Spiliadis's goal has quickly become a reality.In its first year of operations, his New York restaurant, Estia-torio Milos, received rave reviews and was listed as one of New York's top 10 tables by Wine Spectator magazine - no mean feat in North America's most competitive restaurant city.Of course, there were other good reasons to test new waters."New York's Fulton Fish Market, the best fish market on the Eastern Seaboard, has always been a good source for fresh fish and seafood," he says."And unlike Montreal, where I can receive fish by air directly from Greece only twice a week, flights from Greece arrive in New York daily." n Specialties • Italian • Seafood • Steak • Breakfasts 4364 Bourque Blvd.Rock Forest (819) 564-2272 restaurant Private Room for Receptions ,p t° gUe8tS 819/563-1277 Restaurant HOME-MADE PASTAS ITALIAN CUISINE DA LEONARDO Your hosts Christianne and Giampiero 332, rue Marquette Sherbrooke, QC J1H 1M3 By reservations only (819) 583-4184 185 Range 5 North Marston, QC ^faring your wine d{elax by candlelight Costas Spiliadis poses in Estiatorio Milos, the Greek restaurant he opened in 1997 in midtown Manhattan.Still, the New York operation does rely on a few deliveries from its sister restaurant up north.Spiliadis quickly discovered that Canadian flour was essential in producing the crispy coating needed for Milos's famed calamari.As in Montreal, his oregano comes from the Quebec company Fines Herbes Daniel, which grows it from seeds he brings back from Greece.Thick, creamy Mediterranean-style yogurt, the base of Milos' luscious, honey-drizzled dessert, is imported from Ontario.And though Spiliadis is complimentary about New York's fruit and vegetables, so exacting is he about quality that he insists on importing certain European ingredients available only in Montreal.When Estiatorio Milos first opened in July 1997, staffing was a bit of a problem.Old attitudes and ways of doing things die hard, and seasoned New York waiters weren't always willing to see things in a new way.In addition, there's a big demand for competent waiting staff in a vast city like New York, which creates a highly competitive atmosphere in attracting and keeping the best."It has been a hard route to finding good people," Spiliadis recalls."I decided it was better to train staff with little previous experience.That way, they come to understand my approach, especially because of the uniqueness of the Milos philosophy.Fortunately, I now have a strong team and everybody's happy." How do New York patrons differ from Montrealers?Both restaurants attract an upscale crowd, but Estiatorio Milos has a larger Greek clientele.Society figures and celebrities - from Sid Bass to Woody Allen - are regular customers, perhaps seeing the simple cuisine and unpretentious approach as a refuge from the usual scene."In New York, since cost is seldom an issue, the less-expensive fish popular in Montreal, like black sea bass and red snapper, don't sell well," Spiliadis remarks."The customers are attracted to more exotic, European varieties, like loup de mer, dorado and langoustes." Spiliadis considers his restaurants like children and tries not to play favourites.However, his newfound success in New York has undoubtedly rejuvenated his vision.Lately, rumours have been circulating about subtle changes in the flagship Montreal restaurant: gone are the checkered tablecloths, and cutlery and plates have been upgraded.Spiliadis says: "I was feeling bold, so I decided to make a few subtle changes in Montreal without destroying the past or alienating my customers." As it turns out, Montreal played a key role in this New York success story."I underestimated the impact of the Montreal restaurant," Spiliadis says."Rightly or wrongly, New Yorkers have an admiration for Montreal as the capital of gastronomy in North America.The reputation of the city and my restaurant worked miracles.It was the key to fast success.The connection was very favourable." Plans for expansion - two more restaurants in the U.S.and others in London and Athens - are in the air.And though the future looks bright for the Milos empire, Spiliadis claims his soft spot is for Montreal."Eating out in New York is exciting, but the thrill fades quickly.To me, the Montreal dining experience seems more solid and well-grounded.When I have a hard day in New York, it's nice to come home to Montreal.” "This restaurant is still my baby." JERRY PIZZERIA Greek & Italian Dishes Daily Menu 'Kit», n or 's SPECIAL OF THE MONTH Entrée: Coquille St-Jacques or Escargot Gratiné .