cabinet members.Most of the time, he locked himself up in either EOB 175 (Executive Office Building, close to the White House), his hideout in Washington, at Camp David or at his houses in Key Biscayne or San Clemente.To write this book, Reeves used numerous recorded conversations useful.Like some other Presidents, Nixon was not fascinated with domestic politics.“On domestic matters, Nixon was willing to pander to Congress.On foreign policy, he tried to deal with both the people and the people’s elected representatives on a “need to know” basis,” Reeves says.This being said, we can mention that Nixon had a special — unique, in fact — relationship with Henry Kissinger.Most of the time, Secretary of State William Rogers was kept out of the loop, to his frustration.To sum up: “Nixon and Kissinger had gotten the business of the national security of the United States down to a two-man operation.” One of the culmination points of this matter happened during the talks leading up to Nixon’s trips to China and USSR.This being said, Nixon was an adept of triangulation before it was popularized by Bill Clinton.Through his policies, he reached out to Democrats.For instance, like Reeves notes “many on the right felt betrayed by Nixon, who was orchestrating a humiliating withdrawal from Vietnam, was reaching out to communist China, and had installed wage and price controls and advocated guaranteed incomes for poor people.” This kind of situation would torment other Republican Presidents in the future.In that sense, a former Kennedy man, Daniel Patrick Moynihan, came to the White House to become his assistant.It was also true of John B.Con-nally, a former aide to Lyndon B.Johnson and former Governor of Texas, who came to Washington to become Treasury secretary.He later organized the “Democrats for Nixon” in the 1972 President comments Nixon made concerning the Jews.He was harsh — most of the time too much — with this group.But he did not seem to care.Why?Since “the Jews voted 95 per cent against me”, he said.Finally, it may be said that Nixon’s career was made with the assumption that he got “up every morning to confound my enemies”.The former President actually said that to Bob Dole, the long-time serving Republican Senator — and later Presidential candidate — from Kansas.President Nixon felt beleaguered.One can come to think that this attitude may well have been determining in his fall.)
