chicken goes a | way in a rich and filling old Louisiana Creole specialty. An equally good gumbo may be made with the leftover meat and carcass of a roast chicken or turkey. The old French cooks never wasted a thing, and a fine gumbo followed a family feast of roast game birds or poultry just as surety as sun-up.Many Louisianians, particularly those of the northern sweet-pota- to growing areas of the state, are fond of eating their poultry gumbo over baked or boiled yams, and this will prove a real treat to the uninitiated.Yams with Chicken Gumbo (Serves 6) One chicken (2-3 pounds), cut in pieces, seasoned, 1, cup fat, 4 cup flour, 1 cup finely chopped onion (if green, use tops), 1 cup chopped parsley, 2 quarts boiling water, 3% teaspoon thyme, 2 small bay leaves, 1 teaspoon salt (more dark brown “roux,” or foundation gravy.Add onion, parsley; cook 2 minutes.Reduce heat; return chicken to pot; add boiling water.Cover tightly; simmer over low heat until chicken is tender.Add thyme, bay leaves, salt.Remove the meat from larger, bony pieces, if desired; return meat to gumbo and get it hot.Add the file and stir; turn off heat.Cut yams in halves and place in soup Dr.James Tells Westmount Club In a special Armistice Day address to the Westmount Women's Club, Friday at Victoria Hall, Dr.F.Cyril} James reflected on the) progress of the world s Bince.… the 1914-18 war.The Principal and Vice- Chancellor of McGill University, and nationally prominent figure in the’ fields of education and social welfare, pointed out that the magic of the day commemorated was the: confidence and sincerity of our hopes. We believed, he said, that we nad_ just finished the war to end all war, and that henceforth the world would be a much finer place for the heroes to live in.But now, with World War II and.the present cold war intervening, ‘human beings are embarrassed by re memory of these.hopes, and ashamed that there was a period in our lives when we actually believed such things.” The speaker maintained that we must not feel this way, for what we meant was that the world would be more fit for the common man, He stated that “the world is more comfortable for that one-third of the population which was least well off.” It is easier, Dr.James told the club, for the poorer Lo get an education and to progress as far as.their talents will allow. And more is dome, he pointed out, for the sick and homeless, than was done in 1914, with increased attention - to pensions, baby bonuses, and other social welfare funds.Dr.James commented on the great advances made in ihe cause of human freedom and tolerance among the races, and cited the new self-governments of India, Pakis- lan, and Israel.“Even in spite of the failure of the League of Nations, the basic idea is still there,” the speaker contended, and noted how well the United Nations Army was defying an aggressor at the moment.“There is much to do, and far to go’, the speaker warned.“but we need not be ashamed of the ex- ient to which we have gone in the past 34 years.” Mrs.E.B.Savage thanked the speaker. The club choir.conducted by leaves a blue powder. The infinite variety of colors flashed in the opal are an optical illusion.caused by the shattering of the spectrum by thousands of microscopic veins in the stone, on the same principle as the rainbow. The colors change with the light.Opals originally .came from Hungary, It was not until 1899 that the first white Australian opal was discovered.so superior in fiery brilliance that it outclassed the milky Hungarian opals in popularity, Today Australia is the world's Jeading producer of this wonder gem.In fact, out of 1.000 gems niined, 890 come from Australia.- It is strange that this trapped sunlight is found only in the most arid and desolate region of central Australia in land which was once the bed of ah inland sea. There opal diggers live and work underground in settlements such as Couber Pedy (aboriginal for “white man down the hole’) where, because of extreme temperalures.homes, the bank and the post office are all dug into shallow escarpments of a dried salt lake. The opals are mined with hand picks by sinking a shaft, usually under 25 feet, from which drives are tunneled when the opal hearing strata is reached.Verdun Group Posted On Work