$4.45 Chicken Brochette with 8 Shrimp Greek Style .$8.95 Greek or Garlic Shrimp (12).$9.25 1 Chicken & 1 Pork Brochette (Combo) .$7.65 served with choice of Salad, Potato and Rice 106 Queen St., Lennoxville 569-9381-2 A restaurant where Italian anil Frencfi cuisines fiave been catering to a discriminating clientele for over 30 years.(|Ainî 15 Belvédère St.N„ Sherbrooke (819)346-8441 2655 King St.West, Sherbrooke (819) 822-0050 TALK OF THE Townships — .THE-, ii ¦¦¦'¦¦ ' _______RECORD _ November 10-16, 2000 page 3 Music, dance, theatre and more.Sherbrooke all in the Townships choral event celebrates Bach stage RECORD FILES Members of the Ensemble vocal Amadeus de VEstrie will be performing Johann Sebastian Bach's Mass in B-minor this weekend inside St-Jean-Baptiste Church in Sherbrooke.Considered one of Bach’s best works, it took the composer 15 years to complete.‘Most beautiful and difficult choral work’ - Riegel By Janice Cunningham Sherbrooke What could be the biggest choral concert ever held in Sherbrooke, a joint production between the Ensemble Vocal Amadeus de l’Estrie and the Ensemble Vocal André Martin of Quebec City, is scheduled for this Sunday, Nov.12, at 4 p.m.in the Église St-Jean-Baptiste.In honour of its 10th anniversary, the Ensemble Vocal will be performing Johann Sebastian Bach’s Mass in B-minor, considered one of the composer’s most celebrated works.The concert is also a commemoration of this year’s 250th anniversary of Bach’s death as choirs and orchestras worldwide perform his works in special concerts.“It’s the most difficult choral work ever written,” commented Jutta Riegel, a member of the executive for the Ensemble Vocal, “and the most beautiful.” Riegel, who sings alto for the choir, “and sometimes second soprano,” has been with the choir since it began 10 years ago, including one year as president.The 35 members of the choir come from all over the Eastern Townships and include a mix of francophones, anglophones and residents from other ethnic groups.Although they can handle any kind of music, giving two major concerts a year, their big concerts, when they draw from 1,000 to 1,200 spectators, focus on sacred music such as the Mass in B-minor.“It is the most beautiful mass ever written by anyone,” Riegel enthused.“We chose this piece because it is so challenging in terms of the music and the arrangement.In some places there are six parts and sometimes eight parts.It’s very difficult to sing.” Bach worked on the mass for 15 years, from 1733 to 1748, yet never heard the piece in its entirety.A Lutheran himself, Bach wrote it in Latin for the ordinary Mass, those which are held in any service on any Sunday of the church year.With 15 choral sections, plus soprano duets and instrumental concerti, praise hymns and cantata fragments, the Mass in B-minor is said to be an anthology of Bach’s compositional styles.The choir has been rehearsing the music for a year now and had their first complete dress rehearsal with the 35 members of the Ensemble Vocal André Martin and the professional orchestra two weeks ago in Quebec City.The 25-member baroque orchestra has been assembled from all over Quebec by André Martin, director for the two choirs.The five soloists, all internationally renowned, include Gail Des-marais, Dominique Cimon, Donna Klimoska, Hugues Saint-Gelais, and Robert Huard.According to Riegel, the choir was lucky to get the Église St-Jean Baptiste - as a general rule the church does not hold concerts anymore.“This concert had to be held as a mass in a church,” said Riegel, “and we needed a church that would hold at least 1,000 people.” The Quebec City concert will be held Saturday evening, Nov.11, at the Église St-Roch, following two full dress rehearsals with the five soloists.This week, three members of the Ensemble Vocal in particular have been burning the midnight oil, making arrangements and preparing the pro-grams: Jean Sebastien, president of the choir, Michel Harnois, in charge of promotion and David Dutton, a member of the executive who has put in many hours, according to Riegel, “working through the night to make the concert happen.” Harnois, who is in charge of everything “from gathering information to getting enough chairs,” has been a tenor in the choir for the past 10 years.“Specialists say that it’s the most beautiful mass ever written,” he said.“For us, it’s hard work, but we love it." Tickets are being sold in advance, $30 for reserved seats and $20 for non-reserved.Part of the proceeds from ticket sales will go to the Foundation of the CUSE as a fund-raiser.Tickets are available at: Boucherie James (Lennoxville); taking different elements and blending them together, seeing what I can come up with.” The aforementioned dubuk is the result of a long-desired collaboration between Cook and the world’s foremost dubuk player, Djivan Gasparyan.“I’ve admired Divyan’s work since his collaboration with Peter Gabriel on the Passion soundtrack,” he says.“I remember thinking, ‘My God, what’s that instrument — it sounds like voice or ghost or something!’ It’s such an emotive instrument.” Cook used a Gasparyan sample on one of his songs in 1998’s Vertigo, but wanted to really collaborate with Gasparyan on Free Fall.Gas-paryan’s tour schedule and Cook’s recording commitments looked like the death of a dream — until modern technology made a compromise possible.“I was hoping we could actually work together, the best I could do was send him a tape in Oslo, Norway, and he took the tape into studio on his one day off and sent it back,” Cook says.“I took that tape and worked it into my mix.” That track, “Incantation,” is one of the standouts on the album — the haunting dubuk weaving seamlessly with Cook’s rumba instrumentation.But the standout track on the album — and the only one to get any significant radio play — is a cover of New Zealand popsters Crowded House’s “Fall At Your Feet.” Cook recognizes that the single might generate some confusion over new fans who expect an Spanish-flavoured pop album, but hopes that most people that pick Free Fall up will warm to the instrumentals.“I guess that’s a risk people take .my hope is they will also like the instrumental material,” he says.And, while it’s the only vocal track, “Fall At Your Feet” is an atypical song on an album of nothing but atypical songs.“There are lot of different collaborations with a lot of different people, it’s not like the whole album is one thing and the vocal is something else,” he insists, and if listeners aren’t willing to embrace variety, this album might come as a shock.“People who want Brazilian samba will be disappointed when they only hear two tracks, people who want Djivan Gasparyan will be disappointed when they only find one.” Variety, according to Cook, is the spice of life — and his music.“There’s a lot of different elements and I think of the album as being a kind of world tour, global amalgamation.You get a round-trip ticket around the world and I can only stop in so many Coffee, Tea & Music CAROLINE KEHNE/CORRESPODNENT ¦ W* I On Nov.25, Ron Haynes (foreground), Tom Kilbride and company will hold their monthly open stage at the Stanbridge East Live Music Coffee House.The coffee house takes place at St.James Anglican Church hall at 6 p.m.For more information, contact Ron at 450-295-2269.Also, on Dec.2, Townships Bluegrass will hold its annual Christmas dinner and show at the Waterloo Legion at 77 Lewis Street.Join your friends for a dinner with all the trimmings and a show featuring the 1999 Central Canadian Band of the Year, Hard Ryde, and Bordertown as opening band.Tickets are available from any Townships Bluegrass Director or by call 819-875-5133, November 10-16, 2000 page 5 TALK OF THE Townships i —THE— RECORD A fine selection of museums and galleries make the Townships a mecca for artists and art-lovers Crowds converge on Richmond for craft fair COURTESY MARLENE BROWN Members of St.Anne’s Anglican Church were on hand to raise funds for their Restoration Project.Massey-Vanier Launches Classe-musée CAROLINE KEHNE/CORRESPONDENT Massey-Vanier High School in Cowansville has launched Classe-musée, an exhibit organized by teachers Johanne Allard and Luc Casaubon which portrays episodes in the history of Quebec through documents and historical artifacts.The opening on Oct.27 was attended by Richard Lecours, director general of La Commission scolaire du Val-des-Cerfs, school board representative Martine Dostie and Cowansville Mayor Arthur Fauteux.During the launch reception, MP Denis Paradis presented student Joel Brault with the Governor General's Award for History.The medal is awarded to the student with the highest grade-point average in coursework on Canadian and Quebec history.- Caroline Kehne, Record Correspondent.COURTESY MARLENE BROWN Bessie Mills.one-sided Christmas wreaths are big sellers; ' - page 6 November 10-16, 2000 KHH books From novels and biographies to cookbooks and beyond, there's nothing like a good read Confused narration detracts from story ‘When We Were Orphans’ by Kazuo Ishiguro Pale Hills' and 'Remains of the Day' remain brilliant books by a young writer in total control of language, character and subject material.After writing an acclaimed book, it is said that writers often suffer at the hands of the critics.Unfortunately, Kazuo Ishiguro's next book, 'The Unconsoled,' which might more appropriately have been entitled the 'The Unresolved' was a weak book which suffered from the use of a confused narrator.While the narrator was meant to be deliberately confused, his state of mind flattened the book.'When We Were Orphans' never hits the heights of'Remains of the Day', nor the lows of 'The Unconsoled'.Set in 1930s England, it purports to be a thriller.Christopher Banks, raised in Shanghai, loses both of his parents in a short time between one and the other.He is sent to England to live nominally with an aunt, while being sent to boarding school.Christopher grows up wanting to be a great detective, convinced he can solve the disappearance of his parents.The young man is a loner, longing to fit into English society, yet Christopher is after all, a child of English parents in Shanghai.Once again, Ishiguro introduces the theme of estrangement from English society.It is however an unconvincing aspect of the character.A lovely friendship developed in Shanghai between the young English boy and a young Japanese boy named Akira, dominates Christopher's reminisces.Perhaps if Ishiguro had narrowed his focus to the story of Akira and Christopher, the book might have had a tale to tell.As a well-connected, successful adult, Banks meets the beautiful Sarah Hemmings and inexplicably rejects and pursues and rejects and pursues her, eventually losing her to an older man.This is passive-aggressive behaviour at its height and readers tire of a relationship that is too carefully linked to plot.Sarah Hemmings eventually sets herself up in Shanghai.Banks arrives there during the Sino-Japanese war and strange plot developments ensue, to the complete bafflement and an- noyance of the reader.The realistic detail of the war and the implausible plot developments, many of which are simply told in the last 70 pages of the novel, clash.Ishiguro seems unable to decide whether he wanted to create a fantastic Kafkaesque tale of lost opportunities and disappointment, a thriller, or a realistic evocation of a specific period in the history of English imperialism and war.Ishiguro can be subtle and humorous in his evocation of characters, but in the end, his fine writing is overwhelmed by laughably unreal plot points.A scene between a girl caught in the war, stepping over the bodies of friends and relatives looking to get help for a maimed dog, is just plain ludicrous.One can only look forward to a more subtle tale that would befit the talents of Kazuo Ishiguro.Between The Covers Catherine Dean La Corporation des métiers d’art du Québec en Estrie présente la 114™ édition du Salon des métiers d’ah de l’Estrie TTpr Christmas atmosphere reiÿns at this exhibit and sale, regrouping some SO craftpeoples.November 15th to 19th, 2000 Centre culturel\ university o{ Sherbrooke Wednesday Thursday Friday Saturday Sunday 7 p.m.-10 p.m.12 p.m.-10 p.m.12 p.m.-10 p.m.10 a.m.-11 p.m.10 a.m.- 5 p.m.Admission $2 00 Free for children under 16 Free Parking wr Ajjrnyni ?sss-ÇKSH Atwood as animated as her characters Southam News How did I look?" asks Margaret Atwood upon hearing her mug was beamed the night before into the nation's living rooms.Assured she looked wonderful, many years younger than her official 60 (she turns 61 on Nov.18), she responds in a deadpan voice, "Oh, great.that's the important thing.'1 For anyone hoping Canada's famed lady of letters is as quickwitted and full of shenanigans in real life as she is in her novels, Atwood doesn't disappoint.The droll delivery made famous by the Royal Canadian Air Farce's Luba Goy; the caustic jabs that have led some to label her "Medusa" and the "quiet Mata Hari"; the engaging intellect - in a recent telephone interview with the Calgary Herald, all were on display in full, Atwoodian splendour.Such are the constants we've come to expect from Margaret Atwood, one of the most celebrated Canadian authors ever.Atwood's latest novel, The Blind Assassin, took this year's Booker Prize over five other nominees in London Tuesday night.It was the fourth time Atwood had been on the final shortlist for the prize, still arguably the English book world's most prestigious award.Atwood's quirky character and Margaret Atwood won the Booker Prize.sharp wit aren't the only things expected from the woman described as the Most Famous Canadian on the Planet.Every four years or so, Atwood re-emerges from the shadows of her fiercely guarded private life to once again take up her role as a novelist with few peers anywhere.So it's been with The Blind Assassin (Doubleday), released in September.A tale about the lives of two sisters who come of age in the 1930s, told in the format of a novel-within-a-novel-within-a-novel, starts out with this engrossing line: 'Ten days after the war ended, my sister Laura drove a car off a bridge." The book, which employs Atwood's trademark mischievousness and superior sense of storytelling, debuted on Sept.2 at the top of Canada's best-seller lists and has remained in the top 10 ever since.The Blind Assassin has been largely feted in the critical press.The Times of London called it "among the very best:" Newsday declared it "the first great novel of the new millennium;" in the New Yorker, John Updike gave an admiring and respectful notice; and Michiko Kakutani of the New York Times said the novel "showcases Ms.Atwood's powers and her ardent love of the Gothic." But it was a review by Thomas Mallon in the New York Times Book Review, eloquently described by one member of the press as a "horse whipping," that earned the greatest notice.Mallon, who holds a PhD from Harvard, called the book "flat as a pancake," and "over long and badly written." TALK OF THE Townships November 10-16, 2000 page 7 A world of adventure, comedy and drama awaits movies Schwarzenegger would be happy to be cloned SOUTHAM NEWS Arnold Schwarzenegger.cloning is controversial subject.i * By Jamie Portman Southam News Beverly Hills, Calif.Arnold Schwarzenegger sees it this way: if Dolly the Sheep can be cloned, why shouldn’t he be cloned as well?You think for a moment that Amie is kidding.But he’s not.“I would have nothing against cloning myself," he says.He’s sounding very precise and deliberate.“I think I would feel perfectly fine with that.” Mind you, Schwarzenegger might get an argument from the character he plays in his new futuristic thriller, The Sixth Day.The Nov.17 release casts him as an old-fashioned family man who comes home one night to discover that his life and family have been taken over by an identical clone - a situation which plunges him into a nightmare of corruption, murder and high-tech skullduggery.One major plot twist involves the fact that he’s been cloned by mistake and therefore must be exterminated by powerful agencies determined to keep their experiments a secret.As a result, he finds himself in confrontation with ruthless assassins who are indestructable because they can be cloned over and over again if they are killed.Schwarzenegger admits that cloning is a controversial subject.He also argues that The Sixth Day is only a movie whereas he’s now talking about a potential real-life situation in which he, Arnold Schwarzenegger, is given the opportunity to be cloned of his own free will.And he insists he wouldn’t mind at all.“The big difference, of course, is that in the movie, the guy did not know about it.So it becomes a painful experience to see a second you in your family life and to have someone trying to take your own life.“But I think that if you do know and you ask to be cloned.to me that’s totally acceptable." Producer Mike Medavoy quips that more than one Arnold Schwarzenegger would serve the star’s agenda: “He sees himself playing golf and taking care of the kids at the same time!” Schwarzenegger recalls the day some high-pressure salesmen walked into his office near Venice Beach and tried to get him to invest in a new company being set up to clone household pets.Schwarzenegger doesn’t say whether he gave any money to Genetic Savings And Clone which has proudly labelled itself America’s first all-inclusive pet-cloning enterprise.But it’s no coincidence that one of the sub-plots of The Sixth Day involves the cloning of the dying family dog by a company called “RePet.” “This particular technology is develop- ing very rapidly,” Schwarzenegger says.He talks fervently of the potential importance to “zoos around the world” of companies like Genetic and of the controversial $2.3 million Missyplicity Project with its plans to clone a mutt named Missy.He approvingly sees a solution to the problem of endangered species: “If they needed a tiger or a panda or whatever, people would be able to duplicate it exactly.” None of this appears to make Schwarzenegger uneasy.“I understand there are people who are concerned, but I think a lot of these people are confused about cloning and genetic engineering.” Schwarzenegger notes that the billionaire villain played in the movie by Tony Goldwyn does have some “valid” arguments in favour of cloning - for example, using the process to save a youngster with an inoperable tumour.But he is also plotting to use the same technology to take over the world “to genetically alter things so you die after a few years .I think that’s what bothers people the most.“What the movie is saying is that with anything that’s developed, anything that’s new, it could go into the wrong hands.It’s like the development of nuclear weapons, nuclear energy, the Internet, all those things.” Schwarzenegger says the Internet is frequently abused but that lawmakers are “way behind” in finding laws to protect people from such abuses and that it will take them years to catch up.He predicts the same scenario for cloning, and says that eventually countries like the U.S.will have “to cave in_there’s no way that with 190 countries in the world, everyone will say no to cloning.Something’s got to develop.” Schwarzenegger’s endorsement of cloning gets a mixed reaction from his costars.“I’d love for Arnold to be cloned,” giggles Australian Sarah Wynter who plays a clone herself - and a lethal killing machine -in the movie.“Wouldn’t it be great?” She figures two Arnolds would be far better than one.“He’s big.He’s loud.He has a big personality.” Canadian Wendy Crew-son, who plays Schwarzenegger’s wife, disagrees.“It boggles my mind.Why do we need to clone anybody?” She concedes she has strong views on such matters: “I even think it’s morally and ethically wrong to tape a TV show.” “Cloning makes me very nervous,” says actor Tony Goldwyn.“It is a very frightening proposition.” He admits that “biogenetics is the industry of the century.but I think cloning crosses the line and takes us down a very slippery slope.” Medavoy, a veteran producer whose past outings include Platoon and Robo-Cop, says that he was driven to make the movie because of his genuine belief that cloning of humans is inevitable despite the “moral and religious issues” it raises.“I figured I’d do the three things I like doing when I do movies.I want to entertain people.I want to make them feel something.I want to have them walk out of the theatre thinking so they’re also using their brain.“I get tired of movies where there are a lot of explosions that have absolutely no connection to anything,” Medavoy adds.He shot the movie in Vancouver and says that in so doing he shaved $20 million US off a budget which nevertheless ended up costing a reported $85 million.So what about using cloning to perpetuate Schwarzenegger forever as a screen star?“That’s an interesting notion,” Medavoy replies, treating the question seriously.“I don’t know whether that’s possible.I mean - would you like to live forever?” Meanwhile, how does Schwarzenegger feel about the upcoming release of The Sixth Day?It seems he’s nervous - but he says that’s par for the course.“Even when I was competing in bodybuilding and really felt 100 per cent that I was going to win, I was still totally nervous about it.You go through that, and it was the same with this movie .the same with every movie.You always hope for the best.” But he does consider The Sixth Day to be a movie for the entire family -
